Here I am!

I just saw the news about the cave in. I will be sure to add my prayers for them.

I just read through the past few pages and will chat tomorrow, right now I cannot move! I spent the weekend helping my sister move and today I cleaned with her so that Dan and Erica can start moving in when they are ready. We have the bathrooms all done as well as the kitchen and one living area room. We'll go back on Wednesday to move some more stuff and finish cleaning so Erica can just move her things in.

Last night my BIL cooked steak and veggies and tomato salad with some kind of brown rice. I brought home dinner for DH who wanted to know what all that stuff was and what was in the tomatoes. I had to laugh becasue he is used to my cooking and most everything else isn't seasoned enough. He had no idea what the Success rice was :lmao:

Tonight this old girl picked up grinders from a small shop that makes the best giants around.

Hello friends.....just a quick pop in to say hi, and that we are back....I will read back and see what I missed..........hope you all had a great weekend.....we had a wonderful time....perfect weather!!
It was great to get away!!! Our hotel room was 50ft off the ocean, and Kris and I enjoyed the balcony after Ross was asleep with some wine and homemade cheese spreads I brought with us, and just listend to the waves.
We ate wonderful fresh Maine seafood all weekend!!
I started the weekend with having Lobster quiche for lunch friday at the Jordon pond house, along with their famous popvers...(we always go here our first day on the island)
We ate the rest of our meals at different Rest. on the waters edge......lobster rolls, diver scallops, and of course ended it with Lobsters and steamers, mmmmm.
We hiked all over the island and even got caught at high tide in knee deep water coming back from Bar Island. I took a ton of pics and if I can just fig out how to post them I will be happy to share with you all!
We are heading back in 3 weeks for another long weekend.

I will catch up with my reading and posting tomorrow, need to unpack, and get Ross to bed, and get his stuff ready, as he is going on a field trip tomorrow to a local state park.

Glynis I was hoping that was far from you. I too hope and pray for the miners and their families.


Nancy I forgot about your sister moving glad to hear you are ok.
 

I hope y'all that try that Buffalo Chicken Lasagna like it! Post and let me know what you thought.

Tonight I tried another new recipe, beef and rice enchiladas. They were yummy - I really liked them but I love rice - but DH said he prefers chicken enchiladas. Very quick and easy, which was a must since I had the first day of VBS today and am so tired I'm running on caffeine alone!

Beef and Rice Enchiladas

Ingredients
8 flour tortillas (medium sized)
1 pound ground beef
2.5 cups seasoned rice (I just made a package of spanish rice)
1-2 cups Mexican blend cheese (I used 2)
1 can (10oz) enchilada sauce
2-3 Tbls sour cream (optional - though I mixed in a ton of leftover sour cream I had in the fridge with the enchilada sauce to tone down the spice of the sauce and make it stretch)

Directions
1) Cook and season ground beef and prepare rice.
2) Warm the tortillas
3) If desired, mix the can of enchilada sauce with the sour cream.
4) Spray the pan with PAM. Preheat the broiler.
5) Assemble the enchiladas; lay out the tortilla and put down a bit of cheese, then some rice, then some ground beef, then a bit more cheese and some of the sauce. Roll up tight and place into the dish seam side down. Repeat this for the rest of the tortillas.
6) When they are all in the dish cover them with the leftover sauce and top with cheese. Broil for ~10 minutes or until the cheese is melted and bubbly.
 
Like Glynis said, we worry. You know when one of my flock is MIA I am not happy! Rest up girlfriend.:hug:
 
Hersey--don't remember exactly which bertoli it is---one of the Mediterranean inspired ones with chicken--didn't end up having it--had a bagel with peanut butter.

Oh, sorry. Duh, guess I could've put that in too, huh? Booked the Party for the Senses for October 27th. Can't wait for that phone call from Rick tonight "Um, honey, why did Disney charge my card for $287?" :lmao:

This'll be our first PFTS...I can't wait! We had friends go last year and convinced us we should go this year.

After trying for 35 minutes to get thru & 20 minutes on hold this morning:sad2: I booked PFTS 10/20, and two Pairings one at Marrakesh, another at Coral Reef. Le Cellier was already full for both of the Fridays we'd be there!

Your plans sound wonderful. Now you both have to promise to give a full report when you get back.


Count me in as one of those whose dinner plans have changed. DH got called away to cover a coal mine cave in, so it's just me and the kids. I pulled some frozen pot pies out of the freezer, and that's what the kids will have. I'll make myself a chicken Caesar salad. Hopefully, I can put the kids to bed early, and then I'll slip in Catch and Release. DH won't watch it with me, so tonight's a good night.

I thought about you after I heard the news and wondered if you were close enough that your husband got called in.

Glad you had a good time. The food and the room sound fabulous. You certainly deserved a break considering everything you have had to deal with lately.

Lindsay - the sloppy Joe DiMaggios were really good. DH said they were the best sloppy joes he had ever eaten. I made them with turkey smoked sausage instead of the hot dogs. Thanks for sharing the recipe.

Gretchen, they certainly were different, weren't they? I am, too, going to make them with smoked sausage next time. So glad you liked them! :)

Good Morning my friends! I have alot of catching up to do...I hope everyone is well.

Of course I ate (and drank - SIL just got one of those frozen concoction machines :thumbsup2 ) too much this weekend so tonight will be chicken kabobs and tossed salad.

If I get to the store, I am going to make weight watchers veggie soup to have on hand.

Tonight is going to be that Bertolli meal I was going to make last night--I ended up having a bagel with peanut butter. Very exciting!

aimeedyan--I told DH about the Buffalo Chicken Lasagna recipe and he was so excited--guess I know that's on the menu next week
 
Good morning all! It is so nice to be a part of this group.

Ii was listening to the news this morning and still cannot imagine how families cope with this kind of tragedy. All of the little things we worry about seem so trivial in comparison.

Well I am not doing much today, just enough to be able to stand my own home. I am feeling parts of me that I did not even know existed :confused3 and they are not saying "Welcome back!"

Gail is almost set in her living areas, her basement is a disaster...I have never seen so much stuff and I am a pack rat married to a pack rat. She can't stand any disorder so I don't see her sleeping much.

Dan is painting today, I am not going. I love my son but painting is not his major talent so thank goodness Erica is working.

We are going tomorrow to move the rest of the furniture that we needed to find homes for and finish my BIL's work area. Did you notice that it is the women doing all of this??????? The ladies in my family are who I would want in a crisis :thumbsup2,


I am planning something EASY tonight, I just don;t know what.

Tonight I am making some pasta with more of the tomatoes I brought home from the farmer's market Friday. There were two no-coook tomato sauce pasta recipes in the Sunday Boston Globe magazine that sounded good--one for tomatoes with brie and chives, and one for tomatoes with goat cheese, lemon, and mint. They both sounded equally good and I have the ingredients for both so it will be one or the other.

I am hoping to pick up a baguette and some salad greens at the farmers market this afternoon to go with the pasta. Hopefully I will get there before everything is sold out!
 
Becky - This is my DH & DS favorite chicken dish. I either broil it or grill it.

LEMONY GARLIC BROILED CHICKEN

8 bone-in chicken pieces(I've also done it w/boneless breasts)
1/2 c. olive oil
1/2 c. fresh squeezed lemon juice
3 tsp. kosher salt
1/2 tsp. black pepper
1 tsp. dried oregano
1/2 tsp. paprika
As much crushed garlic as you like!

Mix all ingredients together and pour over chicken, marinate overnight. Remove chicken from marinade and place meaty side down on broiler pan. Broil 5-7 inches from heat for 10 minutes. Turn & baste with marinade and broil 10 minutes longer or until done. Boil remaining marinade and pour over chicken. Garnish with lemon slices.

Last night was a good dinner, I grilled chicken breasts marinated in Greek Salad dressing, served wtih Ranch Roasted Potatoes, sauted mushrooms ( with garlic and red pepper flake for zip!). The chicken was served over a greek salad of feta, kalamata olives, cukes and red onion..it was YUMMY~

Not sure about tonight, i have some hot italian sausage sitting in the fridge begging to be grilled with some peppers, so we shall see!
Gotta go play catch up and get MORE hungry with this thread :)
 
Hi, everyone! Sorry I'm late checking in. Crazy morning!!!

Dinner tonight will be the baked hunter's stew I had planned for last night. I've also got some yummy dinner rolls to go along with it.

Not a whole lot of good news with the miners at this point. More heavy equipment has been brought in, and they are hopeful that within 3 days they'll be able to get to where they "think" the miners are. The mine owner assures everyone, that they have enough air to last "weeks" and fresh water as well. After listening to his press conference this morning, though, I don't know how much credence I'll give him. I know he's worried about the PR for his company, but he seemed really callous towards the miners. I was only able to talk to Alan for a couple of minutes by satellite phone last night. He says the families are all being kept in a nearby town, and updated hourly. The worst of it is, that none of the families speak any English. They are all apparently illegal aliens working here. They had several translators there, but it has to be so frightening for them. The community has rallied around them, though, and hopefully they'll be taken care of no matter what the outcome. Please continue to keep them in your prayers.
