Today is our 5th anniversary and we have reservations at Texas de Brazil tonight. We've been wanting to try it for a long time so I'm really excited! I was told to not eat anything all day in anticipation for it but I'm really hungry so I think I'll eat a little something =)

Just thought I'd share the "healthy" fried green tomatoes, Breaded with nonfat milk, egg beaters, panko, and reduced fat Kraft parmesan cheese-stuff. Fried in skillet with PAM.

Last night I did a take on filet oscar- trimmed round steak with crab meat and bernaise sauce(bottled). With bake potato topped with onion, roasted red pepper, garlic, kalamata olives, mushrooms. I halved(and halved again!) all that so that's what's for dinner tonight, again! If I remember to take the camera home I'll get a pic.

Laura- You surprised me! I cannot imagine anyone not getting along with you or having issues with your mothering!

Well, when you were a perfect mother and raised perfect children, as she did, any different approach is obviously inferior. ;)

As for me being an accomplished baker, believe me, I have had my fair share of disasters. Becky, I'm sure, won't ever forget the chocolate almond torte that tasted like scrambled eggs. The reason I know the chocolate chips will sink is because I tried to make chocolate chip cupcakes once. All the chips were firmly attached to the bottom of the cupcake liner.

Lori -- Your fried green tomatoes look good. You have been very creative finding good substitutions so you can still have the foods you like!

Today is Liam's last day of baseball camp, so I am letting him pick the menu. I guarantee this means we'll be having cheeseburgers and hotdogs.

I did not take photos the past two nights, but I did make what I said I was going to. Today I got to work and at about 10:30 my boss told me I could take the rest of the day off since I have been working so hard. Hmm...I am not going to clue him in that it was not much effort, but he really was quite impressed with me this week, so I'll take it!

I had to wait a while for a train home, so I spent way too much time (and money) at the farmer's market. Here is the haul:

I am not sure what I am making tonight, but it is going to involve lots of vegetables! I ate a late lunch so I am not feeling too inspired right now. I also have a TON of peaches I need to use up. We don't normally eat dessert, but tonight I am going to make a dessert I saw in this month's "Fine Cooking" magazine. It's for macerated peaches, layered with honey-scented whipped cream and crushed biscotti. I'll take a picture for sure!

All this talk of in-laws...I have to say that I usually get along well with my in-laws. They are not the most organized people, or planners, but they mean well, and they genuinely love both of us, and I try to keep that in mind when I get irritated with my MIL. DH fields most "issues" related to them, which probably helps maintain my equilibrium towards them. I just get to hear about "things" later, when it seems humorous. I could give you examples, but you would not believe me...

I won't comment on Laura's MIL, who I have the pleasure of being acquainted with. ;)
 
No cooking for me tonight. Kyle is leaving this morning for Baton Rouge, he'll be pitching this afternoon in the opening game of the state tournament, so we'll be headed there later today. I hope he does well but:ssst: I'm quietly hoping they don't win this tournament because then they'd be heading to Kentucky for a week and possibly Oklahoma for a week. And you know if he goes, we'll go. I'm trying to save $$$$$$ for a new vehicle and our WDW trip.:rolleyes:

Ladies, thank you for making me remember what a truly wonderful MIL I have. She is loving and kind and has never, not once, made a single disparaging remark about me or Kenny and how we are parenting the children. She called one day when I was not having a particularly shining mother moment and all she said was "Honey, you have such a tough job. I pray for you every day." She is really amazing. :angel: Now, if she could just give some instruction to my own mother. :sad2: But that's another story altogether.

You made my day with your MIL story. I hope that Erica says nice things about me too. Although someday I'll tell you why Dan kept calling me "Betty" and my very fair skinned DDIL would turn a brilliant shade of scarlet from her forehead down to her toes :rotfl2:

OMG those tomatoes look amazing! I have some green ones ready to cook and I wonder if your stuck in the pan with just Pam. I hate to fry anything but would pan fry in a heartbeat.

No sticking at all. but I did have a nonstick skillet too. And I might have used a little more Pam than I normally do to make sure I got that "fried" texture that I was used to when there was an inch of oil in the pan.:banana:

As anticipated, dinner tonight was cheeseburgers, hotdogs, chips and pickles. Is there a better way to end baseball camp?

Speaking of baseball camp, here's my proud mom story. Liam's team was in the championship game this afternoon, so Caili and I went to watch. It was the last inning and the score was 22-17 (not exactly a defensive game), and Liam's team was behind. They rallied and scored four runs. Liam came to the plate with two outs and two on base. I was so nervous he would make the last out and the team would lose because he hadn't had a very good day at the plate. (Two outs and hit into a fielder's choice.) First pitch, he hit a line drive to right field and the score was tied. The coaches then yelled, "That's the game! You all win!" (They can get away with that with eight year-olds.) Anyway, Liam was so excited that he got the "walk-off single." :)

I made this recipe up...it's a raspberry margarita....1 1/2 ounces silver tequila, 1/2 ounce framboise, 1/2 ounce couintreau, juice of one lime, shaken until very cold and then served over crushed ice in a glass lined with lemon sugar (from today's farmer's market haul), and garnished with raspberries, lime slice, and blue plastic mermaid (if available).

Erm, I better go figure out dinner before I drink this thing.

I thought that was really great too. They could have had the kids keep playing, but it was 90+ today, and I think everyone was dragging a little. Ending when they did made everyone feel good.

Good Morning! The storm missed us last night so we were lucky. I am not worrying about dinner tonight. I am helping my sister move today and she is not sure what the day will bring so I am just going to do whatever she needs and come home when she is done. Wish her luck, she works nights and is just getting home now so she is going to be in rough shape after a bit.
 
Not sure about dinner tonight--my parents are finally back from their 3 week vacation and we're headed up to visit (and get our goodies from their trip;) ) So, we'll probably have take out from somewhere--maybe I can talk my mom into getting some sushi for us!
