Lauren- I am so happy to see you post, I have been checking here on and off all day!!
The answers you got sound very positive, of course my thoughts will be with you until all questions are answered!! The B/P I would say is just nerves, between the phone call and the appt, that is normal.
I am glad you got home safe, all that and then car problems..I send you big hugs!!!

Lindsey- Happy Birthday to your Pooh!!!

Kathy- Glad you liked the pork chop recipe....I think it just tastes good cause it is so Easy to make, lol!
 
Last night when I got home DH suggested dinner at the casino for AYCE oysters and peel n eat shrimp. Well, I jumped at that! And gorged myself on shrimp. Good thing they're relatively diet friendly! And we had coupons for free dinners on top of it!

Tonight is "clean out" pasta- leftover mushrooms, asparagus, zuchini, pork loin, tomato & pizza sauce with whole wheat pasta.

And it's martini night at the bar across the street. hmmm, maybe we'll do pasta tomorrow night......:lmao:
 
Hi All,

Just back from the Dr. I got a pretty good report, I think :) . My hormone levels are getting better by themselves but I do have to go for a biopsy. She said for the amount of nodules that I have (I have alot...maybe 8 - 12) it is rare to have cancer and if it is, it is very treatable and rarely spreads.

I just have to keep going for blood work to make sure the levels are OK. She did not prescribe any medication so that is good.

Oh, my pressure was a little high again but I think that was my nerves, the fact that one of my sisters called this AM and was being a real jerk (I will not be talking to her for a while...she is not very nice) and my car started acting up. Thank God I got home. They may have to flat bed this piece of junk out of my driveway AGAIN!!!! That is what I get for getting a "lemon" yellow car!!!

OK now I am babbling!!!

I'm so relieved that there is nothing seriously wrong! I've been worried all day long!
 
Just had to post a fun treat that I made for my kids. It got thumbs up from all 4 of my kids.

PB&J Roll Ups

1 tube crescent rolls
Peanut butter
Jelly
Confectioners' Sugar

Unroll the crescent rolls. Spread about a teaspoon of peanut butter and a teaspoon of jelly on the wide end of the triangle. Roll them up and place them on a lightly greased baking sheet. Bake at 375 degrees for 11-13 minutes. Sprinkle with confectioners' sugar and eat warm!

Yummo!!!
 

Lindsay, what is kitten-tash? I am thinking some kind of hash brown?

It's a spin-off of succotash.

1 red onion, chopped
1 green or red bell pepper, chopped
1 can black beans, drained and rinsed
1 cup frozen corn (I don't measure this one, just add enough until it looks right)

Saute the onion and pepper until just tender. Season w/ salt and pepper. Add beans and corn and cook until heated through. Test for seasoning.

Glynis- What a fun treat to make. Ross and his friends that are always here will love that, and I have some crescent rolls to use up too!!!
 
Glynis -- Liam would love those roll-ups. It combines two of his favorite things: peanut butter and jelly and confectioner's sugar.

Liam and Caili gave the eggless blueberry pancakes a very enthusiastic thumbs up. Liam had six (I made them on the smaller side...easier to flip) and Caili had four. I tasted them too, and honestly, if you put the eggless ones next to regular pancakes, I probably couldn't tell the difference. I didn't make them dairy-free, but I think they would work and be just as good with the recipe's recommended substitutions.

Yummy Eggless (and optional Dairy-free) Pancakes (makes 8 medium pancakes...I made mine smaller so I had 14)

2 c flour
4 tsps baking powder
1/4 tsp salt (optional...but I added it)
3 tbsps sugar
2 c buttermilk (I used regular milk, and the recipe says soy milk can be substituted for dairy-free.)
4 tbsps oil or applesauce (I used oil)
1/2 tsp vanilla (optional...I used it)
1/2 c fruit -- blueberries, strawberries, apples, peaches, bananas (optional. I used blueberries.)
Butter, margarine or oil for the pan (I used butter, and I would recommend dairy-free margarine over oil)

Mix dry ingredients together. Add wet ingredients and stir until smooth. Heat butter/margarine/oil in skillet and add pancake mixture in large spoonfuls. Brown on both sides as you would any other pancake.

Serve immediately, or keep warm in oven until the whole batch is ready. Pancakes can be frozen and reheated when desired.

GLynis those rollups do sound good. Alas not crescent rolls here just buttermilk biscuits. I just made a quick run to the supermarket so those will have to be a try later receipe.

yes, she posted it but I am not sure if its on the first page. I eye balled it: vodka, lemoncello and cranberry...

I made the mohitos once but Tom didn't like them so now I get them when we go out.
 
Warning, my photo is not good today...but I am posting it anyway. The omelet tasted awesome--in case you are wondering why it is a weird shape, that is because I make one big omelet and cut it to spec rather than doing individual servings...easier that way. So, spinach-gouda-carmelized onion omelet, roasted mushrooms (in the leftover garlic butter from Sunday's clams), seared whole cherry tomatoes, breakfast-sized chicken sausages with fresh peach relish/compte, and brioche. Here it is:

Oh, and that is DH's plate...he takes more food than me and said it was more photogenic :laughing:

Lindsay, about your recipe, I saw kitten-HASH! Anyway, it sounds yummy--I used to make something similar often for us, adding some chili powder, topping with montery jack cheese, and then rolled up in a tortilla, it was a tasty dinner! I hope your DH had a good birthday! My DH's falls on Thanksgiving this year (again!). Let the battles between the relatives for our presence begin! ;)
