That has got to be the prettiest tofu I've ever seen!!! Those are some of the most BEAUTIFUL vacation pics! Someone has really great photography skills! Is it you?! Where those all of St John?

Lauren, you are really having a time of it! If anyone deserves to act like Bridezilla, it's you! Look at the bright side though--you are getting all the mistakes out of the way before your wedding day, so by the laws of chance the day itself should be perfect! :grouphug:

Here is the tofu recipe:

Red curry-coconut tofu with crispy jasmine rice

For the tofu:

1 block extra firm tofu, pressed under a weight to drain, blotted dry
1 tbsp. oil

Saute the tofu in the oil over medium heat until lightly browned on all sides. Set aside.

For the curry:

1 tsp. oil
1 onion, finely chopped
4 cloves garlic, finely chopped
1 bunch scallions, white and green parts, chopped
1 ½ cups green peas, blanched
½ pint grape tomatoes, halved
2 ounces red curry paste
1 cup coconut milk
1 handful cilantro, roughly chopped
Sambal oelek to taste (I used about 1 tbsp.)
Black sesame seeds, for garnish
Cilantro, for garnish

Heat the oil in a large skillet over medium heat, then add the onion and sauté until tender. Stir in the garlic and the scallions and cook a few minutes longer. Stir in the coconut milk and the curry paste, bring to a gentle simmer, and cook for a few minutes, until slightly thickened. Add the green peas, the grape tomatoes, and the tofu and gently reheat. Taste for spice level and add sambal oelek to reach your desired heat level. Stir in the cilantro, and serve, garnished with black sesame seeds and extra cilantro.

For the rice:

1 ¾ cups water
1/3 cup coconut milk
1 cup jasmine rice
1 tsp salt
3 tbsp. toasted sesame seeds
1 bunch scallions, white and green parts, finely chopped
Breadcrumbs for dredging

Combine the water and the coconut milk, and bring to a boil. Add the rice and salt, stir once, and cover. Bring the heat to low and simmer approx. 20 minutes, until the liquid is absorbed and the rice is tender. Fluff with a fork, and stir in the sesame seeds and scallions.

Lightly oil a baking sheet and dump the rice onto it. Press the rice firmly together and flatten it into a cake. Place in the refrigerator and cool completely.

When rice is cooled, cut into squares. Dredge squares in breadcrumbs. Heat 1 tsp oil in a non-stick skillet. Add the rice squares, and cook, turning once, until browned and crispy on both sides.
 
Last night's Ropa Vieja was very good served fajita style with black beans & guacomole. I have plenty of the beef left so that might be supper again tonight. I have been eyeing up a recipe for pizza bianco in Martha's magazine for a couple of days. I know we talked about doing pizza on the grill a while back, but has anyone done it? Is it hard to keep it from sticking?



Jenny, I made knockwurst & sauerkraut once that was something like this recipe, I know I left out the caraway seeds (don't like it too much of it) & I did it on the stove.

Ingredients:
6 Knockwurst
3 cups Sauerkraut, rinsed & drained
1 Apple, peeled & chopped
1 teaspoon Caraway seeds
1 teaspoon Sugar
1 can beer


Directions:

Combine all ingredients in crockpot. Cover and cook on low for 6 hrs.

St. John looks like heaven to me! Again, your photos are soo good, especially the beach scenes, underwater shots & oh the jellyfish! Cool!

I think you have convinced me to give tofu another try! I tried several recipes a few years back & just wasn't thrilled with them.

I have not seen or heard of sambal oelek before is that a brand of paste or a type? Would I find it at an Asain store or a Middle Eastern?
 
Sheryl--I found the Sambal Oelek at our regular Kroger. It was in the Asian food section--made by Huy Fong. Gives a great kick to curries!
 

Jenny -- I am sorry to hear your mom's not well. I hope she feels better soon.

Sheryl's knockwurst recipe sounds good to me :thumbsup2 (I don't like caraway seeds either.) I think I'll try this next time. In the past, I've grilled the knockwurst (carefully so the skin doesn't burst) and cooked the sauerkraut with white wine. Mom always makes potato cakes as a side with applesauce and sour cream as toppings.

Lauren -- What a week you have had!! As if the upcoming wedding isn't stressful enough. I agree with Sis, you have been through so much, the day itself is going to be perfect. :goodvibes

I forgot to post dinner earlier. We are having teriyaki grilled pork chops with a mango salsa, baked potatoes, broccoli, green beans, salad.

My SIL is out there now and it is thundering. Oh no! I just looked out there and he is standing in front of the grill with an umbrella, I guess it's raining now. :rolleyes1

He is a good guy! I don't use the grill much since I set the thing on fire. I needed the hose to put it out and was calling my DDIL for help. She was in the doorway taking pictures while I tried to put it out. Since then DSIL has been doing most of the grilling in order to keep the fire dept at bay.
 
BIL is coming over tonight and I am making nutty cashew chicken, teriyaki noodles, and peas.

Lauren - DH really enjoyed the "Tom's Home Chicken" last night. He has a rating scale for all dishes I make (1-5) with 1 being "throw the recipe away" and 5 being "I could eat that once a week". Now keep in mind he is a red meat kind of guy and isn't really fond of chicken in general, but he said it was a strong 4. He even went as far as to say if you separated the dish into just the chicken category, it is a 5. :lmao: He said it was his favorite of all the chicken dishes I had made.

Kathy - I haven't seen lucas anywhere.

Lindsay - is the cashew chicken recipe posted here? It (and the noodles) sounds really good.

Tonight's dinner is a DH request - the basil scallops I posted here for the Queen of Easy.

DDIL wanted me to post that dinner was really good last night. Except for the mango salsa. Most of the chickens would not even try it. I liked it so I am going to get to eat it for a while because no one else would touch it :confused3

Kathy- I have never had Green tomatoes enough to get sick of them :)

I haven't seen Lucas recently either.

I can't get a straight answer from DH about this evening. Is he working? He wants to. He is not sure. It depends. Does he want a light dinner? He doesn't know. Does he want me to cook at all? He is not sure. Can I wait until this afternoon. Sure.

SOOOOOO.........I have no idea about dinner.

We rented a villa for most of the time, then ended the trip at a resort called Caneel Bay. I am glad you liked my pictures.

Tonight I am making lamb chops for DH, and roasting some broccoli...I have not gotten further than that in my menu planning.

liamsaunt, I showed DH your pics, he was also very impressed with your photography skills! (used to be a hobby of his) And he thought St. John was stunning AND actually asked for more info about St. John & where you stayed etc. etc. !!!!:upsidedow You could have knocked me over with a feather!

Don't know what we are doing tonight for dinner. I have to go pick out the tiles for the kitchen today. Mario was over last night & totally nixed the color idea I had for the floor. I had wanted to pick a salmon/terra cotta color that would sort of blend with the wood floor. He said that would look like a total mis-match & I need to go lighter! So I'm freaked! I was up late last night stressing & then the roofer (who should have been here a month ago) finally comes this morning & starts his banging. I'm still drinking my coffee to get myself going to this morning. Sorry I'm babbling again!

Lauren, I hope everything goes wonderfully this weekend & you have a beautiful wedding!
