Hi, everyone! I'm back! Alan and I had a wonderful weekend in Farmington, New Mexico!!! We attended the Four Rivers Storytelling Festival! I don't know if any of you have ever been to one, but it is just amazing! They had 4 tents set up, and different professional storytellers told all day long! It was fabulous! They also had student tellers who had worked on stories all last year, and during the summer. The youngest one was 8 years old. She was a real hoot!!! Some of my favorites were Syd Lieberman and Andy Offut-Irwin. He was absolutely hysterical!!! His stories revolve around his aunt Marguerite from Covington, Georgia! If you ever have a chance to hear him, don't hesitate!!!

We had some interesting meals, but nothing to really write home about! I was hoping for some good Mexican, but our convention was catered by a Mariott hotel, and it was your standard fare. Oh well. I did get 4 days without my children. That was worth it!!!

Now, I'm home, and things are trying to get back to normal. Dinner tonight will be the Greek wraps I never made before we left. I already have everything, so I don't need to run to the store. Since I'm having issues with my kids today, I don't need to take them all out. We are on Fall Break, right now, and I HATE it!!! They spent the weekend at their cousins house, which meant late nights, and basically running amok! I am paying for it, now! We are having drama, tantrums, and all kinds of stuff. I'm thinking that naps are in order for all of them!

Glynis Glad you had a good time. If you get a minute in between chasing children, I'd love your toffee apple and strawberry banana french toast recipes. No hurry.

Sounds like you had a great time. It's always tough when the kiddos get out of their normal routine. You're an awesome Mom, you'll have them back on track in no time!;)

Tonight's dinner is going to be easy. Pan seared tilapia with butter wine sauce & roasted potatoes with a salad or broccoli.
 

Dinner tonight was really yummy. Here's the recipe

Flank Steak and Edamame with Wasabi Dressing

1 (1lb) flank steak, trimmed
2 tbsp plus 2 tsp low-sodium soy sauce
1/2 tsp salt
1/2 tsp black pepper
2 tsp dark sesame oil
1 tbsp bottled ground fresh ginger
2 tsp bottled minced garlic
10 ounces frozen shelled edamame, thawed
1/4 cup rice vinegar
2 tsp wasabi paste

Preheat grill. Rub steak with 2 tsp soy sauce; sprinkle with salt and pepper. Grill steak over med-high heat 5 min per side or until desired degree of doneness. Let stand 10 minutes. Cut steak diagonally across the grain into 1/2 inch slices

Heat oil in a large nonstick skillet over medium heat. Add ginger and garlic; saute1 min, stirring occasionally. k Add remaining 2 tbsp soy sauce and edamame to pan; cook 2 minutes

Combine vinegar and wasabi paste in a bowl; stirring until smooth. Place 1/2 cup edamame mixture on each of 4 plates. Top each with 3 ounces of steak; drizzle with 1 tbsp vinegar mixture

Glynis, you always seem to have everything together, so I am so glad to hear you have chaotic moments too. There are some days I am just counting down the minutes until bedtime. February vacation here is my nemesis. It is cold, dark, and often involves way too many indoor playdates.

Lauren, I didn't see the Cornell chicken recipe posted, so here it is. This is a marinade you keep the chicken in overnight and then grill it. The chicken stays very moist, and it doesn't burn. I think the recipe was designed for whole chicken, but my mom uses boneless chicken as well. You wouldn't have to marinate it quite as long with boneless.

CORNELL CHICKEN

INGREDIENTS (Marinade)
1 egg
1 cup vegetable oil
2 cups cider vinegar
3 tablespoons salt
1 tablespoon poultry seasoning
1 teaspoon ground black pepper

DIRECTIONS
Crack the egg into a medium bowl and whisk until beaten. Slowly whisk in the oil until fully blended. Then whisk in the vinegar, salt, poultry seasoning, and ground black pepper. Set some of the sauce aside to use for basting while grilling. Place chicken in shallow baking dish, and coat with sauce. Cover, and marinate in the refrigerator for 24 hours.

Grill chicken, marinating occasionally with reserved sauce. Cooking times will vary depending on whether the chicken is whole, in pieces or boneless. I would use a whole chicken, cut it into pieces, marinate it and then grill it. In pieces, the chicken would probably take 25-35 minutes to cook.

Dinner tonight was a quick cherry tomato sauce pasta, garlic bread and salad. I forgot that I had agreed to volunteer in Caili's class this afternoon (God Bless all Kindergarten teachers!! I don't know how they do it), so all the errands I usually run on Monday didn't get done. Liam is going to go to school with a peanut butter on English muffin sandwich, I think, since I don't have any bread and I don't have any jelly.
 
We ended up at Logan's tonight - yummy steak! The conference is feeding us lunch and dinner tomorrow so we'll see what they serve... ;)
 
Tonight it's leftover spaghetti and meatball stoup with garlic pull-apart bread.

Quickly checking in before my monthly Endocrinologist appt. I am afraid she will be mad since I forget to take my evening pills every so often...:sad2:

I am trying a new recipe with prok chops in the crock. I think something is listed here like the recipe I am using...cranberry sauce, brown sugar and mustard.

I will serve rice and salad...maybe green beans too.

I am trying alot of new crock pot recipes this week.

Laura - I think you are a pretty amazing Mom yourself. It amazes me the meals you "throw together" and the kids' activities and the volunteering, especially when you are doing it all yourself. I don't know how I would handle it all without the extra help from DH.

Still in a frenzy to get ready to leave Thursday. I forgot to pick up a few things yesterday, so I've got more errand running to do today.

There sure is a lot of great cooking going on here! Steph's flank steak sounds delish!

Lauren, Good luck at the doc! I've got to go run in & get a flu shot this morning too. I had the flu after our trip in Jan. & I want to make sure that doesn't happen again!

I know the bathroom is probably pretty scary right now, but be your lucky your Tom is so resourceful & y'all can do the work yourselves!! It's gonna be great!

And you just reminded me I have to take "before" pics before we take off on our trip! I'm really afraid of what we're gonna come home too!!!

Dinner tonight will be quick: soup and sandwiches. We just found out that a cousin of Alan's is burying her 4 year old tonight. She was drowned in a boating accident on Lake Powell last weekend. It's so sad!!! That family has lost their grandmother, mother, and now the baby in just this last year and a half. I don't know how they are coping.

Thanks for all the kind words regarding my kids. Suffice it to say that they all went to bed a bit early last night. So far, so good this morning. Seems like they are all back to their happy selves. Alan got home from work, yesterday, I served dinner, and then Calgon took me away for a couple of hours while Alan put them to bed! Nice!!!

That poor family! It brings tears to my eyes every time I hear a story like this.

Today is our afternoon off from activities, so I am making a roast beef, gravy, oven potatoes, spinach and roast carrots. I'm having a big meal so I can survive the Red Sox game tonight. Wake up, Red Sox bats, wake up!!

Gretchen - What is shrimp pilau?

Basically shrimp and rice cooked together. Onion, chicken stock, rice, shrimp, bacon. A true Carolina pilau is usually chicken with smoked sausage, cooked with the stock from the chicken. There is also a "backbone pilau" made from pork. That one will really make your lips shiny. :rotfl:

Just wanted to let all of you know that the doctor visit went OK. My hormone levels basically stayed the same so she increased my meds and told me to try and not forget to take them (I think I mentioned to all of you that sometimes I forget to take the evening pill). I told her they need to make a CR one (controlled release...I only know what that means from Tommy boy who works for a pharma co!!! ;) )
