Well I'm back from the dentist I managed to do the impossible once again I fracture the back of my tooth.:confused3 I will have to have a partial. Good news is that I can wait till after my vacation. Just call me grandma.

Lauren Glad Riley slept through the night.

Lori I found a few Harry Potter candies I'll send what I found later this week. Hopefully you'll have some left to share with Ross. I have some of the jelly slugs (they are pretty good) too. Alas I couldn't find any chocolate crockroaches. I'm sorry. Maybe I'll wait till after we come back from disney to send the package maybe they have some things there ok?

That does suck about the store...do you have another nearby at least?

I have a Winn-Dixie very close, but it's not the same. I'm sure I'll get used to it. I feel pretty silly whining about something so stupid.:guilty:

Hey, Johnny went through that years ago. He's old enough to be a grandpa too! I have a feeling you are very far away from being a "grandma", you're still a baby!!!!!!!;) I'm just so glad you're not in any pain, after what I went through a while back.:thumbsup2
 
I don't think the bottle of wine we enjoyed with dinner, out on the patio with the cooler weather was very calorie conscious! ;)

Wine calories don't count.

Kathy -- NE is beautiful in the fall. Come before the snows though, otherwise you might be asked to help shovel us out. :laughing:

I'm late posting today because I decided to unpack all the boxes sitting in my closet that I didn't unpack when we moved. Now, the house looks worse than it did when I started cleaning. Hopefully, I will find homes for all these stacks of things I have in my room tomorrow. We also had skating and then soccer practice tonight, so I just reheated some Indian food I had in my freezer.

Kathy- The most perfect time for the foliage in Maine,and especially our gem of Acadia National Park is the second week of October. The trees are in their prime, the days are bright and crisp, and the evenings are pure bliss!! There are so many fun fall things going on. Apple picking and cider making, antique malls having open houses, college football games, and all of the tourist "things" to do are still going on. There is nothing better then a sunny fall day in Bar Harbor. The air is crisp, yet the sun is warm, the scenery is utopia and a glass of wine never tasted soooo good!!!
When you start making plans let me know if you need any Maine information.
A beautiful Hotel in Bar Harbor, that we stay at when we go (summertime and fall) is Harborside Hotel and Marina.

DH drove through a local BBQ spot and got us brisket sandwiches on his way home. Yummy, inexpensive, and didn't require cooking! =)
 
Good morning! I wanted to add the recipes for the cakes I made this week. They are both very good.

For the zucchini cake I pressed as much liquid out oof the zucchini as I could, used 3/4 cup oil and 3/4 cup applesauce, omitted the nuts and topped with a generous helping of Ghiridelli chocolate chips before baking. I baked it for 55 minutes in my convection oven. I also increased the cocoa to 1 cup.

This one is a moist fudgy cake.
Chocolate Zucchini Cake III

[FONT=Arial,Helvetica,sans-serif]INGREDIENTS:[/FONT]
2 cups all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa
powder
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 1/2 cups vegetable oil
3 cups grated zucchini
3/4 cup chopped walnuts

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan. 2. In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan. 3. Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

This cake was very good. I grated 1/2 the apples and chopped the rest. I also doubled the spices called for.
I frosted it but will not the next time, it was rich enough without cream cheese frosting. I used a 13x9 inch pan but I think it needs a bundt pan in order to have that "crust". Make sure that you cream the butter and suugar well, some of the reviews said it was oily but I think that this step was rushed, mine had a buttery apple taste.

1 teaspoon vanilla extract
3 apples - peeled, cored and

1/2 cup raisins
1/4 cup confectioners' sugar for
dusting

1. Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside. 2. Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan. 3. Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.

Thank you for the kind words re: Riley and my other boys!!! Riley slept through the night, so I was VERY happy. Tom and Andrew are feeling a little better. I think they gave their colds to my baby cat Niki...her eyes look funny. The vet said cats get catch human colds...:confused3


I'm glad most of your household is back to normal and that Riley is cooperating :thumbsup2. Your poor kitty! My Buster is sick....again. He spent the first 9 months of his life fighting barn fever, an allergy to fleas ( I had never seen a flea but he and Sassy came in with them, turns out Buddy was allergic as well...that was not fun :scared1:), he was lactose intolerant and has allergies to most of the organ meats in moist cat food. Now he has some sort of allergy and needed a shot and is taking antibiotics for an infection because he has inflamed back teeth! This poor baby has had to have his ACL replaced because he tore it, so he has turned into one big investment!

Johnny & I are really serious about this NE trip. When would be a good time - October maybe?

Kathy, our seasons all have reasons to visit but the best Fall show is October. The air is clear and crisp, it smells so good, the trees are in full color and there are fairs everywhere!

Oh Wow!!! By then maybe we can plan a meet with everyone!!! ;) :)

Wendie- I usually am one of those greedy women who wants everyone to come to my house but after your description of Maine I want to come to your neck of the woods! I have not been in years and the last time was in the summer with my kids. This was the time when my SIL swore off trips with us, and my three kids went from bickering with each other to plotting how to drown Donny, muzzle Marisa and put Daniel under a rock!

Here is a photo of last night's dinner--it was junky food night in front of the TV, so I made sausage sandwiches covered in smothered onions and peppers. I was too lazy to even make french fries so just opened a bag of potato chips:

Becky--once again your quick and easy lazy meal is still 5 star compared to my meals!!! Those onions and peppers look soooo good!

Nancy- you need to get up here again then....make some new Maine memories where a murder plot isn't part of it, lol!! There is something serene about sitting on top of Cadillac Mountain, looking down on palate of fall colors, with the ocean and islands around. You feel so in awe of mother nature!

I do hope that your poor Buster gets better real soon, poor thing, I hate when an animal is sick.

Thank you for the apple spice cake recipe!!! I love apple recipes...especially at this time of the year...we went picking and I always pick way to many..it is to much fun, and just knowing that it is a once a year thing I always over pick....I made a huge batch of apple sauce and Kris and Ross ate half of it while it was still cooling in the pan, lol.


Weeknight classes of Karate start back up tonight t/th 5:45-7:15. So supper has to be simple and quick...I have some ground turkey to use up so I will prob make turkey burgers as Ross loves them, and Kris will eat them if they are served with gravy and mashed taters on the side...he will NOT eat them in a roll like a real burger!! I don't ask...I just go along with it, lol.

We have a beautiful view of our mountain as you drive up towards the West. Even when the trees are not as showy as they can be it is stunning.

Morning all. Well, I hate to say it but I had to make that dreadful orange crockpot chicken last night. I had bought all the ingredients prior to reading the reviews and had nothing else to cook. DH really liked it :confused3 I did mess with the ingredients a little, so maybe that made it better. I didn't care for it--won't be on the menu again.

Tonight will be Tacos--something everyone will eat!

oooh i just love Bar Harbor...Acadia is def. one of my most favorite places, although its been about 4 years since i have been..i NEED to get up there soon..it really is delectable..this is the time of year that our "necks of the woods" shine :)

That is wonderful! :) What is your secret? I have been working out like crazy for at least a month straight, doing pretty well with the eating , and really NOTHING comes off me..so frustrating..and i have a long way to go too..sigh..

WFD tonight: I believe i am going to try making those famous eggplant sticks! I am also planning in baking/frying some zuchinni up and serving it with pasta in a red sauce of some sort. Kind of scared to buy lettuce..has everyone seen teh new recall on the packaged stuff...ugh...rinse rinse rinse i guess!
