So I have spent the last week reading 775 pages of WFD. :faint:

I am in love with this thread and I am excited about being here to share ideas and recipes! I really feel like I know you guys now... :love:

I am a beginner cook and I experiment on my poor DH who is a very picky eater (just like your typical 3 year old - his ideal meal is chicken fingers and french fries) :confused3

But you have inspired me to try new things on him and he'll like it or not! :thumbsup2

My dinner tonight will be with my parents, my brother and his wife and my 3 mo old nephew.
We are having Pizzas from Sam's Club. Boring - I know...
Last night DH and I had a Taco Kit. No sour cream, guacamole, lettuce, tomatoes.... Just Taco Shells, Meat, and Cheese!

Johnny & I are really serious about this NE trip. When would be a good time - October maybe?

Kathy, You know Bob & I are really considering a trip up that way too!!! Really!!

Kathy- The most perfect time for the foliage in Maine,and especially our gem of Acadia National Park is the second week of October. The trees are in their prime, the days are bright and crisp, and the evenings are pure bliss!! There are so many fun fall things going on. Apple picking and cider making, antique malls having open houses, college football games, and all of the tourist "things" to do are still going on. There is nothing better then a sunny fall day in Bar Harbor. The air is crisp, yet the sun is warm, the scenery is utopia and a glass of wine never tasted soooo good!!!
When you start making plans let me know if you need any Maine information.
A beautiful Hotel in Bar Harbor, that we stay at when we go (summertime and fall) is Harborside Hotel and Marina.

Dinner tonight will probably be last night's leftovers. I had cooked three ribeyes on Sunday & since we are cutting back, I still have more than a whole steak left! Last night's fajitas came out really yummy. I made fresh tomatillo/tomato salsa, guacamole with onions & tomatoes, stir fried lots of bell peppers & onions. I also made a cabbage slaw dressed with a cuban lemon dressing that we threw on top of the fajitas too. It was really yummy & I was able to leave out all of the fattening stuff like cheese etc!

Piglet843 -- Welcome to our group. There are plenty of recipes posted here that are easy enough for cooks just starting to expand their skills (and their husband's culinary tastes!) Reading all 745 pages shows real dedication, so I hope you'll come back often.

Kathy -- I agree with Wendie that the second week in October is ideal for a fall trip, as long as you avoid Columbus Day weekend.

Caili has a little bit of a cold -- third week of school and she is already bringing home colds! It's going to be a LONG school year -- and now, so do I. That calls for spaghetti, garlic bread, salad and red wine.

Hey has anyone ever made creme brulee? I've been thinking about trying it, but I want to get one of those neat little culinary torches first.

Sorry about the colds! As Nancy as noticed, you know I agree with the need for spaghetti, bread & WINE!!

Alexis has already had one cold, gotten over it & is starting on another one! It doesn't take long once school starts!

I tried it under a broiler & it didn't work well at all. Go get one of those little torches first (and if you buy a kit make sure it has the fuel in it! I brought one home & made the creme brulee & then realized the kit didn't include the fuel!!!) Arghhhh!:mad: :laughing:

Well you know who will agree with that! And doesn't Rosa with dessert cancel out the calories in the dessert as well?! :lmao: So maybe you should pack a small bottle to take with you to the fair! ;)

Nope never!!! With the new van & Bob being able to drive again, hitting the highways is something we are just considering again! Kathy, I can almost name the places I've been on one hand! Well, no it actually takes two, but we really have been (shhh not sure if I can say this here) stuck in a Disney rut lately! In the last couple of years, with Bob's disabilities traveling has been getting more & more difficult, so we just kept hitting DW over & over. But with the new van with the great ramp & now his new driving rig, I think we are ready to do & see some new things! And our friends here sure make traveling up the Coast sound really tempting!!! :goodvibes
 
I am so glad you guys understand the "Need" for wine. (btw... we need a wine drinking smiley on this board)

I started drinking wine a couple of years ago when my doc told me I have high cholesterol and high blood pressure (Note: I was 24 years old at the time - and I am not a big person - 5'1 and 110 lbs - this is obviously thanks to genetics) :sad2:
But anyway - a friend told me to drink red wine - that her father did and it lowered his cholesterol by 20 points. So I started but next time I went to the doc - mine was up another point or two. And I haven't been back... :confused:

But I still drink my wine and I can not do without it. I love reds - big flavorful Cabs, Cab Francs, I had a Deadly Zins Zinfandel the other night that was to die for. I go through 3-6 bottles a week. DH even drinks some with me.
I also love a cold glass of Chardonnay or Cab Sav while sitting on the porch watching the sun set.
If anyone is interested - my DH and I recently got back from a trip to the Napa Valley in California. My trip report is on trip advisor (is it legal to say that on this board?) ....

Kenny loves it, but I have made it only three or four times because it requires a time commitment I just can't make often. My last creme brulee was the maple flavor like the one served at LeCellier. I have one of the torches and have tried three different sugars to get the topping just right. My first attempt resulted in a terrible, too-burnt top which had to be scraped off. I got it right on my third attempt.

Sorry I'm so late posting today. DD had to make a trip to the doctor this morning. Sunday evening Kenny and I noticed a couple of small bumps on her face, but nothing that looked really bad. By last night, there were several and they looked more like boils and were even in her nostrils (sorry, gross and TMI) and it looked like there were some forming in her mouth. She didn't want to eat anything last night except italian ice so I'm sure they were really bothering her. The Dr. said it is a common bacterial infection and gave us a cream and a liquid antibiotic as she will probably cross contaminate herself otherwise. The rest of us are on a strict handwashing regimen and I am hoping we can contain it. :sad2:

Anyway, tonight we are having leftovers and I am washing all the linens.

I know the feeling. We used to do a lot of traveling but the past ten years our summers revolved around baseball and still do. We've done WDW since 99. Now that Kyle will be old enough next year to stay home on his own we've decided fall vacations are in our future.:cool1: What better way to kick off fall than a NE trip, the gals here sure do make it sound irresistible!!!!

Sorry, I did read that. I just forgot. :sad2: I think I can hang on til Thursday. Thanks for the good wishes for my baby girl. It tears me up when she isn't well, especially when she thinks I should be able to "fix" it for her and I can't. :guilty: The dr thinks the cream should give her some relief for the external sores today, but it will be at least 24 hours before the medication will help the ones in her mouth. I did buy her a new toy today at Target. One that makes lots of noise and will drive Kenny and I crazy, but she will love. I'm hoping it will help take her mind off of it.

Oh Gretchen, your poor baby :sad1:. It is so hard when the kids are sick, but you are right, she is trusting you to fix it and you cannot make it better fast enough. I hope her new toy helps to take her mind off it, and know she is in my thoughts.

Disney is such a great travel destination, but a Fall Foliage tour up here is without comparison! I'm waiting.....

Sheryl- I lost you in this multi quote thing. You are going to have so much fun now that Bob has his new van. Disney is great because there are a lot of solutions to help people get around, but nothing beats getting out and going where you want when you want to go.

That is wonderful! :) What is your secret? I have been working out like crazy for at least a month straight, doing pretty well with the eating , and really NOTHING comes off me..so frustrating..and i have a long way to go too..sigh..

I may jinx myself but I have been just following WW points, exercising to burn 300 + calories 5 days a week and drinking lots of water...I've cut back on the drinking too...I've only had 3 beer since Labor Day...:scared1:

Well I'm back from the dentist I managed to do the impossible once again I fracture the back of my tooth.:confused3 I will have to have a partial. Good news is that I can wait till after my vacation. Just call me grandma.

IRISH ROVER'S UNICORN PUB SHEPHERD'S PIE

2 lbs ground beef
1 cup onion, diced
1 cup carrots, diced
1 cup celery, diced
1 1/2 cup corn, I use canned
2 cloves garlic, minced
salt and pepper to taste
1/2 tsp nutmeg
8 ounces beef broth
2 tbs flour mixes with 2 tbs softened butter
2 lbs potatoes. cooked and mashed with butter and milk (s&p too)

Brown ground beef, drain.
Add onions, carrots, celery, garlic, salt, pepper and nutmeg.
Cook for 10 minutes.
Add broth and bring to a boil.
Stir in butter/flour mixture to bind.
Pour into a shallow baking pan cool.
Cover meat mixture with corn and then top with potatoes.
Bake at 325F for 35 - 45 minutes.

***When I made this for A's bday party/St Patty's Day party, everyone LOVED it...even the sceptical ones that didn't think it would be good. :)
