I've already called my computer geek girlfriend and she's going to come over tonight and ATTEMPT to teach me how to use it. She only asks that I have a bottle of wine on hand for us to enjoy as her payment.;)

I Tonight they are calling for a freeze warning. I still have things growing outside :confused3 I'm not ready for fall yet. Why don't I get a vote?

Kathy Nancy Even though Alex is still young I'm not enjoying this growing up stuff. When he was 3 he promised he would stay small he is almost 5' 6" now :rolleyes1 He will be 13 in October the week after we get back.

It is cold at night here as well. My plants are still safe but I don't think I have much longer. I love fall time though and cannot wait until I smell wood smoke and turning leaves.

They can promise not to grow but they never keep that one

Caili tells me she is going to live with me FOREVER. Liam says he'll live next door...as you know he wants to get married so he can have someone clean the house for him :headache: . I know all this will change. I can't imagine 13 right now, and Kathy, I would be having a tough time with the senior pictures too. I've only just survived putting my baby on the Kindergarten bus.

Love how they think. I think I told you that when my nephew Chris was little he used to spend the day with me. He told me he wanted a real big house, but then he would hire me to clean it :rotfl: Smart kid!

We are going to try a new chinese restaurant tonight and no cooking tomorrow either...we are going to Tom's company outing...Its usually a blast...they rent out an amusement park (Dorney Park and Wildwater Kingdom).

We northerners are cold it presently is 53 degree by me it will get down to the mid 30's tonight. I covered my tomatoes and basil. The flowers are on their own.

I decided to make chili.

Oh my luck finally went dry. I was dising earilier eating a jelly belly (my fav) and one of my back teeth came out. Luckily it was one the had a root canal already so no pain. Good thing it didn't happen on vac.

Alex is already giving me some of the teenage attitude. He is usually a good kid.

Hersey, ouch! I hope it did not hurt too much. Sticky candy is a real hazard to teeth...my parents have not to this day let me forget the time I bit into a tootsie roll and dislodged three of my braces brackets! Seriously, they brought it up last week, and I had braces around 20 years ago!
 
Hello all--- finally a moment to check in, and see how everyone is doing today!!

I missed a lot today I see.....the most important thing I noticed is that we are all willing to work for wine............Maybe the more we drink, the better our computer talents will become....either that or we just stop caring at how little we know.........looks to me that both are win/win, lol!

Kathy--I can not even imagine Senior picture time........Ross likes to inform me that he will be a sr in 8 years..........he doesn't understand just how fast those 8 years will go............I think I will spend most of his senior year in tears at all the last firsts.....(the last first day of school the last first football game etc etc)........I hope you do get the scanner figured out...I for one can not wait to see the pictures of your handsome boy!!

Laura--It does help for sure when they enjoy going off to school........When I went to school for Ross' first day of K (we followed the bus) all the kids were crying, and holding onto parents legs, and Ross spotted us across the room, walked over and I thought for sure, "oh my baby needs me" NOPE.... he put his hands on his hips, looked up at us, and in a serious way said "You may leave now thank you" and turned and walked off........I walked out of there in a combo of tears and laughter......and so it began, lol.........
Ross promised me he would never get big.........now he just says I can't help it, lol.

Nancy--I too love the fall weather.....when it starts to feel crisp I always refer to it as apple picking weather! We will go this weekend for early mac and cortlands.....I will be baking and canning for sure!! We had a fire the other morning as well as our neighbors, just to take the chill out.........I love fall, our leaves are already changing color, it should be an early but vibrant season of foliage!!

Lauren--What a fun weekend you have going on!!! Hope you have great weather for it tomorrow!!

Lulu--I love the plans so far......you will be stunning, a true princess!!!

Janice--- those darn Jelly Belly's......my tooth hazard is swedish fish...we have named our candy jar....Dr.Weitecha's retirement fund.....I will in fact see him on Monday when I get an old filling redone.

I hope I covered most of the topics of today.....Lori hasn't checked in with us yet I see either....

Ross had football until dark tonight....they have their first game on Sunday. Ross starts helping out teaching in Karate tomorrow morning

Supper tonight was american chop suey and cole slaw....it was mmmm comfort food.....I use my Memere's recipe and it takes me back to childhood...I love remembering loved ones with special meals...

I am now going to have a Strawberry Margarita on the rocks, and watch some TV with Kris...Have a good night all!!!
 
I made homemade Tortilla Soup tonight. It was inspired by recipes from the net.

I'm just calling it "Delicious Homemade Tomato Tortilla Soup".


2.5 pounds of fresh ROMA tomatoes..... throw them in boiling water a few minutes to get the skins off. Then chop in about quarters.


1 WHOLE HEAD of garlic...chopped
1 very large white onion....diced... I used white for the "bite".
1 TBS oil.... I used Olive.
1 TBS of freshly ground cumin
1 TBS hot pepper flakes
salt and pepper to your liking...
2 Chipotles in Adobo ( totally optional.... chopped up some if you use them )
4 cups of chicken broth
sour cream


Cilantro for garnish and flavor.

Saute the onions in the oil about 6 or 7 minutes. Add garlic and saute for 3 more minutes. Add EVERYTHING ELSE, including the ROMA tomatoes, and simmer for about 15 minutes.

Let cool some because you will now put it in a blender and pulse it just long enough to have the tomatoes blend in fully.

Place back in a pot and simmer maybe 10 more minutes... If you want it a little thicker add just a little bit of flour... maybe 1 TBS.... bring to a boil and then turn the stove off if you are happy with the thickness.

Dollup of sour cream goes on top, and garnish with cilantro.... Or, be fancy.... squirt the sour cream in a pattern on top if you have a squeeze bottle.... just thin it ever so slightly with some milk.... and I mean as little milk as possible to thin it.

I also did this. I took out some flour tortillas yesterday from the bag... about 6 of them. I let them sit out and "dry". They become like crackers. Use as you see fit.

Tonight is my Fiesta I have been asking for help with. We will be having Mexican lasagna, Spanish rice, salad, and salsa con queso. Also, frozen snicker bar for dessert (will post a recipe if anyone wants it).

ETA: I need help one final time!!! With my lasagna, it will have flour tortillas, seasoned ground beef (cooked before assembly), black beans, corn, and queso blanco.

2 question:

1. Do you think it would be good to top it with shredded Manchago cheese? I thought that would be a good one.

2. What oven temperature and time do you think I should bake it? I was thinking 350 for 30 minutes. Does anyone have any tips?

Can I come? I have never had Manchego cheese so I cannot help. Rachel Ray says it melts well so I would think it is fine. When I make my Mexican Lasagna I bake it for 30 minutes or so and at 350 degrees. Keep an eye on the top and cover with a foil sprayed with Pam if it starts to burn. Let me know how the queso blanco is, I love it fried but never used it in my cooking. I love it!

I am using Manchago because Rachael Ray said that :blush::blush::blush: Yes, I'm a fan and I'm not embarrassed to admit it, hee hee!!! Thanks for the help on the time/temp!!

Here's the Snicker recipe. It's crazy delish!!

Frozen Snicker Bar Dessert

1 container of chocolate frozen yogurt (I think it's a gallon, it's the big container), fairly thawed
2 cups Cool-Whip (you can use fat-free, it works well in this recipe), thawed enough to be able to measure 2 cups, I set mine out for about 20 minutes
1 small box instant chocolate pudding
1 cup chunky peanut butter (you can use plain if you prefer, but the nuts help with "snicker" aspect)

Mix together CAREFULLY and smooth into a 9x13 pan. Freeze.

It's smack yo' Mama good!
 
Lindsay That cheese can get a little sharp in taste. I think it would be very good. The 350 and 30 minutes cooking time is what I use as well.

Good think you are not in pain! Teenagers with some attitude are worse than toothaches, so at least you have a bit of a reprieve.

Nothing like your kid putting you in your place is there? Mine was at Dan's Senior Award Banquet for the FFA. He was the President so he made thh speech and towards the end he says "And there is my Mom, yup she is already crying again....."

My family loves American Chop Suey and I never can get it the same as my Mom's. My oldest always asked Memere to make it, and then would tell her it was the best! He actually tried to get her into a competition because one of his coworkers said his Grandmother made the best Whoopie Pies and Donny said he could never let anyone think his Memere's came in second :thumbsup2

That cheese is more like pecorino romano. It depends on how long it's aged. When I had it was very different to my tongue not bad just different. I love cheese. I don't want to worry you I just wanted you to be aware. If you blend it, it would be more like what you are used to.

Last night was good! Roast port with roasted carrots and potatoes, sugar snap peas, cucumbers.

I used one of the boneless pork roasts from Costco so it was two tied together. I always use these because I can time it better. Coat the entire roast with a flour, salt pepper and thyme mixture, surround the roast with veggies and pour two cups of chicken broth over them. Roast for 1 hour, basting every 30 minutes. Remove roast and cover the top with brown sugar and back into the oven for 30 minutes, baste if you want. I turned the veggies a few times and then. I removed the roast and drippings, coated the potatoes and carrots with some olive oil and popped them under the broiler for a little color. Made gravy with the leftover flour mixture and pan dripping, and broth.

My family thought that the gravy was a little strong because of the thyme int eh flour so I would not use it the next time, but I really liked it.

Buddy was thrilled because there was not a piece of fruit in sight, no funky stuff on his pork and no things in his potatoes :thumbsup2
 
Nancy Maybe cause of the frost on my glasses and not enough coffee, how long total for the roast. It sounds really good.
 
Janice- total time for my oven is 90 minutes. I use convection roast. It could go maybe 5 or 10 minutes less for a pinker roast, but this is generally good for us.

Lindsay- dessert sounds like a winner!
 
Morning ladies. Well, someone blew some cool air our way--it's in the 60s right now with no humidity, and tonight will be in the 50s!:banana: Last night DH saved us from the dreaded orange chicken, and we went out for pizza. Tonight we're going to a bday party for an old friend of mine, and her mom is in all out party catering mode. Should be good; her mom made our wedding cake, and it was to die for yummy! But even if the food is bad, there'll be enough wine/beer there to make up for it--gotta love parties during big football games! Go Hogs, beat Bama!:cheer2:

Now, I really need to get going, b/c we're headed out in a bit to go meet Barbie and preview the new movie. She's no Cinderella, but it'll hold DD over until we're back at WDW in Oct!

You know, I am so glad that I have you girls! I get the Kraft magazine and that dish looks so good. I would have tried it and the only thing worse than springing a sweet protein that goes well with rice on Buddy (you all know how he wants PLAIN MEAT>>>PLAIN POTATOES>>>) would be a bad sweet ricey dinner :lmao::lmao:
