Oha nd FYI, I actually did sell Pampered Chef for awhile and didn't really enjoy it.
 
I have seen this thread for a long time but tonight sat down to read through it - got to page 100 and realized there was no way I'd be able to accomplish that! So I skipped ahead a few hundred pages =)

Is the food/recipe thread still active or is it a clique conversation thread now? It's hard to tell and I don't want to step on toes coming in late to the game =)

I love to cook, rarely repeat a recipe, and am interested in posting here regularly if it's still going.

Thanks, Lindsay, for your ongoing work - I have already copied and pasted several recipes I found buried in the thread!

I'm sure you've already been welcomed, so I'm just throwing my hat in the ring!!! Welcome to our group!!! This is most definitely a place to post your recipes, share successes or food failures, etc. We love new recipes. Sometimes we chat, but we are a friendly bunch and love to have newcomers join in and give us wonderful new dishes to try!!! Lindsay has done such an amazing job, so the recipes are easy to find. My family has liked everything I've tried from this list, so I'm hoping you'll join us and give me more to try!!!

I totally agree with you, Nancy! Lindsay, don't let yourself get down! Just be open to any opportunities. I really liked the idea of checking with the Taste of Home party ideas. I bet you'd be a whiz at that!

Ok, on to my dinner. Tonight we'll be having tomato soup and grilled cheese sandwiches. I know, how glamorous, right? Well, my kids like it, they'll eat it without fussing at me, and by Friday I'm ready for that! Last week I made tomato soup and grilled cream cheese sandwiches and they were yummy. Tonight I think I'll make grilled ham and cheese sandwiches. Possibly grilled tunafish sandwiches. I guess it all really depends on how hot my house gets. We are supposed to be up past 90 degrees today!

Last night, I had leftovers of this Easy Asian Beef and Noodles from Cooking Light. I'm a HUGE Cooking Light fan.

Easy Asian Beef and Noodles (from Cooking Light)

1 (8-ounce) rib-eye steak
1 teaspoon dark sesame oil, divided
1 cup (1-inch) sliced green onions
2 cups prepackaged coleslaw
2 (2.8-ounce) packages beef-flavor ramen noodle soup (such as Campbell's)
1 1/2 cups water
1 tablespoon low-sod
ium soy sauce

Trim fat from steak; cut diagonally across grain into thin slices. Heat 1/2 teaspoon oil in a large nonstick skillet over medium-high heat. Add steak and onions; stir-fry 1 minute. Remove steak mixture from pan; keep warm. Heat 1/2 teaspoon oil until hot. Add slaw; stir-fry 30 seconds. Remove slaw from pan; keep warm.
Remove noodles from packages; reserve 1 seasoning packet for another use. Add the water and remaining seasoning packet to pan; bring to a boil. Break noodles in half; add noodles to water mixture. Cook noodles 2 minutes or until most of the liquid is absorbed, stirring frequently. Stir in steak mixture, slaw, and soy sauce; cook until thoroughly heated.

Yield: 2 servings (serving size: 2 cups)

CALORIES 489(23% from fat); FAT 12.5g (sat 3.6g,mono 5g,poly 2.5g); PROTEIN 29g; CHOLESTEROL 55mg; CALCIUM 80mg; SODIUM 1152mg; FIBER 4.9g; IRON 6.3mg; CARBOHYDRATE 68.1g

My changes: I used a flank steak, just about doubled everything, added in fresh sliced mushrooms and water chestnuts, and I never really measure anything =) It made a lot and I really liked it. The leftovers were good, too!

Tonight we're having Baked Ziti - this is an Allrecipes recipe that is SO good and easy! I usually make it for new parents and stick it in their freezer for later.

Baked ziti

INGREDIENTS
• 1 pound dry ziti pasta
• 1 onion, chopped
• 1 pound lean ground beef
• 2 (26 ounce) jars spaghetti sauce
• 6 ounces provolone cheese, sliced
• 1 1/2 cups sour cream
• 6 ounces mozzarella cheese, shredded
• 2 tablespoons grated Parmesan cheese

DIRECTIONS
1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.

I don't make many changes to this, just add my own seasoning in as I go =)

My BFFs sister sells it. I've been to one of her parties years ago. The stuff is kinda pricey but great quality. And you get (or used to) cards with recipes and suggestions for all the stuff you buy. I picked up a few things for entertaining....kinda that "what's in that fabulous dip?" thing. Ancient Chinese secret!;)

Last night was better than the corn episode. I did diced sweet potatoes with onions and lamb chops. Shoulder chops were $3.99 lb at A&P yesterday so there's a couple in the freezer as well!:woohoo:

And DH flys in for the weekend (and boy will his arms be tired......I kill me sometimes:lmao: ) today. Dinner is meatball stroganoff in the crockpot and ice cream with mini marshmallows and...................wait for it................................. Magic Shell!

I know this isn't dinner, but I'm actually BAKING something so this occasion much be documented! I really don't enjoy baking but I knew DH would love these cookies since he loves all things lemon. I take Fridays off to work from home since I work 7 days a week so I try to get a few "domestic" things done then since it doesn't happen most of the week.

I can't remember what the cookies are called! I'll post if it turns out well

Some kind of lemon cookies w/filling
INGREDIENTS:

For cookie dough:
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
2 sticks (1 cup) butter, softened
1 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
2 teaspoons fresh lemon juice

1/2 lemon zest

For filling:
1 (8oz) package light cream cheese, softened
1/3 cup powdered sugar
1 egg
1/2 teaspoon vanilla
1 teaspoon lemon juice
Jar of lemon curd

Powdered sugar for dusting


DIRECTIONS:

1. Into a medium bowl sift together flour, salt, and baking
powder. In a large bowl using a handheld mixer, beat butter until
creamy. Gradually add sugar, beating until mixture is light and fluffy. Add egg,
vanilla extract, lemon juice and lemon zest and beat until combined well.
Gradually add flour mixture, beating until mixture just forms a dough. Form
dough into a flat disc and wrap with saran wrap. Chill in fridge until firm,
at least 4 hours.

2. Preheat oven to 375 degrees and lightly grease a baking
sheet.


3. To make cream cheese filling: in a medium bowl beat
cream cheese with a handheld mixer until fluffy. Add powdered sugar, egg,
vanilla and lemon juice and beat until thoroughly combined.

4. To make cookies: take heaping teaspoons of chilled
cookie dough and form loosely into balls - work quickly to keep dough as cold as possible. Place on baking sheet 1/2 inch apart. Using a small spoon or your
finger, make an indentation in the middle of each cookie. Spoon
approximately 1 teaspoon of cream cheese mixture evenly into indentation and top with 1/2 teaspoon lemon preserves. Bake cookies 8-10 minutes until cookies are just slightly golden around the edges. Remove from oven and allow to cook 2 minutes, then transfer to a rack to cool completely. When cooled, dust top of cookies with powdered sugar. Store in an airtight container.

Well nobody told us that DS, because he's only 16, would only be getting a "restricted" license meaning he cannot drive after 11PM until after we waited at the DMV for two hours. He turns 17 on June 4th so we are just going to wait instead of paying twice. Not that he'll be allowed out much after 11, but I just know he'll be bugging the **** out of me to get it removed.

Rest assured I will start stocking up on Rosa Regale for when he's out with the car!!

aimeedyan--I'm a little late today--but WELCOME!!!:goodvibes I'm also a huge fan of Cooking Light. Those cookies sound wonderful--only prob. would be I'm the only one who likes lemon here--so I'd have to eat the whole batch--Poor me!;)

Aimeedyan, I love cooking light magazine too! Though I have to admit that sometimes I can't resist "fattening up" their recipes a little bit. I am a slave to the butter! They have great flavor combinations though.

Tonight I am just picking up sandwiches at a local bakery for us to nosh on while we finish packing.

Well, guys, this is my last post until post-trip! It is rainy and cold here, and tomorrow I will have my toes in the Caribbean Sea! Whoo-hoo! I won't have internet on the island, and we are going for three weeks, so I will "talk" to you all again on June 8th. I will be cooking down there, so I'll have some photos for you when I get back, with an ocean backdrop! Me and my stupid blond hair are outta here! :cool2:

I've had corned beef in the freezer since March..Ed was in the hospital for ST Patricks Day and I didn't have the heart to make it.. I'm going to make cornedd beef and cabbage today..I only make this once a year tops.
