Morning all! Well, I made it to the store yesterday afternoon. We ended up grilling some turkey burgers. Tonight I'm going to try Sheryl's Tuscan Beans, Sausage and Peppers. Sounds yummy! Have a great day all!

Tonight's dinner is going to be really simple. We are having tacquito casserole and smashed pintos. The entire dinner is ready in 15 to 20 minutes and I need to start cooking for this weekend's shower. The casserole is made in the microwave and the pintos on the stove, so I figured I could get the baking part done tonight.

Thanks y'all for the roasted brussel sprout idea! My DH loved them & I really liked them too! Nothing like the ones my Mom forced on me when I was a kid!!

Jenn, I will have to try them again, steamed with lemon & butter. That sounds like a very good caterer you have there! Who wants the same old raw veggie tray!

Lindsay, Glad you're shoulder is improving, sorry you are still not able to work out though!

Tonight is going to be the leftover ropa vieja & pinto beans. I'll take the BeadPirates idea :thumbsup2 & make a tomatillo salsa & serve it on tortillas.

Lindsay, I am so glad that you are feeling better!!! :) I didn't know what you did as far as work but it sounds like fun.

We are probably going to get some Chinese food...DS has a game at 6 so we have to eat and run. I have some left overs in the fridge but DF only like certain things as left overs...please don't think I throw this stuff away, it usually becomes my lunch.

Wedding Update: We did so well with our pre counseling survey and meeting with the Pastor, that he only wants to see us 1 more time! :cool1: :cool1: :cool1: I guess we're more normal than I thought! Thanks all for putting up with me!!!

Speaking of Y'all...The pastor kept saying "It will be Y'all after the wedding" meaning a team...He said y'all like a million times...can ya tell he is from FL???

I would say perfect but almost perfect!!! ;)

My life is like an open book...I tend to share too much. When the Pastor heard some of my stories with my ex, I think his jaw fell on the floor!
 
My dd will be here on April 27 with the two babies and of course my sil is here all the time now anyway. She doesn't eat meat, fish or chicken - no particular reason - she just doesn't like it. It is a big pita. Strangely enough, my 7 year old grandaughter (my son's dd) does the same thing. They had to put down their lab and Hannah said "I don't want to eat dead animals." They are leaving April 30 which is the same day we are leaving on a Bahamas cruise.

I think we're having manicotti with fake meat in he sauce (I have a big pan of it left over from the last time she was here), fried chicken and macaroni and cheese, and one night we will grill - she can have boca burgers. Last time she was here I made a spinach and cheese pie that was very easy and very good. I'll post the recipe if anyone wants it. I make the mac and cheese in the crockpot and it really is very good if you like mac and cheese (I don't so much). My fried chix is a modified Martha Stewart recipe (I use bonless skinless breasts and it is soooo good).

Let me know if you want any of these recipes.
 
marlasmom- please post the recipe for the pie. I love that combination! I can't imagine how you manage with all of the exclusions in your meals. Marisa will not eat red meat and I sometimes find just that one type of meat can be a problem. I don't need to cook to please her but I don't really like to make two meals and I don't like it if she can't eat the meal we are having. I know....I have issues.


Lauren- Buddy can't complain because he has made such a production about how he is not a picky eater :laughing: and how he does not want me to throw food away when it is old. He got saddled with his own words.

Sheryl, I'm showing my ignorance, but what is ropa vieja and how do you make it?

Also, for all of my new NOLA friends, I have a crawfish question. I have never had crawfish, but have been dying to try it. Now, I know what they are selling in my grocery store isn't the same as what you can get (not by a long shot - I know), but they are selling them pre-cooked. Is that usual? I found a couple of different recipes I could try, but I figured they would be kind of like shrimp and you don't really add cooked shrimp to many recipes as they overcook easily. Please help!

Lauren, glad to hear the wedding plans are coming together. I've haven't thought of it as "putting up with you". I've enjoyed hearing all about the details. I'm sure you will have a few more to share as the day gets closer and I'm looking forward to the pictures. You'll have to share one of you together.

Sheryl--I wouldn't be too nervous about me trying out your recipe. Number 1 it sounds yummy--and number 2: DH loves anything with sausage and peppers. So it's bound to be a hit with him!:thumbsup2

That's the way we buy them when it's not crawfish season here. Any recipe you have that calls for crawfish tails - that's exactly what you need to buy. You don't have to worry about them overcooking like shrimp.

Ingredients:

1 (8 ounce) package Swiss cheese, sliced

2 tablespoons flour

1 (10 ounce) package frozen spinach, chopped

1 cup milk

3 eggs, beaten

1 teaspoon salt

black pepper

dash of nutmeg (can be substituted with cayenne pepper)

(9") pre-made pie shell



Preparation:
Preheat oven to 350°. Cut cheese into strips and toss with 2 tablespoons of flour. Thaw spinach and squeeze well to drain. Beat eggs, milk, salt, pepper, and nutmeg or cayenne. Add drained spinach and cheese. Mix together and pour into unbaked pie shell. Bake at 350° for 40-45 minutes, or until knife comes out clean when stuck into center of pie.
