Sheryl - can you share the recipe for the potato salad? And do you par-boil the artichokes before grilling them? I've never grilled them before, but I have had them and they are delish!!

I was just going to ask for the potato salad recipe!! I'm also interested in the artichokes. I love them, but the rest of my family: not so much.
 
Tonight we had potatoes baked in the oven, corn, sauteed mushrooms and iced tea.

For dessert later tonight I am making chocolate chip cookies. Well, not really making. I am using the Toll House pre-made dough kind that you just pop in the oven. ;) Those are delish, especially warm with milk. (Publix has those Toll House pre-made cookies on a buy one get one free special this week.)
 

Maybe I'll still make the chicken pot pie I scheduled!

So you are the reason that I was craving chicken pot pie this morning????????? After I started that little project I was asking myself why I just didn't pop those roasters into the oven :rotfl:
 
Well winter has come again. My poor cubbies couldn't play or lose for that matter today. Too much sleet and snow.

We had mexican night. Fajitas, rice and corn.

Hi to everyone else too......y'all have been busy (as usual) on here.

Lauren, I know you're glad that DS is back home.

shovan & Kathy, I can't imagine coming home to those freezers/fridges. Not fun. We've only received a direct hit one time (Claudette) and we didn't have power for 5 days. We were miserable in the heat. A friend of mine who has 5 kids and I managed to snag one of the last hotel rooms in a nearby town that still had power so we crammed her and her brood along with me and 5 of my kiddos into one hotel room. Our husbands work together and were at work for several days straight. Talk about an experience. Still nothing like what you all had with Katrina.

We just had spaghetti with meat sauce (my doctored up Prego) tonight. Nothing adventurous. I am so sleepy. It figures since I have to stay up late to pick up the twins from an out of town track meet!! Any other night I would be suffering from my usual insomnia!

Tarheel Tink, only 8 more days until we leave on our cruise....too bad we booked this one so last minute that I didn't even get a chance to think about dieting. I've been busy drooling thinking about all the desserts I'm going to have next week! We really want to do Alaska one of these days but I'm going to have to settle for another stop in Cozumel this time.

OH MY GOODNESS-what a welcome!!!! Thank you. I lurk because I am not crazy over cooking in general-and so many of your recipes sound YUM and I was recipe hunting!
I have tried an asparagus recipe that, I think, TigerKat put on the NO,La thread that was very good and kids enjoyed(esp since we are not much on asparagus, but DH loves it!) So that was one we liked so he'll be happy for me to make it again.(one with phyllo wrapped asparagus)

I will be around and will contribute soon! I have some good ones I used to make BEFORE kids and school, that were pretty YUM. I like to bake but don't do it often-lhowever I make up for it at Thanksgiving and Christmas time!

WELCOME LORI!!!! I'm so glad you decided to check out our WFDT! I don't know if you checked page 1 first for the listings of recipes. Thanks to Lindsay, who does all the work for us!!:thumbsup2 Didn't I tell you that you could find some great ideas for dinner on here.

But I have to say my combo tonight while very delicious & really impressed my hubby was way too much for a weekday! I was lucky that Alexis fell asleep at 3:45 & slept for almost 2 hours or dinner would not have gotten finished.

Here's the recipes, I had pulled them from the interrnet somewhere out there.... ( Sounds like a song doesn't it :) )
As I look at them I'll try to remember any changes I made :confused3
GRILLED ARTICHOKES

INGREDIENTS
· 2 artichokes, halved and choke scraped out
· 1 teaspoon salt
· 1 teaspoon ground black pepper
· 2 cloves garlic, chopped
· 1 shallot, chopped
· 1/2 cup butter
DIRECTIONS
1. Preheat an outdoor grill for low heat.
2. Meanwhile, bring a large pot of water to a boil. Place the artichokes into the boiling water, and season with salt and pepper. Throw in half of the garlic, and half of the shallot. Boil for about 30 minutes, or until a fork is easily inserted into the stem of the artichokes. Drain and set aside.
3. Melt the butter in a small pan over medium heat, and stir in the remaining garlic and shallot. Cook just until fragrant, then remove from the heat.
4. Place the artichoke halves onto the preheated grill. Brush some of the melted butter onto them. Cook for 5 to 10 minutes, brushing with butter occasionally, until lightly toasted. Serve with remaining butter as a dipping sauce.

I didn't have any shallots so I left that out, but added a lemon to the boiling water.The only changes I've made to this is to season the artichokes with cajun seasoning before putting them on the grill. I also added garlic, lemon juice, lemon zest to the butter sauce. Tonight I also added limoncello liqour to the butter sauce but it's not neccesary.

My DH loved the way they tasted, but finds them difficult to eat, so he pretended to be happy that I went through the trouble.
 
For this recipe use small red potatoes.,what we call boiling potatoes. I use balsamic vinegar for this, a little more olive oil & of course I had more pepper, tonight I used red pepper flakes & cajun seasoning.


Mediterranean Potato Salad

1 1/2 pounds boiling potatoes, all about the same size
Coarse salt
2 medium firm ripe tomatoes
1/2 small red onion, peeled
1/4 cup pitted green olives, coarsely chopped
1 tablespoon capers
1 small garlic clove, peeled and minced fine
1/4 cup fruity olive oil
1/4 cup imported good quality white wine vinegar
Salt and freshly ground pepper to taste

Cook the potatoes in boiling salted water in a medium pot until tender but firm, about 15 minutes. Cooking time will vary according to the size of the potatoes. Drain. Return the potatoes to the pot and toss over high heat to evaporate any remaining moisture. Set aside to cool. When cool enough to handle, peel with a paring knife, removing any bruised or discolored areas. Cut into roughly 1-inch dice, keeping them irregular in size. Core the tomatoes and cut into chunks about the same size as the potatoes. Cut the red onion into slices about 1/8 inch thick. Combine the potatoes, tomatoes, red onion, olives, capers, and garlic in a large bowl. Add the olive oil, vinegar, salt, and pepper. Toss gently to mix. Adjust the seasonings and serve.
Serves 4.

edited to add: I also added a lot of fresh parsley & a few large leaves of fresh basil.
 
I have to say this is great. It really enhances the steak doesn't overwhelm it. I marinated the steak with some of the sauce about 3 tsp. plus extra oil, garlic, cumin, salt & pepper. Then served the sauce has a dipping sauce with the steak.


Chimichurri Sauce
This garlicky sauce from Argentina is great spooned over beef or chicken.
serving size
Makes about 1 cup.
ingredients
1 cup (packed) fresh Italian parsley
1/2 cup olive oil
1/3 cup red wine vinegar
1/4 cup (packed) fresh cilantro
2 garlic cloves, peeled
3/4 teaspoon dried crushed red pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
preparation
Puree all ingredients in processor. Transfer to bowl. (Can be made 2 hours ahead. Cover and let stand at room temperature.)

I use equal cilantro & parsley & cut down on the vinegar, up the olive oil. I also add a lot of ground cumin & tonight I also added a whole jalepeno seeds removed. Oh, I also added dried oregano because many other recipes called for oregano.

Nancy, I definitely need your Tinkering Support Group or as I like to call it "tweaking a recipe".

I took some pictures, but they didn't look so good. I'll take a look at them tomorrow to see if any are worth posting.

Oh this sounds so good! We love potato salad and this is another one from the thread going into my book.
 
Good morning all! Our chicken pie was worth all of the effort as it was so good, especially after sitting through my nieces softball game. She catches for my hometown and played against Suffield, where I live now, so it was fun but cold. She has a torn ACL so it was pretty clear that she was favoring her right leg brace and all, but still fun to watch her.

Today we are expecting a lot of cold rain and maybe a sleety mix so I am making our old stormy comfort food American Chop Suey or "Bubbaloo" as my Mom used to call it. I'll serve it with a tomato and onion salad. My family enjoyed it yesterday and seems to be sick of green salad.

Lauren- sooo happy for you to have ds home!

Kathy/Shovan- I can't even imagine what those fridges must have been like!! We had an ice storm in '98 and were without power for 8 days, BUT it is Maine in January, and everyone in our neighborhood just moved all the food out to the backyards, into the snow and most was saved!

Speaking of the weather---It is 22 here this morning, and we have around 10+inches of snow on our way.......There is no global warming in Maine, lol......
dinner tonight is going to be Chicken tacos with a nice salad on the side. I am still not 100% so this is an easy meal that ds and dh love!!

Lindsay, I hope your shoulder heals up really quickly!

I know some of you find our hurricane trials tough to deal with, but I can't even imagine having to get up & go with snow on the ground & 22 degrees outside!

Us southern gals don't handle the cold very well!

The Queen of Easy, I'm looking for an EASY chicken recipe today, I wore myself out with that combo last night!

Oh Lindsay, you really are between a rock and a hard place aren't you? I'm sorry that this is happening because you need that arm :grouphug:.

I don't know much about it, but both of my nieces are athletes and both have torn the ACL, one twice! My sister brought them to a sports Dr because there are exercises to strengthen it. Have you seen a Dr who specializes in sport's medicine? My DH Dr has suggested that he visit one because he uses his shoulder and now experiences chronic pain there.
