Morning Y'all,

Jenny, I hope everything goes well with Ed's appt. today. Y'all are in my prayers.

liamsaunt, That nicoise salad looks fabulous! I want some!

Lauren, I'm glad to hear your son is having a nice time in AZ! I didn't realize that was yesterday you were bringing him the wine, I think he'll like it. His Bellini's sound yummy!

We had a nice Easter. I woke up early yesterday morning just couldn't sleep, so my DH was treated to homemade waffles, with strawberries & real whipped cream for Easter Breakfast. It was very pretty, I took a pic I'll try to post later.

I also made some appetizers to take to my Aunt's house yesterday. I haven't figured out a name for them yet. I took puff pastry, cut it into little squares, filled a muffin tin & made little cups. I filled them with a mix of goat cheese, cream cheese, & sauteed crabmeat with onions, & cajun seasonings. (BeadPirate, another variation on the Muriel's Goat Cheese Crepes. Thanks for that one! ) My family was quite impressed with them, they looked really fancy & tasted great. I'll try to write a recipe for them, I was feeling creative & came up with it in my early morning buzz yesterday.

I have leftover potatoes, mushrooms & crawfish from the boil yesterday. So I'll fix something tonight to use all of that.

Glynis, I ave many names for my Ex...but I a trying to be a better person lately, so I'll just say that he is my baby sitter that pays me!!! I am very lucky to have found DF...he is a wonderful father figure for my son...they really get along great...If you have a VR in Disney, you have to invite your DIS friends!!!

Lauren and Glynis- It's funny how things work out isn't it. My first DH passed away when my children were babies. He would not have made their lives wonderful. And then Buddy came along, he is all the Marisa and Daniel know, and Donny just barely remembers his father. Now, their Dad loved them but not enough to change, Buddy raised them, that is what counts. His parenting skills came from watching Cosby :confused3, (and sometimes when he snuck in Oprah) so he was unorthodox to say the least.
 
Good morning, all! After all that cooking yesterday I wanted something simple tonight, so we'll be having spaghetti with meatless tomato sauce and rolls.

The macaroni and cheese yesterday was really good-just creamy enough. Easy, too! I guess I don't have to try any more macaroni and cheese recipes for a while, I'll just use that one.

Whew! I just finished cleaning up my kitchen from the major cookfest yesterday! DH said he would take care of it, but, predictably, the lure of computer games won out! At least he put the food away.

We only have a small amount of ham leftover, and I'll be having some of that for lunch. Dinner tonight will be the enchilada casserole I was supposed to make last week, but never got around to. I have all the ingredients, and that means no having to leave to go to the store.

It's sunny and beautiful outside, so I'm thinking I'll go start prepping my garden area. DH planted some seeds for me in a greenhouse, to get them started, so I'll go start hacking away at last year's remains. Can't wait for some home grown tomatoes!

I have a tripod now, thanks to my little brother. DH is used to me taking pictures of our food. The rest of the family thinks I am a little weird though!

Your pictures are wonderful! You could be heading for a new career! Your food looks delicious!! My DH has now gotten so used to my food picture taking that he'll now remind me to take a picture before we eat!
 
May I join in? I've already seen some great recipes on here! I used to cook all the time, got out of the habit. We were eating out most nights and it has wreaked havoc on our waistlines and pocketbooks. Tonight is the first attempt to get dinner on the table for a while.

Tonight's dinner at our house is:
Ham and Beans in the crock pot
Cornbread (premade from Jewel) for DH, polenta for me
Brussel sprouts in butter sauce (from freezer)
Mashed Winter Squash with a tiny bit of maple syrup (from freezer)

Ham and Beans

Ham bone (leftover or ham steak with bone)
1 lb soaked great northern beans
1 onion, chopped
water to cover
1 can campbells bean with bacon soup
Tabasco
black pepper

Toss ham bone, soaked beans, onion in crock pot. Cover with water. Cook on low for 10-12 hours. Remove bone, shred whatever ham you can, add ham back in to pot of beans and water. Stir in bean with bacon soup, tabasco & pepper to taste. Serve over cornbread.

Lauren, Glynis & Nancy - I'm joining the club. DS's Dad, who he hasn't seen in 11 years was an addictive person - alcohol & gambling. We divorced when Kyle was 5. To make a long, horrible story short, I met Johnny when Kyle was 6 and the rest is history. Johnny adopted Kyle and is his Dad. Bio Dad has been in contact with us recently. He is now remarried with a child and is starting to feel guilty about not being here for Kyle.:sad2:

shovan - can't wait to see what you come up with for the crawfish, mushrooms & potatoes. Please post that appetizer recipe when you get it done!
 
Piffle- Come on in! And thank you for adding a recipe, it looks good. I am trying to get back into some crock pot cooking but the only thing I have made recently in Glynis's pot roast.
 
lucas, I have had that & it is one of the better sweet white wines. It shouldn't be too difficult to find. Don't y'all have something called ABC Liquour Stores? Floridians we met during F&W Fest talked about that being the place that carries almost every wine imaginable. Here's another good sweet white to try Hogue Late Harvest White Reisling. It's not as light as the Moscata but has a very flavorful rich sweet apple taste, almost like an Ice Wine!

Kathy- It was the same with first DH. He drank and was not very nice when he did. He got sick so I took care of him, but my children would never have had the same life as they have had with Buddy. He not only has raised my children and was a wonderful role model and mentor for my nieces and nephews, but has accepted my DDIL and my DSIL as his own, presenting Erica to my son on their wedding day.

I look at the recipes we all create here and I like to see who we all cook for. It really does not matter how the food starts, nor how how it turns out (just ask Buddy), but the reason we all spend the time looking for new ways to show our families how much they mean to us.

I am so glad to know that all of us girls with troubled first marriages found a special someone!

All my babble earlier, I forgot to tell you what we are having for dinner!!! :lmao: I am going to try a South Beach recipe for Chicken Cordon Bleu...some steamed broccoli on the side.

Here are the recipes that I mentioned earlier:

Mom's Carrot Cake
2 cups flour
2 cups sugar
2 Tsp baking soda
2 Tsp baking powder
2 Tsp cinnamon
2 Tsp Nutmeg
1 Tsp salt
1 1/4 cup vegetable oil
4 eggs
2 cups grated carrot
1 cup crushed pineapple, undrained
1 cup chopped nuts

Icing (I doubled this)
2 - 3 oz cream cheese
1 Tsp vanilla
2 cups confectioners sugar

Mix together all the dry ingredients. Add oil and eggs, mix. Then add pineapple, carrots and half of the nuts.

Bake at 350 in a greased 9 x 13 pan for about 1 hour or until toothpick comes out clean. Cool. ***I used 2 round cake pans and baked for about 40 minutes.

Make icing by combining cream cheese, vanilla and conf. sugar.

Ice cake and sprinkle with remaining nuts.

***My cake stuck to the pan. We just pried it out!!! :)

Ham and Broccoli Casserole Serves 4 - 6
6 slices of bread
8 slices (or grated) sharp cheese
1 pkg frozen broccoli (can use leftover)
12 oz ham sliced
3 beaten eggs
2 cups milk
1/2 tsp salt
2 tsp chopped onion
1/4 tsp dry mustard
dash oregano, onion and garlic powder

Cut crust from bread. Put crust in a greased 9 x 9 pan. Cover crust with cooked and drained broccoli. Put layers of ham then cheese/ Place bread squares over cheese. Beat eggs, milk, onion and spices and pour over bread. Let stand over night.

Sprinkle with parmesan cheese and bake at 350 for 55 minutes or until the top is lightly browned.
 
I know someone here drinks this, I think one of you girls from NOLA...is this good? I remember hearing good things so I just bought 2 bottles. Will a red wine drinker like it? I was thinking of giving my BIL a bottle for his retirement from the PAPD...but didn't know if he would like it or if it was a nice enough wine to give as a gift (the price tells me yes :) )...it says it is good for after dinner...he likes that kind of stuff too.

PS: I did buy a bottle for us too!!!

Gotta go make this cake or I'll be buying something in the am!!!

Haven't read all the posts after this to see if Sheryl answered yet, but here goes. It's a sweet dessert type wine. Sparkling like champagne, but not dry. Would be an exceptional gift...at least in my opinion. This is what DH and I use to toast any special occasion now. They sell it at the Italy pavillion in Epcot and give you little dark chocolates to eat with it. It is YUMMMM-O!
 
And since Rick left the morning at o'dark thirty for the airport, it's just me and I'm getting Cantonese roast duck take out from Harrah's casino. And potstickers. Because I'm selfish!:rotfl: :rotfl:

And DH did bring me cheddar biscuits from Red Lobster last Friday. Stuffed in his suitcase. From Detroit. But I love him:love: cause he thought of me and my food fetish.

It's amazing what you miss when you can't get out to chain restaurants anymore. I love the ambience and historical crap about the French Quarter, but I'd kill for a Fridays or Olive Garden (mmmm, soup and salad, breadsticks). But now I've had my Red Lobster fix.:goodvibes

Sorry for the rambling....apparently I need to find something for lunch!

Sounds like this could be a large club........I'll be another member. DD's bio dad has not seen her in 5 years and he's lived in the same town as us and even worked for the same company as me and DH work for. He only saw her sporadically before that so it wasn't a big shock to her when he just stopped coming around. We divorced when DD was only 9 months old because he had/has serious psychological problems. He's now addicted to prescription painkillers and ended up losing his job because of it. We're in the process right now of DH adopting DD. I don't think we'll ever hear from BioDad again but it really is his loss. Keep us in your prayers that the adoption will be finalized before school awards in May because DD wants her name changed before then!

We're having steak, baked potatoes and broccoli tonight. DD7 was up sick with a tummy ache all night so I ended up staying home from work with her today. The kids didn't have school so it worked out good.

Only 10 more days til we leave on the cruise and I can't wait. I'm TRYING to diet until then because I KNOW we'll eat and eat on the cruise and I don't want to gain TOO much! Lauren, you'll have to post the chicken cordon bleu recipe.

Welcome Piffle! Your ham and beans recipe sounds yummy. I was planning on using the leftover ham from yesterday with butter beans in the crockpot so this will work perfectly!

Jenny - here's hoping everything goes well at Ed's doctor visit and that your kitchen isn't too big of a mess when you get home!

shovan - I am TERRIBLE at making up dishes and being creative with leftovers, I mean I really need recipes! You seem to be the type of gal who can spot an ingredient and make a meal around it, which is something I have never been able to do.:goodvibes
