Lauren, I'm glad to hear your son is having a nice time in AZ! I didn't realize that was yesterday you were bringing him the wine, I think he'll like it. His Bellini's sound yummy!
We had a nice Easter. I woke up early yesterday morning just couldn't sleep, so my DH was treated to homemade waffles, with strawberries & real whipped cream for Easter Breakfast. It was very pretty, I took a pic I'll try to post later.
I also made some appetizers to take to my Aunt's house yesterday. I haven't figured out a name for them yet. I took puff pastry, cut it into little squares, filled a muffin tin & made little cups. I filled them with a mix of goat cheese, cream cheese, & sauteed crabmeat with onions, & cajun seasonings. (BeadPirate, another variation on the Muriel's Goat Cheese Crepes. Thanks for that one! ) My family was quite impressed with them, they looked really fancy & tasted great. I'll try to write a recipe for them, I was feeling creative & came up with it in my early morning buzz yesterday.
I have leftover potatoes, mushrooms & crawfish from the boil yesterday. So I'll fix something tonight to use all of that.
