Last night's dinner was awesome, DH has some pretty good skills! He made a spiced butter that he stuck under the skin of the chicken and roasted it falt over a bed of onions. I think he's been lying when he says he can't cook!!

Today's Sunday linner was a tour de force "antipasto": I did not make much because in addition to my destroyed thumb I have a wicked cold right now. So, I brought arancini and white bean salad. My Mom, on the other hand, went nuts! She made bruschetta two ways, tomato and garlic-olive oil, arugula salad, three types of sausage: sweet, hot, and hot chicken, in tomato sauce, meatballs in tomato sauce, marinated artichokes, grilled eggplant, marinated mushrooms, pickled hot peppers, roasted red peppers, three kinds of olives, proscuitto, breseola, some kind of dried sausage, soprasetta, and then cheese plate: ricotta salata, parmesean, aged provolone, boccinocini...it was really, really good.
 
He's really going to be looking for sandwich fillings this week because I am irritated with him. I tend to cook food he hates when I'm testy so if you see a starving man roaming around, you'll know I still at it!




The question is how much shame will he have if I stay snippy for a week. He won't even know where the tuna is ans he told me yesterday that the only thing he knows how to cook is eggs. He's not that good with them either.


I'm not sure about tonight. I am trying to decide which meal Buddy will be worse for Buddy to choke down....meatloaf or shepards pie, or maybe some sort of sweet chicken???????

Nancy, you are killing me. :lmao: :lmao: But I know the feeling. When I get testy, either hormonally or otherwise, DH knows his best bet is to eat whatever I fix and as my father says "be thankful". And it never hurts to offer me wine or chocolate.

It sure does! I opened the window in my kitchen while it was in the oven and I know the neighbors were wondering what I was cooking that smelled so wonderful. Thanks for another winner! :hippie:
 
Grilled chicken sandwiches and stuffed portobellos on the grill tonight. Enjoying the decent temperatures.

Stuffed Portotbellos

8 Portobellos
1 box stuffing mix (I use stovetop Monterey style)
water as called for on box
1/4 cup butter
1 cup diced mushrooms
1/4 cup parmesan cheese, shredded
Olive oil for brushing
Paprika

Saute mushrooms in butter. Add to prepared Stuffing, along with the parmesan cheese. Trim each Portobello cap. Brush tops with olive oil, turn upside down and fill with stuffing. Brush with olive oil. Bake at 400 for about 10-15 minutes or until browned, or grill on a grill rack until bottoms are browned. Dust with paprika before serving.
 

liamsaunt- Sunday dinner with your family must be an amazing experience! And I am impressed with your DH. Mine would order pizza!

Gretchen- I think he was the hormonal one, I am just reacting to it. He's lucky that he is eating what I cook because he knows what happens next...... He was raised to eat whatever is at the table so I can get away with tormenting him, but if he's really too angry to eat......I pull out the big guns! I cook his all time favorites, the ones that take all day and that I seldom cook. It only happens once in a blue moon....:lmao:


Anyway dinner was good tonight. My Babka was really good, I think I am starting to get the hang of yeast breads, and this one was similar to the Lithuanian types of Holiday breads. I am going to try a Polish one next time.
 
Nancyg56 If the Babka is an egg based bread like Challa try taking some and roll it flat and put a cream cheese mixture ( softened cream cheam 1 egg beaten and a little grated fresh lemon or lemon extract) spread and roll up jelly roll fashion. A little egg wash on the outside and bake. That the kind of thing I was raised on.
 
NancyG56...I have a question...Do you peel the potatoes when you make the Ohana Potatoes? I think I am going to make these for a potluck I am going to next week...TIA!!!

Nancy, How was the dump cake? I am jealous...I love Babka!!! I need to get to the polish store for Easter...:)

ETA: I see Stephanie made the dump cake too...did you like it? I am getting a complex...I don't think anyone likes my recipes...boo hoo!!! :)
 
Lauren--The dump cake was fabulous and easy!! I used peaches instead of blueberries and it was yummo!:thumbsup2 Feel better?;)
 
Tonight I am making the chicken provencal soup. But instead of using chicken, I will brown up some sweet Italian sausage instead. We'll have bread with it. Mmmmmm, I can't wait!!

Don't you just love Italian sausage? It add such a yummy twist to foods :) I would love to eat the spicy, but I have to stick with the sweet/mild. I LOVE spicy food, but my tummy doesn't :)

So glad to see someone else puts it in their spaghetti!

The kids won't eat it- but dh and I love it! I have a hard time getting it to the sauce as my dh eats it as fast as I cook it.... I'm forever saying, "Get out of it- it's for dinner!"

My husband does the same thing!! Also, he tried to be helpful by "stirring" things for me while I'm cooking. Then I catch him sneaking bites. It's hilarious!

Yesterday I cheated and used Bell's stuffing mix for dinner..... I poured the dry mix into a bowl while I sauteed the onions..... I caught him EATING the dry mix. :confused3

Edited to add: He was then washing it down with a Miller Lite. Barf!

Tonight we are having what I call our "power" dinner. Grilled salmon, broccoli, and carrots. To drink will be Pom Wonderful pomegranate juice.

Tonight on Bravo is the series finale of Six Feet Under (I know it is reruns but we don't get HBO) and we'll have dessert then. It will be the rice pudding that I made last night from the left over rice we had from our chicken dish. The rice pudding came out the best I have ever made - it is always iffy cause I just eyeball everything but it came out delish!
 
I tried something different yesterday.

Spicy Crockpot Chicken

4-5 boneless, skinless chicken breasts
1 bottle of salsa (I used Picante/mild)
1 bottle of Ragu Double Cheese sauce
1/2 a large container of sour cream

Put the chicken breasts in the crockpot. Pour the salsa over the chicken and set the crockpot to low. After about 5 hours the chicken should be done (if the chicken is frozen) dice or shred the chicken (depends on how you want to use it). Add 1 bottle of Ragu Double Cheese sauce about 10 minutes before serving and stir. About 5 minutes before serving add 1/2 of a large container of sour cream and stir.

We had the chicken and sauce over Tostito chips with a side salad. It was fun and quick. :) Next time I'll add some drained kidney beans.

I may make enchiladas with the left over chicken tonight.
 
Morning all! I think tonight is going to be Pizza Spaghetti Casserole--from the March Southern Living. It's a new recipe for me, so if it turns out I'll post

Here's the yummy Main Street Bakery French Toast Loaf Recipe

YIELD: 1 Loaf

Ingredients:

12 slices day-old white bread (preferably a homestyle white, not Wonder Bread
type)

8 oz. butter (chilled and sliced)

Brown sugar batch:

9 oz, light brown sugar
1 tsp. cinnamon

Mix together and set aside.

Batter:

10 oz. heavy cream
4 large eggs
1/2 tsp. vanilla
1/4 tsp. cinnamon

Mix together and refrigerate until ready to use.

Method:

Liberally spray a loaf pan with Pam or other vegetable spray. Layer three slices day old bread on bottom of pan. Sprinkle 1/3 brown sugar mixture on top of bread, then layer 1/3 of the butter. Repeat these steps two more times. Top off with three more slices of bread (should have a total of 12 slices of bread). Press down with hand to compact bread into loaf pan.

Slowly pour 16 oz. of batter over top of loaf, covering completely. This may take a little time, to allow it to fully absorb into bread and flow into spaces at bottom. (Take
your time here and pour into corners. Lift bread at corners a little to get into bottom quicker if you want.)


Place loaf pan on some paper towel in case of overflow. Cover top of loaf with parchment paper and wrap top tightly with aluminum foil. Place in refrigerator and allow to sit overnight.

Heat oven to 325º F. Bake for approximately 1 hour or until internal temperature in center of loaf is 160 degrees. Uncover and bake for another 15 minutes. Remove from oven and let rest for 5-10 minutes. Place a plate on top of loaf pan and invert to remove from pan. Cut into 7 slices and serve.
