Tonight I made a pot of chili and a pan of cornbread with some honey butter.

I have a Shepherd's Pie recipe, if you want to try something different. My children really like it.

1 lb. extra lean ground beef
1 medium onion, chopped
1 package Classic Brown gravy mix
1 can peas & carrots (or mixed vegetables)
1 1/4 cup water
1/4 cup ketchup
1/2 tsp. dried thyme
2 lbs. potatoes, peeled, cooked and mashed (or you can use a 1 lb. 8 oz container of premade mashed potatoes)
2 tsps. butter or margarine, melted

Preheat oven to 425 degrees. Spray 2 qt. casserol with nonstick cooking spray. Set aside.

Brown ground beef and onion in a large nonstick skillet over medium-high heat. Drain. Return to skillet and add brown gravy mix, vegetables, water, ketchup and thyme and bring to a boil. Reduce heat and simmer about 5 minutes. Season with salt and pepper.

Spoon ground beef mixture into prepared casserole. Evenly top with hot mashed potatoes, then drizzle with melted butter. Bake for 20 minutes or until potatoes are lightly browned and filling is bubbly.

Thanks, Lucas! I actually take a lot of guff about that photo (all from my DIS friends, and all in good fun) because I'm wearing Crocs in it, but it was never about the Crocs for me. I just look at that picture and remember relaxing with hubby on one of our favorite, most laid-back attractions. :cool1:

Come on!!! The Crocs are heavenly though, aren't they???? I haven't worn them to WDW yet, but they are wonderful everywhere else that I have worn them!!! How were they at WDW? Did you wear them every day? :)

Yes, I have worn them every day of more than one trip, and I think they're great. They're better with socks, though, cause they can rub blisters in hot weather without them.

I'm making Shake 'N' Bake Pork Chops with homemakde applesauce, mashed potatoes, and corn. Back to school tomorrow...hello frozen dinners...Lean Cuisine! :)

Today dh and I are going out to lunch at Chili's. I'm always so full after eating there that I can't eat dinner, too. Probably will have leftover chocolate cake that I bought yesterday from Publix. :cake: :blush:
 
today's my son's 5th birthday so we will be having pizza today at his party and a cookie cake from the mall for dessert. Yum.
 
We have friends coming over tonight to watch the Oscars. This is a couple who we usually spend New Year's Eve with, and part of that tradition is our annual Junk Food Buffet. Tonight we're going to do a mini version of that, but I think I'll also do some Deep Fried Chicken Wings and a salad, just so we get a little bit of protein and veggies with our junk.:rotfl2:

I do my wings without any batter or breading. I just coat them in a spicy rub (from The Cookshack - fantastic stuff!), and pop them in the FryDaddy for about 10 minutes. They come out fantastic, crispy and not greasy at all.

I just realized that so far I haven't posted an actual recipe - just descriptions, but that's more how I cook. Sort of by the seat of my pants. :lmao:

I'm embarrassed to tell you that in Allrecipes it is called "Ground Turkey casserole".

Today we are supposed to have spare ribs with whatever else I come up with. I'm not sure now what I will do because my MIL from my first marriage was rushed to the hospital last night with chest pain and admitted. I am going with my DD to see her as soon as visiting hours start. She had a heart attack many years ago and should be taking better care of herself, but she works way too hard around her house.

I'm actually going to be able to cook today after baseball - grilled tilapia with a mango salsa and I'm trying Glynis' fruited rice pilaf. Maybe a spinach salad also. YUMMO!!
 
Tonight will be Glynis' pot roast with carrots, mashed potatoes, and squash casserole. Brownies for dessert. I am having surgery on Tuesday and must be on a diet of Jello and broth tommorrow, so I am getting all my eating done today! I probably won't be doing too much cooking next week but will still check in to see what everyone else is having as soon as I'm up to it. Everyone's food here always sounds so tasty!

Actually, baby Noah came home Thursday night!!!!! The hospital only kept him for 24 hours since he was doing so well. Dan and Andrea signed some papers, the birth mother signed some papers, and they put him in his car seat and came home! Lucky, too, since there's been a tremendous snowstorm that started Friday morning, and hasn't stopped since. They would have been driving him home in that, instead of having him safe at home before it started.

I haven't seen him in person, as my little people have colds and general ickiness, and I didn't want to spread it to him. I'm hoping to meet him sometime this week. I'm crocheting a baby blanket for him, and this gives me some time to finish it!

Dinner tonight at our house will be Mozzarella Marinara and a salad.

The Mozzarella is a great low-carb recipe - you just cut a block of good quality mozzarella into slices, then dip them in an egg wash and grated parmesan, freeze them for a few minutes, then put them under the broiler for about 3 minutes on each side. You serve it with some pizza sauce on top. Really yummy, but you have to really like cheese to eat it straight like this. :rotfl:

Oh my goodness! That sounds heavenly! Definitely a "must try!"

It's not really my recipe, but it did come from another DIS'er. My family have adopted it, though as we really like it!
 
Hi!!! I am back from AC...no luck, we came back losers...

We are having pizza tonight...frozen Tombstone's.

I started making Shepherd's Pie for tomorrow...the recipe that I gave the Link to previously...I think its called Irish Rover's Pub Shep. Pie. The meat mixture is VERY good...the only think I did different was that I added 2 tbsp ketchup to give it more zing. :thumbsup2 All I have to do is make the potatoes and put it all together. I think this recipe is a keeper...:)

ETA: I love my Crocs too!!!
