Today is Race Day in our house. We always look for reasons to have a "party" so the Daytona 500 is just one of them. I'm thinking we will have chicken and cheese quesadillas and wings as an appetizer and then I am going to make corn chowder, I think and order the grinders from Big Y. They were pretty good, and DH loves food he can stick on a plate in front of the TV for this race. Cheesecake for dessert along with coffee.

My nephews GF was here last evening and they have just set up housekeeping. I sent her here to scope out the great tried and true recipes on this thread. She loved the apricot chicken last night and took the leftovers home, so I know she will enjoy the recipes here.
 
My BIL is home on a 72-hour leave this weekend, fo for Sunday linner I am making him his favorite meal. We call it antipasto, but it's really just a bunch of different italian things. I am going a little overboard today. Here is the menu: two kinds of fritatte (spaghetti and mushroom), white bean salad, three kinds of sausage (hot, sweet, and roasted garlic chicken), with tomato sauce for dipping, sweet and sour onions, arugula salald, three kinds of bruschetta (tomato, artichoke, and green olive), artichokes that iIhave marinating in olive oil and herbs, arancini (risotto balls wrapped around mozzarella cheese, breaded and deep fried--YUM), an italian meat plate (proscuitto, salami, breseola, mortadella), assorted olives, and various cheeses. I think that's everything. I'll edit if I end up making more stuff. OK, back to the stove!!
 
This morning we are having cinnamon rolls from Cinnabon, totally ruining my diet. Last night on our date, (I know, booorrring), DH and I decided to run to the mall to return some items I bought for the girls and bought a take out pack from Cinnabon.

Tonight for dinner, I am making Shepard's pie. Hopefully leftovers tomorrow night.
 
For athose of you who are interested in the Lemon Spaghetti recipe - it's very good, but very rich!!

Tonight Ive planned a mini Oktoberfest, which I do in honor of my Dad, who was Dutch and loved this meal above all others. Sauerbraten, which has been marinating overnight, rotkohl (sweet & sour red cabbage), and smashed potatoes. Not sure about dessert yet!;)
 

Those who are staying at home are having french bread pizza. The dissers are going out to dinner!
 
We are having orange mongolian beef which is just beef chunks basted in teriyaki and then stir fried in an orangey sauce. I should probably have rice with it but DH doesnt like rice so we will probably have baked potatoes.

I love rotkohl!!!!! It's a standard dish at our Thanksgiving meal! My dad spent 3 years in Finland, and fell in love with it there. Other people find it so odd, but we love it!!!
 
Today we are having Crock pot pork roast. It's from this thread. The roast is simmering away in the crock pot, covered in apple cider!!! It smells so good! I'm also making some brown rice and creamy zucchini as side dishes. My BIL's family is coming over and they are bringing some kind of veggie for the kids, and some rolls or biscuits. Should be fun. Dessert tonight is Ribbon Krispy Treats. It's basically a half of a batch of rice krisy treats spread into a jelly roll pan. Then you spread peanut butter on top of that, and hot fudge sauce on top of the peanut butter. Then spread the other half of the rice krispies on top and let it set up. It's setting up on the counter now, and the kids are going crazy! They want it now!!!! I'll let you all know if they turn out ok.
 
So, I made everything I posted earlier, plus two pizzas! It was all really good. HOWEVER, I started a FIRE in my kitchen!! :eek: It was getting towards crunch time, and I took the arancini, which I had in a warm oven on paper towels to drain, out of the oven and set it on the stovetop. Unfortunately, I neglected to notice that the paper towels dropped into the open flame of the burner that was cooking the red sauce! My brother thankfully was keeping me company and noticed. Of course I grabbed the pan without an oven mitt... HOT!! :headache: Meanwhile, the fire was getting bigger, and BIGGER... :scared1: We worked quickly together to get all the dirty pots out of the sink, and were able to get the flaming towels under the running water. No big deal, and the arancini were the best I've ever made. Having a deep fat fryer makes such a difference.
 
We are off for President's Day so we are going out somewhere. Don't know where yet.

We have two holidays in a row, tomorrow is Mardi Gras!!!!

Ugh, I am sick again! Heading to the doctor's in a few, so hopefully he'll drug me up enough so I can function. DH and the kids had pizza again yesterday. Lord, only knows what they'll eat tonight. DH isn't the world's greatest chef--his forte is pizza!
 
Pork roast for DH, some kind of chicken for me, macaroni gratin, roasted carrots, and broccoli.
 
Dinner tonight will be Coleslaw Chicken Wraps, corn for the kids, and cherry pie for dessert (in honor of President's day).
 
Tonight will be taco casserole.

I usually plan my meals around what Publix has on sale, but all I saw this week that I wanted was chicken breast. I'll have to hit the first page of this thread and find some recipes.

Liamsaunt- :eek: I have set the kitchen on fire so I know how that must have felt! Glad it all worked out okay, and hope that BIL loved his welcome home meal!

Glynis- You kill me! Your kids must think that you are the best! I have got to try the krispy ribbon things for my DGD. She loves peanut butter and chocolate.

Stephanie- I hope you are feeling better.

We are having leftovers tonite. I made too much food yesterday, and never even got to the quesadillas because DH and DSIL wanted wings so I made them too. My cousin brought some yummy brownie and chocolate and cream thing for dessert so the cheesecake was never touched. In my house chocolate trumps everything else offered!
