Tonight DH is having the rest of the pork roast (I did not make a big one like in the recipe I posted--I made a four bone roast instead), plus we are having risotto cakes made from the leftover risotto from the other night, roasted asparagus, and eggplant sticks.
 
Well, since DW and I are eating low carb, I am making the following along with a salad...

Just Like Loaded Baked Potatoes (Low Carb)
35 min 15 min prep
2 1/2 cups cooked cauliflower (I use frozen, cooked until tender, in the microwave)
1 cup sour cream (low fat works here, too)
3/4 cup shredded cheddar cheese (full-fat works best)
3 green onions, finely chopped
3-6 slices cooked crumpled bacon (or turkey bacon)
salt and pepper

1. Pre-heat oven to 350.
2. Chop cooked cauliflower into very small pieces.
3. Mix sour cream, 1/2 of the green onions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste in medium bowl.
4. Stir in the cauliflower.
5. Place in medium baking dish and sprinkle reamining cheese and bacon on top.
6. Bake for 20 minutes.
7. Sprinkle the remaining green onions on top just before serving.

Low Carb Chicken Parmesan
55 min 5 min prep
2 (4 ounce) boneless skinless chicken breasts
1/2 cup no-sugar-added spaghetti sauce (I use Hunt's No Added Sugar Italian Baking Sauce or Classico Spicy Red Pepper Spaghetti Sauce)
1/2 cup shredded mozzarella cheese
1 teaspoon grated parmesan cheese
garlic salt, to taste
italian seasoning, to taste

1. Preheat oven to 375 degrees.
2. Spray a shallow, small baking dish with non-stick cooking spray.
3. Season each side of breast with garlic salt and Italian seasoning to your liking; place in casserole dish.
4. Spoon pasta sauce equally over top of each breast.
5. Bake for about 45 minutes; sprinkle equally with cheeses and bake an additional 5 minutes or until cheese are melted.

Low Carb Lemon Dessert
2 cups heavy whipping cream
1 scoop crystal light lemonade mix
8 ounces softened cream cheese

1. Sweeten the cream with the lemonade mix, to taste; use no more than one little tub from the container.
2. Beat in softened cream cheese.
3. Chill for 30 minutes.

I low carb to and I was doing the faux loaded baked potato tonight too!!!! I'm thinking I need to hurry and go make dinner!!!

Here it is! It was really easy to make. The only odd ingredient is the green peppercorns--i found them at Williams Sonoma.

Loin of Pork with Green Peppercorns

1 pork loin, bone in, frenched and tied--about 5 lbs.
2 tbsp. olive oil
4 tsp. dijon mustard, divided
4 tsp. whole grain mustard, divided
1 tsp. ground fennel seed
salt and black pepper
3 tbsp. flour
1 cup white wine
3 cups chicken stock
1/4 cup green peppercorns in brine, drained

Oven 400 degrees. Allow the pork to stand at room temperature for 30 minutes before cooking.

Place the pork, fat side up, in a roasting pan. Combine the olive oil, 2 tsp. of each kind of mustard, the fennel, 2 tsp. salt, and 1/2 tsp. black pepper. Rub this on the pork and roast for 1-1 1/4 hours. Remove the roast from the oven and cover tightly with foil for 20 minutes.

Meanwhile, remove all but 1/4 cup of fat from the pan. If there's less fat than that, add enough butter to make 1/4 cup total. Over medium heat, whisk in the flour and cook for about a minute. Add the wine and simmer, scraping up the browned bits stuck to the pan. Add the chicken stock, the remaining mustards, the green peppercorns, 2 tsp. salt, and 1 tsp. black pepper. Bring to a boil, then reduce the heat and simmer until the sauce is reduced and slightly thickened, about 5-10 minutes.

Remove the stings from the pork roast, slice between the bones, and serve with the sauce.

The brined chicken I made tonight was a hit!

I had a couple boo boos though...I didn't re-read Liamsaunt's post on how to brine and I did it by memory...Well, I dumped a whole bunch of sugar and salt on the bird...no soaking. Then I read the post (after a night of salt and sugar) and it said only salt on chicken and no soaking. Then I rinsed the bird this AM and soaked it in salt water...:confused3

I then blasted it at 425 degrees for the time I was supposed to, let it rest and then proceeded to carve it...it wasn't done. I then threw it in the broiler for about 10 minutes.

It was the best chicken I ever made...thanks Liamsaunt!!!

PS: I hate using a electric stove/oven...give me a gas range any day!!! :) :) :)

I think I am going to make chicken quite often and save the wish bones for my Xmas tree...my Mom's friend did this and put a bow on eash bone, hung them on the tree and then guests got to make a wish.
 
Tonight we are having leftover roast, carrots, and smashed potatoes. I was really worried my roast was going to be tough when I checked it midday, but when I sliced it, it fell apart. MMMMMMMMMMMMMM!

I'm planning to make a copykat recipe for Outback's Alice Springs Chicken, with pasta and corn.
 
Home with my son today- he has strep throat. I'll be stripping the beds and washing everything in hot hot HOT water.... he's had strep 3 or 4 times since July so I want to be sure we're not just reinfecting ourselves. Dinner will have to be simple, just put some chicken vegetable soup mix in the crock pot- will add skinless boneless breasts to it later and serve it with biscuits tonight.

Thanks. He has ADHD and being sick doesn't slow him down like it does lots of kids. When I thought he had appendicitis the docs told me (for 2 days) he was too playful to have appendicitis and I told them that he was actually LETHARGIC and I was scared. Sure enough- it ruptured.
 
Tonight I'm making Chinese BBQ Pork Tenderloin, white rice, baby peas and pork wontons.

DS11 is getting his new bedroom furniture delivered today so I've been sitting around waiting for it all day. I can't believe how much junk that kid has acumulated. Hopefully he'll be more motivated to get rid of some of it instead of putting it back into his nice clean room. My livingroom is cluttered with his crap (for lack of a better word) so the deliverymen can set up the new stuff.

Don't forget to throw away his toothbrush and get a new one! That's a hard one to remember when you are doing a zillion other things! Also have you heard of this website: www.chartjungle.com ? It has a section (either health or medical) that has a medication chart. Helps to keep track of when meds are started, and the times. Comes in handy when you're giving a few meds. Anyway, hope your DS is feeling better soon!

Tonight we're having NY strip steak, green beans, and roasted potatoes.
 
Tonight I'm trying a new recipe: BLT soup. It sounds good, and if it tastes good, I'll post the recipe tomorrow! I've got some nice wheat dinner rolls to go on the side. Can't wait!
 
Shake n' Bake chicken & rice. I think I'm getting what DD had last week so I'm not putting much effort into dinner.

I had the BLT soup at the Sci-Fi Drive in and it was really good. I was actually surprised. I'll be anxious to hear how yours turns out!
