this afternoon is my Christmas party/lunch for work. It is at Maggiano's. I told my husband that he is on his own since I probably won't have dinner. Maggiano's is at the mall - so I am finishing our Christmas shopping afterwards. :cool1:
 
So much for DS not catching the "bug"! DH is on his way home with the Sprite and Lysol. Now to clean up after the sickos!

Tonight I am making fondue with some of the cheese I brought back from France (have to use it up!), and serving with baguette, broccoli, and small potatoes for dipping, and a green salad on the side.


Here you go:

Chicken Risotto

6 Tbs. butter
1 small onion, chopped
1 1/2 C. Arborio rice (no substitutions)
3-4 C. chicken broth (I use no sodium)
1/2 C. freshly grated Parmesan cheese
2 boneless, skinless chicken breasts, cooked and chopped

In a skillet, melt 4 Tbs. of butter and add onion and saute over medium heat until light golden. Add the rest of the butter and when melted add rice and stir until grains are coated and almost translucent. Heat up the broth, pour 1 cup into rice and stir over medium heat until almost completely absorbed. Add 1 more cup of broth and repeat process. Rice should be creamy. Add broth 1/2 cup at a time, stirring until absorbed each time. After 25-30 minutes, rice should be mostly cooked. Keep stirring and add chicken and cheese. Stir in and serve hot.

If you want to add asparagus (which is way yummy) do so towards the end so the spears don't get mushy!
 
Dinner tonight is up in the air at this point. DD sings with her choir at a local mall at 3:30 this afternoon, and then has her concert tonight at 6:00. I've got some chicken in the fridge, so I'll probably use that to make something quick!

Tomorrow morning our church is having a Christmas breakfast. I've been volunteered to make my Toffee Apple French Toast Bake, so I'll be putting that together tonight as well.

Nope, but I'd be happy to! This is our annual Christmas morning breakfast. I make this along with scrambled eggs, caramelized bacon, and fruit salad.

Toffee Apple French Toast

8 C. cubed French bread
2 medium tart apples, peeled and chopped
1 pkg. (8 oz.) cream cheese, softened
3/4 C. packed brown sugar
1/4 C. sugar
1 3/4 C. milk, divided
2 tsp. vanilla, divided
1/2 C. English toffee bits
5 eggs

Place half of the bread cubes in a greased 9 X 13 baking dish; top with apples. In a mixing bowl, beat the cream cheese, sugars, 1/4 C. milk and 1 tsp. vanilla until smooth; stir in toffee bits. Spread over apples. Top with remaining bread cubes. In another mixing bowl, beat the eggs and remaining milk and vanilla; pour over bread. Cover and refrigerate overnight. Remove from refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees for 30-45 minutes or until a knife inserted near the center comes out clean.
 
Today we are going to the Olive Garden and to a movie. No cooking for me tonight :)

Good morning! Tonight I'm fixing shrimp scampi over angel hair pasta with a spinach salad. :cool1:
 
I will make 'Thai' chicken. Please excuse if this recipe has already been given.
I have included the original quantity & a quantity for a full 6 qt crockpot~

‘Thai’ Chicken—crock pot
1. 8 chix thighs—skinless------------------------14 thighs
2. ¾ cup hot salsa------------------------------2 cups salsa
3. ¼ cup peanut butter--------------------------3/4 cups peanut butter
4. 2 tablespoons fresh lime juice------------------1/4 cup lime juice
5. 1 tablesp soy sauce (Kikkoman) or fish sauce---1/4 cup soy sauce
6. 1 teaspoon grated fresh ginger root-------------4 teaspoons ginger, fresh

Condiments & Garnishes

rough chopped peanuts—we use unsalted dry roast
chopped cilantro
In crock pot: mix #2 – #6
Add chicken thighs, mix well
Cook on Low: 8 – 9 hrs

cocoanut milk rice: for liquid to boil rice in: 1 can thick, fully fatted, cocoanut cream mixed with equal parts of skimmed milk. Can use regular rice for this
or substitute Jasmine rice with or w/o cocoanut milk.

I like to serve with fresh fruits & Thai iced tea. No iced tea tonite, though!

Well, both kids are on the mend, but of course, now I don't feel so hot. But, we're about to head out to view some Christmas light display at the local gardens and then see Santa. So, we'll probably pick up dinner somewhere on our way home--since we'll be with the kids, probably McD's!
 
Well, since it's the weekend, DH will probably do the cooking. Not sure, though. He just got a new laptop, and I can't drag him away from it! Maybe we'll do Mac and Cheese. I'm trying to talk him into a movie, but I don't think it's going to happen.
 
Today I am making the chicken provencal stoup (it's on page 1). It's such a hearty, rich, vegetable soup and I need some comfort food today (ahem, a little PMS). We will have garlic Parmesan breadsticks with it.

For dinner, I'll prepare a turkey with chestnuts and green beans... A little bit of Christmas before Christmas :teeth:
And this afternoon, I bake some ginger/cinnamon cookies.
 
Right now, I do not feel like cooking...I had too many brandy alexanders at the party I went to... :headache:

I will probably make the smothered steak that I didn't make on Friday...

Don't know here--all the fam, except DH, has a stomach bug. We're on the mend, but don't really don't feel like cooking. Imagine that? ;)

Hopefully we'll be celebrating a Saints victory this afternoon! :cheer2: We're going to have grilled baby back ribs, burgers, baked beans and liamsaunt's crispy potatoes. YUMMO!
