I think I'm going to try a new meatloaf recipe tonight. If it turns out great, I"ll post the recipe tonight!
 
Forgot to post this yesterday - we had tuna fish sandwiches, chips and blueberry muffins. Not too good, but it was late and that is all I could come up with. :blush:

Today - probably Chili's. :confused3

Last night I made Taco Casserole. YUM!

This morning I put a Boston Butt in the crockpot for dinner and this afternoon I made coleslaw. I'll heat up some corn later to go with it.

Today for Sunday linner we are having a seafood mixed grill: seared peppered tuna with devilled shallot butter, grilled swordfish marinated in olive oil, white wine, rosemary, and fennel, and bluefish marinated in lemon pulp, white wine, and grilled on a cedar plank. Sides are twice baked potatoes and roasted broccoli.
 
I made stuffed green peppers. Hubby was running late for work so he packed them for his dinner and picked up something for lunch on the way. DD had leftover calzone for lunch as she hates peppers. I ate way too much so will just make her something quick for dinner when she gets hungry.
 
Hi, everyone! Sorry I haven't been around much, lately. DH's laptop died, so he's kicked me off our big machine so he can work. Today is the first time since Thursday that I've been able to get on.

Dinner tonight is Oriental Pork Ribs. We'll have some rice to go along with it, and some steamed broccoli.

It's good to be back! I've missed y'all!

I wish I lived closer to you, I'd love to just come watch you in action in the kitchen, and then of course eat dinner with you every night!! :teeth: Glad you're feeling better!

Heck, I'd rather visit you! DH and I went to New Orleans once, when we drove from Boston to Houston to see his sister. We were so incredibly broke back then, and could not afford any of the cool restaurants, but we just walked around and looked at the amazing architecture, the cemetaries...I remember there was a shop in the french quarter that sold handmade marionettes, and I swore I'd come back and buy one when I could afford it.

Dinner was good tonight. Despite all the fish, my favorite was the twice-baked potatoes!

The meatloaf tonight was pretty good--here's the recipe

Son of Manic Meatloaf (apparently there's a Manic Meatloaf recipe somewhere out there that's "supposedly" much better :confused3 )
1 cup dried stuffing mix, any kind
1 lg. egg lightly beaten
1 cup buttermilk
1 1/2 lbs. ground beef
2 tsp garlic powder
1 tsp thyme
salt and pepper
1/2 cup ketchup
1 tsp honey
1 tbsp worcestershire sauce

In a small bowl, combine stuffing mix, egg and buttermilk. Let sit for 10 minutes. In a larger bowl, place remaining ingredients. Add stuffing mix and mix all ingredients well. Shap into a loaf shape in a 13X9 baking dish. Cook at 375 for an hour!
 
Whoo-hooty everyone! I changed my mind. Me and my big old chest cough are heading to Paris after all!! I leave Thursday to meet up with DH. :teeth: I can't believe we are doing this--we usually plan forever for our vacations, this time we are flying blind. I figure we'll see the Louvre, the Eiffiel Tower, and after that, well, I just frankly have no idea!

Food related: I am going to my parents for dinner tomorrow--DH will be en route to Paris, and I'll be having spaghetti with my Mom's sauce (yummy!)
 
Good morning all! It is 25 degrees here this morning!! :cold::cold::cold:

We are having leftovers tonight. That new Parm blend was AWESOME!!! I will definitely be buying it again for my Ritz Parm chicken.

ETA: I made us an AWESOME tea yesterday I saw on 30 Minute Meals (and the new cookbook). I will come back and post the recipe in a few minutes :)

1-inch piece ginger root, peeled
1 large strip lemon rind
6 cups water
1/3 cup honey, eyeball it
1 lemon, juiced
4 camomile or other tea bagsSlice the ginger into coins. Heat the ginger, lemon rind, water and honey to a boil in small pot. Add lemon juice to hot water and transfer to a tea pot. Add tea bags to pot and steep. Remove bags and serve tea.

:cheer2: I am so glad! Have a great trip, Paris with a cold is so much better than no Paris at all.
 
We are having leftover chowder. My dh is still sick (missed my whole birthday celebration :sad2: ) so he probably still won't be eating.

Tonight will either be Curry Chicken salad or Big Burly Man Chicken BBQ burgers (a rachael Ray recipe)

It's Monday, but instead of red beans, I'm doing white beans and rice with green onion sausage.
 
Tonite we are having spaghetti and meat sauce along with a salad and garlic bread.
