Southwest-style pizza, inspired from our meal at the Kitchen at HRH in Universal.

Leftover grilled fajita chicken, sliced. I make a ton of this chicken and freeze portions for fajitas, tacos, salads or, in this case, pizza.

We bought a Boboli pizza crust, and I'll make a fresh ranch dressing this afternoon. Instead of tomato sauce, I'll use the dressing and top with Monteray Jack and chedder cheeses. Toppings will be that sliced fajita chicken, jalepeno peppers, leftover corn that we grilled yesterday, roasted garlic and I'm thinking I'll sautee up and carmelize some vidalia onions for some topping, too.

I suppose I could throw some rinsed black beans on there, too?
 
DH is out getting a bottle of Rosa Regale, we've never had it. Can't wait to try it!

Lauren- Don't know what happened with the muffins as they are super easy to make, but you do have to be careful that you don't put to much jelly.

I am just not a great baker...like you mentioned, I probably used too much jelly...from what I was able to pick at...they tasted good!

DS and DDIL did my shopping last week, used my list and kept my bill at $104! Well I wanted to see if I could manage with what I had on hand without heading back to the store for all of the things I usually toss in my basket. Now we have had between 7 and 8 people all week for dinner so I was not sure but.............WOOHOO! I did it!

That is wonderful! I have used the shop at home service a few times where you order on line and they pack it in your car when you arrive. I find that I pay the $10 service fee but tend to buy more things on sale and with coupons so I save $...and like you said, I do not throw crap into the basket...seems to work too for the week. Hmmm...maybe another shop at home is in order!!! :)

We tried the Rosa Regale for the first time last night(with chocolate) - I'm in love!:love:

We are down to 2 bottles...I knew I should have bought more while they were on sale...:)

I am going to grill the London Broil that I never made the other day....not sure of sides. Have a great day all!

Wendie- Feel better! Migraines are no fun!!! Take care of yourself and order a pizza for dinner. That's my prescription for migraine relief...no cooking!

Dinner tonight is a cheesy topped beef bake. It's yummy, cheesy, and super easy! I'll have to go back to the first page and see if I've posted it. If not, I'll do it today!

Sides will be green beans and maybe a salad. No starch since there's whole wheat pasta in the dish! Yummo!!!

Dessert will be the leftover cookies my daughter made for mother's day yesterday. The recipe was for chocolate chip, but instead, she used chocolate chunks and peanut butter chips. Very yummy!!!
 
I think I'm seeing a trend from the weekend. We too had Rosa Regale this weekend!!:lmao: The last bottle in the house, so there's a shopping trip in my future! Dinner over the weekend was ho-hum...It was just nice to have DH home....But that's over, he left for the airport at 5 am. I did make breakfast burritos yeaterday that turned out deee-lish!

Not sure what's for dinner. It's just me again all week and tomato soup sounds good, just not in this heat!

My 4 legged son got me the new Alison Krauss cd for mother's day and it's wonderful!

Long vent coming:

I finally found a bottle of Rosa Regale and made a special trip to pick it up Saturday night. I was really glad because it was part of my mom's Mother's Day gift. I also gave her a box of her favorite dark chocolates to go with it. She wanted to open it and have it with dessert (assorted cheesecakes), which I was very happy about because I couldn't wait to try it. Well, my dear brother opened up the fridge, the bottle rolled out and shattered all over the kitchen floor. :eek: :sad1: :sad2: OK, accidents happen, but what really bothered me was he didn't even offer to clean it up. My mom just had an MRI done last week and found out she has 5 herniated discs and he's letting her mop the floor. :mad: I left the kitchen after the bottle broke because I was a little angry and didn't want to say anything mean to DB. So when I come back in Mom's finishing mopping the floor and DB is standing there watching her. WTH!? He did offer to replace the bottle the next time we get together, which probably won't be for a couple months and knowing him he'll probably forget about it. GRRRRRRRRRRRRRRRRRRRR!!!

WFD? I'm going to try to do a version of liamsaunt's pasta primavera, but I'm going to add shrimp to it.
 
Hi Y'all,

Mother's Day was very nice. We went out to a good rest. in the French Quarter. It was very good. Then we went hang out at DD's house for the rest of the afternoon.

I'm not feeling very up today, Alexis arrived at 5 a.m. & was not in a sleeping mood!:sad2: Not until it was time to go to school that is, then she cried for about 10 minutes then zonked out! So she stayed home & I went back to bed, that only lasted an hour & then she was up again, all perky & hungry! Lots of coffee for me this morning!

My brother gave me some boiled crawfish so if I get them peeled, I'll turn that into to dinner, right now I have no idea what, maybe just an easy pasta.

And I'd be calling to "remind" him before the next get together...maybe even suggest where to find it so there's no excuse. And since we all know the chocolates won't last a couple of months he can add a couple nice bars to make up to Mom for making her clean!

No problem! It's a sparkling, sweet dessert wine from italy. Made from the essence of rose petals- I think that's how they have it on the label. Goes really well with dark chocolate. Or dessert.
 
I made shrimp scampi with angel hair pasta, green salad last night. I put butter, tomatos and gorganzola on french bread as well but DH didn't care for it. Scampi was wonderful. If SIL is coming for dinner it will be ribs. Wish he'd hurry up and call. I'm out of propane so I'll do them in the oven. I cook them very slowly for hours and they come out very tender. It's the good baby back ribs (albertsons had a sale).

I don't know what was up with DB yesterday, he's usually not a bad guy. He picked the wrong day to act like that. He does have a temper though and when anything goes wrong he gets angry, but that's no excuse for making Mom mop up his mess. I will be reminding him about replacing the wine, before our next get together. He's a typical man though and won't go out of his way to do more than that.

I think I need to make room in the freezer, but not for DH this time.;)
 
Kathy, Didn't you fix the Crawfish Monica? Did you add anything to the recipe. It sure sounds plain, like it should have cheese or something else in it.:confused3

Are you using the linked recipe site I posted? I didn't add a thing - I did use 2 Tbsp of Tony's. It came out great - you could definitely add parmesan to it!
