:hug:Sorry your're upset. I agree with Nancy, I was a bridesmaid in my brother's wedding 2 weeks ago. I was happy and honored when SIL asked me, but to be totally honest I would have rather been just a guest and not in the wedding party. It was a big headache. The dress was an odd color and it didn't look good on me. I'm about 15 lbs overweight and the other 2 girls are super thin and model-like. SIL hired a makeup artist to do all our makeup and he made us all look like clowns. I was very uncomfortable the whole time. I would have enjoyed the wedding so much more not being in it.
 
I'm just going to grab a rotisserie chicken at the grocery store today.....on sale for $3 off.....$3.99. Grab some cole slaw and make some potato pancakes from leftover mashed potatoes. Now just need to add in a veggie and I am all set. Quick and easy. Worse thing will be cleaning up from frying the pancakes. Maybe I can convince hubby to do it outside on the side plate we have on our gas grill. Then I will be all set.
 
I'm going to make spicy food to try and blast out my cold. I am leaning towards a spicy egg curry and some naan. My thumb finally seems to have healed enough to be able to chop with it. I am going to have an ooky scar though.

Kathy and Sheryl- I forgot to congratulate LSU for last nights win over my beloved Huskies. I could not stay awake for the entire game, but they sure started out with a bang! There is always next year.
 
Hi everyone....I haven't posted in over a week, just being lazy and not doing much cooking. It's starting to warm up over here so we've been eating a lot of sandwiches and salads. I finally cooked on Sunday afternoon and made a big pot of the cabbage roll soup and DH LOVED it! I like to make big pots of soups and stews and then freeze individual servings so when I don't feel like cooking, DH still has a homecooked meal for lunch.

Tonight will be something simple again.....lemon herbed chicken and wild rice, probably with broccoli on the side. That is always DH's contribution. Broccoli just tastes better when he cooks it. :confused3

liamsaunt - glad to hear your thumb is healing up. You never realize how much you use your thumb until something happens to it.

MinnieM21 - congrats again on your graduation. I'm still dreaming about that pink champagne cake you mentioned.

LuluLovesDisney - I know how you feel about the whole bridesmaid's thing. My best friend in the office (who also sits right next to me) is getting married next month and has been talking about her bridal party. One of the other girls even asked her if she was going to ask me and she didn't really say anything. I think it is an age thing (she's only 27 and I'm 41) so I'm really, really trying not to get my feelings hurt too bad about it. The way I'm looking at it is that she and the bridal party are all going to get aggravated with each other at some point and I'm going to get to avoid all that drama. Big hugs to you though because it is hard not to be hurt. :grouphug:

What is naan?:confused3

It's a north indian leavened bread. Traditionally, the dough would be cooked on the sides of a tandoor oven, which is a big clay kiln-like thing with a fire in the bottom of it. I don't have a tandoor (obviously!) so will make it on a pizza stone. It comes out a little crackly on the bottom, yet soft. The bread is kind of pear shaped and you brush it with melted butter when it comes out of the oven. It's yummy.

Normally I would not have time to make bread, but I am home on a sick day today because I have a chest cold and my coughing was driving everybody crazy yesterday!

Sandy, I'd be bragging too. DH and I normally open DS's report card the way you open the power bill in the middle of the summer - with one eye closed and praying for the best.

Tonight we are having the leftovers from the pork roast. I think I will make some scalloped potatoes and some sort of vegetable to go with it.

Tonights dinner is going to be rotisserie chicken, yep it was $3.00 off at Winn Dixie couldn't pass it up! Thanks Mom21! Maybe just baked potato & some turnip greens! eeewwww! I have never fixed these or mustard greens before, I really never liked them. I tasted some of his the last time we stopped a Cracker Barrel & they weren't half bad. DH always has always liked it, but I was just too mean to cook them! So I'll give it a try.

I didn't do the Phyllo-wrapped Asparagus last night, I had mistakenly bought puff pastry instead of the Phyllo. So we had Minnie's roasted asparagus, thanks Minnie!

If I would have known all I had to do to get work done around here was offer wine & chocolate, I could have had this work finished a long time ago!

My niece played for CCSu as will her sister in September, so I need to remember to yell "GO Wildcats" if I don;t want two angry athletes after me!

Thanks Kathy, honey really?! :thumbsup2 okay I'll do that! I was hoping someone would offer up some tips! I was just going to wing it as usual! I bought the frozen ones, someone told me it was less bitter than fresh.

Minnie, the roasted asparagus was delicious! I rolled them around in the olive oil & I added a bit of minced garlic with that. Seasoned liberally & they came out really yummy!

Naan

4 cups all purpose flour
1 1/4 cups milk
1 package dry yeast
2 tsp. nigella seeds (optional--I use them becuase I think I own every spice known to man--I'm a Penzey's freak)
1/2 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
2 tbsp. oil or ghee (clarified butter)
3/4 cup plain yogurt
melted butter or ghee for brushing

sift the flour into a large bowl and make a well in the center. Warm the milk until it is the temperature of your hand. Mix a little of the milk with the yeast and set aside to let it get frothy.

add the yeast, nigella seeds, baking powder and salt to the flour. In another bowl, mix together the egg, ghee, and yogurt. Pour this mix into the flour, along with 1 cup milk. Mix to form a soft dough. If the dough seems dry add the rest of the milk. Turn onto a floured surface and gently knead for five minutes, until smooth and elastic. Put dough in a lightly oiled bowl, cover, and leave to rise until doubled in size.

preheat the oven to 400 (if you are using a pizza stone, put it in to heat now--put it on the top rack of the oven). place a roasting pan half-filled with water at the bottom of the oven (make sure the pan has water in it through the cooking process).

punch down the dough, kneading briefly, and then divide into 10 portions. using the tips of your fingers, spread the dough out to a teardrop shape. using a floured peel, transfer the naan to the oven, 1-2 pieces at a time. If you don't have a pizza stone, cook the naan on a greased baking sheet placed on the top rack of the oven. Bake for seven minutes, then flip the naan and bake for 5 more minutes. Remove the naan fro the oven, brush with butter or ghee, and cover with a cloth to keep warm, Repeat with remaning dough. makes 10.

An egg curry is just hard-cooked eggs in a spicy sauce. There are lots of different recipes. Here is the one I am using:

Egg Curry

4 eggs
1 large ripe tomato
1 tbsp. ghee
1 small onion, finely chopped
1 garlic clove, finely chopped
6 ounces coconut milk
1/2 tsp. ground tumeric
1 tsp. cayenne pepper
salt to taste
cilantro for garnish (optional)

Put the eggs in a saucepan of water and bring to a boil. Boil six minutes, then cool quickly in a bowl of cold water and peel.

Score a cross in the tomato and submerge in boiling water for 30 seconds, then drain and peel the skin off. Seed and core the tomato and coarsely chop the flesh.

Melt the ghee in a heavy bottomed frying pan over low heat and then add the onion and garlic. Cook until soft. Add the tomato, cook until soft. Gradually stir in the coconut milk, then add the tumeric and cayenne. Season with salt to taste, bring to a boil and simmer for a few minutes, until the sauce thickens slightly. Add the eggs and reheat gently for about 3 minutes. Garnish with cilantro and serve with naan. Serves 2.
