For 30 people, I would stir fry some rice...you can do this beforehand and heat in the microwave when you're ready to eat.
Make a Soya/Oyster sauce Chicken and Potato casserole
Maybe make a red vegetable curry....cook beforehand and heat in the pot before you dish it out.
Stir-fry some vegies whilst the curry is heating up on the stove and the rice is being re-heated in the micro...
And have some thinly sliced cucumber, marinated in vinegar, a little sugar, salt, pepper and ginger to go along with it all.
If you still need some more protein, get some sliced roast pork from your local chinese BBQ place. It can be served hot or cold (on a bed of lettuce or cucumber).
