No laughing from you foodies, please (Tinkermell), but I was just watching an Italian cooking show on PBS. The host is an Italian-American woman, and the first part I saw was soooo simple, even I could make it!
She boiled a pot of spaghetti, then pulled some out and put it in a big wide/shallow bowl. She scooped a bit of the pasta water out of the pot and dropped it onto the pasta in the bowl, then sprinkled the pasta with a handful of finely grated romano cheese. Then she mixed it up to coat the pasta a bit with the melting cheese, adding more handfuls of cheese and a bit more pasta water until the cheese was gooey and sticking well to the pasta. THEN she sprinkled the pasta with freshly ground pepper, making sure to toss it in a bit at a time, then stirring up the pasta, so you didn't have all the pepper in one spot.
It looked really yummy, and so easy! I have no idea what it's called though, do you know? Probably something obvious, like pasta romano.
