I'm seeing 2 months 3 weeks and 5 days until my trip...and thats Dec 6! Don't worry, we still have over 3 months til Christmas....I think. :hourglass
 
3 months?? :eek: Let's see, if I buy 6 times...carry the 2... add... geez, I'm already so far behind. Any chance of pushing Christmas back this year into, say, Feb? (when exactly do these cruises have to be paid off?)

You're better at math than I am! I'm hoping we have until like May, right? (But we're booked on the 4 n with our DVC points...it's the 3 n we have a balance on...hoping tax refund will cover it!) Still need to figure out the darn vac. insurance thing sometime too since we split it up between points & cash....Hummm...Christmas? What Christmas? That's the one envelope I don't have:scared1: ...hummmm....got one for the 2012 cruise fund....got one for spending $ for 2008 vacation....got one for more DVC points (that's a NEW one so it's pretty empty).....hummmmm.....what's wrong with this picture?! :idea: LOL....all of my envelopes are Disney related!!:lmao: (And Yes, I stash $ in envelopes that are labeled for diff. purposes....used to "hide" money in the checking account too....don't laugh - got the downpayment for our house that way!):rolleyes1 Guess I just confirmed my insanity, right?! Non-related mental note - have to order a new passport for DS sometime before next year.... Only on my first Capt. of the evening....Sometimes I think I could've married him!:rotfl:

We ordered Papa John's tonite....they got a Redskins deal on Mondays....$8.99 lg. if the Skins win...and a free topping for every touchdown....doubled if they win - guess what we hope to eat every Monday between now & January?!

2 pounds small potatoes, halved
Salt
2 tablespoons extra-virgin olive oil (EVOO)
1 1/2 pounds chicken breasts or tenders, cut into large chunks
Pepper
2 shallots, thinly sliced
1/4 cup apple cider vinegar
1 cup chicken broth
1/4 cup apricot preserves, big fruit pieces chopped
3 tablespoons honey
2 teaspoons poppy seeds
3 tablespoons butter
3 tablespoons chopped or snipped fresh dill







1. In a medium pot, add the potatoes and enough cold water to cover by 1 inch. Cover the pot and bring to a boil. Salt the water, lower the heat and simmer the potatoes, uncovered, until fork-tender, 12 to 15 minutes.
2. While the potatoes are working, in a large skillet, heat the EVOO, 2 turns of the pan, over medium-high heat. Season the chicken with salt and pepper and cook in the skillet, turning once, until browned, 2 minutes total. Add the shallots and cook for 3 minutes. Add the vinegar and cook until slightly reduced, 1 minute. Add the chicken broth, apricot preserves, honey and poppy seeds and simmer over medium-low heat, stirring. Stir in 1 tablespoon butter.
3. Drain the potatoes, return to their pot and add the remaining 2 tablespoons butter, the dill and salt and pepper to taste. Serve with the chicken.

Sounds yummy RJ!! I like stuff with vinegar & dill (like pickled eggs:) ) but the apricots and poppy seeds sound like an interesting twist! I'd be more likely to make something like this for "sunday dinner" than monday dinner tho! (I am one of those clumsy people in the kitchen who when a recipe says prep time 20 min. you can at least DOUBLE that)! DS really wanted my scrambled egg sandwiches tonite (those are his most favorite dinner ever)...but I talked him into the Papa Johns. I think will have to have them one nite this week tho...he was almost begging!:rotfl2: Goofy kid!!
 
Well it seems that none of us really have a chance to overtake L.Willis. Some of us had a great week 1 though. Lots of fun. I am actually cheering for SF to lose now so that I can gain some points on some people. LOL!:lmao:

The 2 people in question are my genius in-laws, who didn't know there was a game last thursday night. :hippie: They begged and pleaded to still be in the pool,and the rule is that they have to give up their 16 point pick for the week. Besides, I needed 2 more peeps to have enough to do the pool anyway!
