My cousin sent me this recipe and it reminded me of you all. I haven't tried it yet, but it sounds delicious, and my cousin is a great cook!
Blueberry Surprise French-Toast Casserole
12 Slices dry white bread, cut into 1/2 cubes
2 packages (8 ounce) cream cheese, cut into 3/4 cubes
1 cup fresh or frozen blueberries
12 eggs
2 cups milk
½ cup pure maple syrup
Heat oven to 375 degrees. Place half of the bread cubes over the bottom of a well-buttered, 13x9x2 inch baking dish. Sprinkle cream cheese and blueberries over bread cubes; top with remaining bread cubes.
Beat the eggs with a rotary beater or whisk in a large bowl; beat in the milk and syrup. Carefully pour egg mixture over bread mixture. Cover with foil; chill in the refrigerator 2 to 24 hours/
Bake, covered, 25 minutes. Uncover; bake until a knife inserted near the center comes out clean and topping is golden brown, 25 minutes. Let stand 10 minutes. Serve warm with additional syrup.
NOTE: To dry bread, arrange slices in a single layer on a wire rack, cover loosely and let stand overnight. Or cut bread into ½ cubes, spread in a large baking pan and bake, uncovered, in a 300-degree oven 10-15 minutes, or until dry, stirring twice; cool.
