Do you have a recipe for the chicken?

I found a recipe on All Recipes for a Honey Orange Basil Chicken and decided to make it with lemon instead. I ended up just putting in a little of this and that to make it so once I make sure it turned out okay I will.:thumbsup2
 
Well, I made the Rice Pot last night Italian style. It was sooooooooooooooooooooooooooooooooo good! If you guys want me to post a recipe I will. Here is a pic:

I have not even thought about dinner. Kady was sick all night, DD was up with her until I took her in with me about 5 AM. DD needed to get a little sleep before work. She has a tummy bug and the poor thing cannot keep anything down. I'll look in the freezer later.

Poor Kady! There must be something going around. Leslie started running a fever yesterday afternoon, and it's still off and on. Her mouth has erupted in canker sores, and she has a sore throat. Poor little thing! She is sucking on popsicles, and frozen yogurt.

Poor baby :hug: Buddy said that there is something just so wrong about kids getting sick int eh summertime. I agree, sick and summer should not be in the same sentence.

Right now Kady is sound asleep and is using her Mom, who is also asleep, as a body pillow.

They played this morning and lost 3-0, so they're in the loser's bracket.:sad1: Nan, I'm really confused about it myself for this tournament. I assumed it would be double elimination as most are but Johnny said no. All I do know is that they're playing again right now.:(

All Kyle wanted to talk about when he called me earlier was the amusement park they went to last night called King's Island. He can't wait to go back, win or lose....:lmao:

Hey All!

Another quick check in...not sure how much time I will have tomorrow so popping in now.

Tom took off tomorrow so we are going to see his Mom. She just had eye surgery last week so I am bringing some food: shrimp cocktail, sausage, peppers and onions (subs), chicken legs, thighs and wings in my famous marinade, tossed salad and some jello and whipped cream for dessert.

Tomorrow night my sister is having a grad party for my cutie nephew and a welcome home for his sister that just came home from Australia.

We'll be driving all over NJ tomorrow...I hope my back holds up OK.

Sheryl, Hope you make out OK at the Neuro...

Nan, I hope Kady is better.

Glynis, I hope Leslie is feeling better.

For those of you interested, if you google quinoa recipes, you'll come up with a ton of sites! I can't wait to try some out. I found a recipe for turkey quinoa meatloaf that looks really good!

You know being asked about it made me look up recipes on All Recipes so I may make something with mine tonight instead of the regular plain way.
 
OK, now I think I know what's going on. The Knights lost again this afternoon, but they are in "pool play" for seeding purposes only. Tournament play actually begins on Friday evening. That explains why the coach limited Kyle's pitches the other day, he'll need to pitch by the weekend.

Kyle was pretty down when we spoke, he just found out that his BEST friend decided very abruptly to go out of state for college. This boy has a pretty rough home situation and I'm sure he just wants to "get away", he pretty much raises his younger brother and that's just not the way he wants to spend the rest of his life. I feel sorry for the little brother, hopefully the Dad will step up, the Mom is useless.:sad2:

I'm glad that he is enjoying this trip. What a wonderful this summer is turning out to be for him.

You make sure you take time to rest, please. I have never thrown my back out but DD has and it is not fun. All the driving may take a toll so be careful.

Dinner has changed again. Mostly becasue neither Marisa nor I want to go out for rolls and have decided to eat out of the refrigerator. I feel lazy so I am running with it today and she feels the same. Buddy does not care as long as he eats ;)

Not yet. I'm hiding my head in shame! I'm actually waiting for my notebook with my "cliff's notes" to be mailed to me. Dad keeps forgetting. My sister is going down this weekend, so hopefully, she'll remember. I've been trying to piece together what happened next from my pictures, but I'm too old! I promise it will get done!

Kathy I feel so bad for Kyle. Tell him to keep his chin up as long as he goes into each game with his 100% that is what counts in my book. I know he is trying 200%. Everyone has off days look at my poor cubbies that have had off century :lmao:

Dinner tonight ended up being pretty good. I made a Pilaf with the Quinoa, cream cheese patti pan squash and the chicken.


Quinoa Pilaf

1 T olive oil
1 C diced mushrooms
2 Green onions sliced
1 C frozen spinach
1/2 C Quinoa
1 C broth (I used chicken but you can use vegetable)

Saute the mushrooms, onions and spinach in the oil until the mushrooms are starting to soften and the spinach is thawed. Add the Quinoa and broth and bring to a boil. Boil for about 5 minutes then reduced the heat and simmer with the lid on for 15 minutes. Add salt and pepper to taste.



Cream Cheese Squash (this is enough for one person)

1 C diced squash
1 t olive oil
2 T cream cheese (I used low fat)
Salt and pepper

Saute the squash in the oil until softened. Add the cream cheese and stir until melted. Salt and pepper to taste.

Next time I think I will try this with onions in it.
 
Honey Basil Lemon Chicken

2 tablespoons lemon juice
2 tablespoons oil
1 tablespoon honey
1/4 C fresh basil chopped
1/4 teaspoon grated lemon zest
1/4 teaspoon salt
1/8 teaspoon pepper
4 skinless, boneless chicken breast halves

In a large resealable plastic bag, mix the lemon juice, oil, honey, basil, lemon zest, salt, and pepper. Place chicken in the bag, seal, and marinate in the refrigerator overnight.

Preheat the grill for medium heat.

Place the chicken on the grill, and discard marinade. Cook chicken 15 minutes, turning once, or until juices run clear.

Kyle will make so many new friends in college, and it sounds like it might be in his best friend's interest to explore his own life a bit.

I am happy after those stomach bugs when I can get my kids to the cracker stage. I am glad Kady is feeling better.

My grill ran out of gas right before I was ready to cook. I guess that is a little better than getting the food on and then having the gas die. However, it did mean that I had to cook the flank steak inside and set off a couple smoke detectors.
