Hey all! Remember me! Thanks to Kathy for PMing me and pulling me back out of the woodwork. We have been really busy the past month or so. I had a long weekend in WDW with some girlfriends from around the country (most of which I met on the DIS) and then three days after getting back from WDW, we left on a long beach vacation with the family. We just got back on Sunday afternoon. All of this while trying to work 3 part time jobs! Yikes!

But now it looks like one of my jobs is going bye-bye and I'm gonna have to start cooking at home again to save some $$$ for our next trip which is coming up very soon (the end of August!)

Now, to get back on topic, WFD tonight will probably be grilled burgers and dogs with some sweet corn and french fries

...cheese ravioli with meat sauce last night for dinner (w/garlic bread)...DH had gluten-free pasta with gluten-free rolls.....

I think I found dinner for tonight! I am going to make a roasted eggplant and zucchini parmesan. :thumbsup2 As usual didn't take anything out of the freezer and was trying to think of something that I could use the marinara I got at Trader Joe's last night.

With the big ones you had to be carefull peeling them and eating them. When biting into them the whole thing would pop off of some of them.

My husband wants me to try putting a York Peppermint Patty in the bottom of the liner and top it with vanilla icing w/ a drop of peppermint extract. Mmmm, huh? :)
 
DM is home with us for an unknown period of time. She slipped discs a few weeks ago and now have major nerve involvement as well. I am so worried about her!
She had xrays this morning & now has to have another MRI:guilty:

I was dx with Celiac a few years ago, it ended up actually being Crohns, but I tried to live gluten free for a few months and man, it's hard!

Well, there is a slight abnormality on the portion of the AFP that tests for Down's syndrome. My nurse tried to make an appointment with the high risk ultrasound doctor to get a clearer picture of things, but the earliest they can work me in is July 25. The nurse mentioned that I was nervous about the results and was hopeful of getting in sooner, but the high risk doctor looked at the test results and told the nurse that there was really nothing to indicate any urgency in my case. That sounds good to me, right?

So, I'll go to my regular OB on the 22nd and have an ultrasound there to determine the gender, and then the high risk on the 25th. The nice thing is that because of the test results, our insurance will pay for both ultrasounds, instead of just one. So, that's good.

I'm going to try to just put the whole thing out of my mind for now. There's nothing I can do about it anyway, so I'm just going to try to relax on our camping trip.

Dinner tonight (I finally decided) will be spicy turkey soup. I'll make some biscuits for dunking, too.

Easier said than done, but if the high risk thought it was really something I think they would have gotten you in quickly. I hope you can relax a little on your trip...

Ok, I have a stupid question. This southern girl has certainly heard of sauerkraut, but I've never eaten it. How do you make it? What does it taste like?

I like it on Reuben sandwiches. But that's all I really like it on...



I'm uploading pics to my blog for the parents so I thought I'd pop in. Camp is going well, I just am not sleeping and barely getting anything to eat so far. I've had to eat on the run the last 3 meals so I'm eating lots of processed cheese product in the cabin :laughing: I may make a Walmart run this afternoon and drive through someplace. Too bad I can't do a drive through nap, I am wiped and it's only the 2nd day!

Gotta run - they are getting out of the pool and we need to get them dressed in a hurry for morning celebration!

Oh yeah! I was thinking of trying some of the caramel Reese's and adding caramel ice cream topping to the icing.

Afternoon Y'all,

Alexis & I are getting ready to go run a few errands. It's been a lazy morning.

I forgot to take pics last night, I fixed the salmon with a maple pecan sauce. I was cooking it on the grill when the propane ran out and of course our extra bottle was empty too. We can get them filled right down the road & they are usually open until 7. It was 6:45, so I stuck the tank in Bob's van & he went to get it filled. Yep, they had closed early. I had let the salmon sit on the grill waiting for the tank, well when I went to take it off to put it in the oven, I realized the heat of the grill had cooked it all the way.

Oh, Copper River Salmon waay better than the Silver Bright. Of course since DH was with me & wanted cheap, I now still have 3 large packs of the Silver in the freezer.

Afternoon Y'all,

Alexis & I are getting ready to go run a few errands. It's been a lazy morning.

I love those mornings. Mine was busy, I have no idea how the Flylady can do her house in an hour, my lick and polish takes me all morning! Then I took Kady to reading camp, back for a quick bite and out for swimming lessons. She met two nice girls at the lake so they swam until camp lessons and now she wants to head back tonight with my DH. I can't go, I think I have to go to the hospital for my turn with my aunt. I stopped in to see her yesterday and found out she had just been taken to the hospital. My sister Pat is a charge nurse there and thought that she was too vague and not herself. So far the Dr's cannot find anything wrong with her and may not keep her another day. I am waiting to hear from my cousin.

I have chili simmering on the stove. I am going to take some out for DH and then add chick peas to the rest. The girls love them so I am trying them for a change.

Glynis I briefly saw something regarding your AFP test. I had one with Alex the test came back bad and had the amnio that showed he was "normal" try to relax. Those test have false positives all the time.

Just a quick tip if you all ever have the opportunity to stay at the Wilderness villas DO IT. I always loved the lodge but the villas are wonderful.

I have to change loads I'll read back and see what I missed.

Sure. Here you go!

Buttermilk Biscuits

2 C. flour
1 Tbsp baking powder
3/4 tsp salt
1/2 tsp baking soda
5 Tbsp chilled solid shortening
1 C. buttermilk

Preheat the oven to 425 degrees. In a large bowl, sift together flour, baking powder, salt, and baking soda. Using a pastry blender or 2 knives, cut the shortening into the flour mixture until coarse crumbs form. Add the buttermilk, tossing with a fork until a dough forms. Turn dough out onto a lightly floured surface. Gather into a disk. Knead lightly a few times just until smooth. Pat the dough to 3/4-inch thick. Using a biscuit cutter or a glass dipped in flour, cut out biscuits. Place the biscuits, 2 inches apart, on an ungreased baking sheet. Gather dough trimming, pat to 3/4-inch thick, and cut out more biscuits. Bake the biscuits until golden, 12 to 15 minutes. Serve hot.

Sounds amazing. Would you use a chocolate cupcake batter? That is the combo that I am craving these days: chocolate and mint! I'm living on Three Musketeers Mint!

Janice - Welcome home! I posted a few days of my London trip, if you want to look back for them!

Nancy - Your day sounded like mine. I put Flylady on hold this summer. Too hard! I'll pick her back up when the kids are in school! Right now, I'm just trying to hold things at bay!

Kathy - Happy Birthday tomorrow! It's my daughter's birthday as well! So, it will be easy for me to remember your birthday!

Dinner tonight will be easy: DiGiorno Garlic bread pizza!! They were on sale, so we are going easy, since I have to get things ready to leave for camp tomorrow.

So, we all slept in this morning, and it felt really good! Of course, it threw our morning schedule out of whack, which threw our afternoon schedule out of whack! So, I threw the afternoon schedule out the window! The kids did work in their rooms, got their summer reading done, did math homework, and then worked outside (weeding, picking raspberries and currants, and cleaning out the car). Once that was done, it was close to noon. We ran out to the store for some things we needed for camp, and stopped for snow cones on the way home. Just the sugar boost we needed! We came home, and now I'm finishing the laundry for camping, packing the clothes we'll need, packing the food boxes and doing some pre-cooking. We're having taco salads on Thursday night, so I'm pre-cooking the hamburger. Saves time, and is easy on my mind, since I won't have raw hamburger sitting in a cooler for a few days. Ick!

By the way, at 9:30 this morning, the nurse from my doctor's office called me. She said, "I've been thinking about you all night long, and came in early to look over your test results again. I found Dr. Smith here, looking at them, too, and she said you are not to worry. The rise in numbers is so slight, that simply being over 40 could put those numbers over the top. I didn't want you to go camping and stress over this. I honestly don't think there's much to worry about at all." What a great lady she is! I love my doctor and her nurses! They really care about their patients. It's great! So, I will patiently (or not so patiently) wait for the ultrasound and just keep a prayer in my heart. Thanks, you guys, for all your positive comments, and prayers. It means so much to me to have you as my sounding board. You all feel like my family!

Thank you for all your prayers & good wishes about my Mom!

She is actually at her MRI right now, she wouldn't let me go with her so I'm just sitting here like a nervous wreck. She is having the MRI at the hospital where she is a nurse so I wonder if it could be a pride issue or embarrassment thing. All I know is the thought of her sitting in a car that long concerns me, the longest she has sat has been for about 5 minutes at a time at that is on our kitchen stools.
I will keep everyone posted....

WFD? It was grilled chicken breast that I marinaded while at work and grilled peppers, red onion & asparagus.

GLYNIS, I'm so happy you have that support from you doctor & her nurses! Know you are in good hands, everyone will keep praying & have a great time!
