I have to take Jack to the doctor today- he's been coughing since last week (asthma cough) and I upped his Pulmicort, but it doesn't seem to have helped. Megan is home because she is on an antibiotic for a skin infection and it has helped with that- but made her ill in other ways (kwim?) Hopefully they can get along well enough today for me to put in my 4 hours at work.

I hope they both get better soon.:hug:

Tonight DS is being honored at an awards banquet so it will be dinner out at his restaurant of choice.

My Pooh Bear is off this week. No reason, just for the heck of it. Today we are eating at Jason's Deli, getting some Mother's Day shopping done, and just relaxing with each other :)

Does anyone have a good dip to make for a fruit tray? We are headed back down to Waco for a baseball tournament at the end of May, and one of the things I'm to bring is a fruit tray. I wanted some kind of dip (but not poppyseed). Any suggestions?

And along that line, we'll be cooking out -- ribs, burgers, hot dogs etc. and it will be after a day of playing baseball. The group mentioned potato salad, but I'm too scared that even packing it in an icechest might not keep it cold enough. Can anyone suggest a salad that isn't quite as high maintenance? (high maintenance... usually a word my DH uses to describe me...:rotfl: )

Hi Marci, For the fruit...maybe a vanilla yogurt mixed with a little honey?

And for the salad...maybe a German Potato Salad...they do not call for mayo.

Does anyone have a good dip to make for a fruit tray?

I don't use a recipe for dips either but generally mix yogurt with some lemon pudding a maybe a little cool whip.

For the salad, this is one I plan to make for Mother's Day. The copycat seasoning recipe is good and way cheaper than the ready made, but that can be found in the Herb and Spice area in the market. The reviews suggest that you refrigerate the mix overnight before using to enhance the flavor.

I added a basic recipe for the pasta salad, some recommend refrigerating overnight but I do not. Others recommend marinating the veggies overnight tint eh dressing. I also have not done that but if I used fresh squashes I might. Use as much of the seasoning as you like, and use whatever veggies that you have.

Salad Supreme Seasoning Recipe #24917

This is a copycat recipe for Schilling Salad Supreme. Use the entire recipe if making Mysterygirl's Linguini Salad in place of the 1/2 a jar that is called for in the recipe. It would be good mixed with italian dressing on vegetables too.

5 min | 1/4 cup 1 1/2 teaspoons sesame seeds 1 teaspoon paprika 3/4 teaspoon salt 1/2 teaspoon poppy seeds 1/2 teaspoon celery seeds 1/4 teaspoon garlic powder 1/4 teaspoon coarse ground black pepper 1 dash cayenne pepper 2 tablespoons romano cheese (optional)
  1. Combine all ingredients and mix well.
  2. Store in a sealable container in the fridge.


ANGEL HAIR PASTA SALAD

1 lb. Angel Hair pasta or cappoloni
1 (16 oz.) Kraft Zesty Italian dressing
1/2-3/4 jar Schilling Salad Supreme
1/2 c. Parmesan cheese
Zucchini
Tomatoes
Peppers
Onion
Carrots
Celery
Cucumbers
Etc.

Dice the vegetables. Mix with remaining ingredients.

Marcy- I had some yummy fruit dip at a birthday party that was super simple. It was 8 ounces cream cheese, softened , 1 (7 ounce) jar marshmallow creme . Mix together and enjoy! The corn salad I posted in the old thread is great for picnics.

Last night we had chicken that I breaded with bread crumbs, parm cheese, parsley, and lemon zezt- then I just pan fried it. I also made rissoto that I used the lemon juice in, and it came out perfect. I can never get the texture right, but got it perfect last night. I just had the leftovers for lunch, now I'm wishing it was still here.
Tonight we are trying Trader Joe's chile lime chicken burgers. I've never bought pre-made burgers before so we'll see how they turn out.
Lauren- now that you have discovered Trader Joe's, next time go to there freezer section and get the raw chocolate crossants. You leave them out overnight then bake them for 25 minutes. SO GOOD! and I don't even really like chocolate. We have them for special treat breakfasts so I like to keep a couple of boxes in the freezer, though I here you might not have much freezer space. I've never tried their beer or wine though, they can't sell it it MA.

Marci--My fruit dip is super yummy and easy

1 block of cream cheese
1 small jar of marshmallow fluff
1tbs of either oj or lemon juice

blend and enjoy..I could just eat this without the fruit.....eeek!



Oh goodness.....I am sitting here waiting for Ross to get off the bus and am perplexed as it stops but he doesn't get off.....totally spaced that I have to pick him up at 3:15 as he is working on a mothers day project in his G/T class...............at least I didn't realized it after the time I was supposed to be there...............Mother of the year I am not, lol!! I rushed at the grocery store for nothing....guess I better put stuff away quick so I can go get him...
 
Hi all. I'm just poppin' in to see what everyone's making for Cinco de Mayo.

I'm making homemade salsa with tortilla chips, tortilla soup, and tacos.

Tomorrow's DH's and my 13th anniversary, so I'm hoping I can talk him into getting Chinese take-out and I won't have to cook.

I am having a good day. I wound up taking a ride to Trader Joes. I have never been there before. It was about 40 minutes away but I loved it!!!

I love that place too, I spend most of my grocery money there anymore.

Had a nice weekend, went to the Amish Market and Whole Foods. Got lots of nice fruits and veggies and some really good Buffalo Chicken Sausage. Had that Saturday with mac and cheese. Was going to grill it but the wheel fell off the grill and there was no way I could put it back on myself. Got the sausage from the Amish Market.

Tonight is catfish, I think. My DM asked me if I wanted some for dinner and I don't remember seeing it in the fridge, which means she probably forgot it. I wanted to do something for Cinco de Mayo but I don't know what.

Had a Cinco de Mayo inspired dinner. Saute onions and put them, along with some Habenaro Lime Salsa on the fish. Had it with roasted fingerling potatoes and oven fried zucchini.
 
I wish that I had Cinco de Mayo in mind tonight, my DDIL is craving Mexican food. I'll make her some this week.

I have got to post dinner tonight. It was free on CORE, I did not calculate points.

I made a lasagna, and we all know that I am lasagna challenged. It was the first one that ever came out good! My DH has told me that the pasta tastes like cardboard, so I did not tell him that it was whole wheat and I did not tell him that the cheese was all FF, although he does not care, prefers that we use low fat in our dairy. OMG, it was really good!

This is the directions that I had from the WW CORE message board, I made some changes for my family.

[FONT=&quot]"I put a whole bunch of vegs in food processor to finely chop (used: onion, celery, red bell pepper, zucchini, yellow squash, eggplant, carrot, garlic). I sauted all of this in a little extra virgin olive oil.

I made a sauce from tomato puree, garlic, and fresh basil. Then added in the vegetables.

I mixed 1/2 ff cottage cheese, 1/2 ff ricotta cheese with some diced scallions, a little garlic, and fresh basil.



In 9x13 pan, poured a little sauce (to coat bottom) then layered 3 whole wheat lasagna noodles (uncooked), some cheese mixture, then sauce/veg. I repeated this 2 more times, then added a little ff mozzerella to the top."

I used a lot of the same veggies. Browned turkey sausage and added it to my sauce, I cooked the lasagna noodles, used 1 part FF cottage cheese to 2 parts FF ricotta. I flavored the mixture with pepper and granulated garlic. For the tomato sauce I used crushed tomatoes, tomato puree and tomato sauce with my seasonings. Soy mozzarella for the topping.
