I am back from the game (we won 22 -7) and having my wine too...wish we were all closer to have a WFD meet and have our wine and drinks in person...we have to see if we could plan something again...

Dinner was god. I roasted a turkey, and served it with mashed potatoes, gravy, green beans, peas, and roasted red and yellow beets and butternut squash. YUMMY. I forgot to serve the salad that I made :confused3

Dessert is melon with berries.
 
Nancy Your forgeting the salad reminds me of our holiday meals. We are always eating something for dessert that never made it to the dinner table.;)

Off to start the brats. It is such a beautiful day. I think I may sit on the deck with my sangria.
 
Yesterday's vinaloo:
INGREDIENTS:

* 6 c. cauliflower florets

* 2 15.5-oz cans chickpeas, rinsed and drained

* 2 large leeks, white and light green parts sliced into 1-inch pieces (1.5 c.)

* 1 c. tomato sauce

* 1/4 c. water

* 1/4 c. vinegar (or white wine vinegar)

* 2 t. ginger powder (or 2 T. minced fresh ginger)

* 2 T. curry powder

* 2 cloves garlic, minced

* 2 t. ground cumin

* 1 t. ground cinnamon

* 1 t. red pepper sauce, like Tabasco

* 3 T. chopped cilantro

* 3 c. cooked basmati rice


DIRECTIONS

Combined cauliflower, chickpeas, leeks, tomato sauce, vinegar, ginger, curry powder, garlic, cumin, cinnamon, red pepper sauce, and water in a 4-qt. slow-cooker. Season with salt and pepper. Cook on hight 3 hours, stirring occasionally.

Transfer Vindaloo to large bowl, and cool 15 minutes. Stir in cilantro, and serve over basmati rice

Tonight was Israeli couscous, corn and butter nuggets, and fried tempeh
INGREDIENTS:
2 cloves crushed garlic1 cup water

salt to taste
1 (8 ounce) package tempeh2 cups vegetable oil for frying

DIRECTIONS:
1. Place the garlic in a small mixing bowl. Pour water and salt into the mixing bowl, mix well.
2. Slice the tempeh 1 inch thick and score both sides of the tempeh. Marinate the tempeh in the garlic, water and salt mixture for 20 minutes.
3. Pan fry the tempeh in a skillet with oil. Brown the tempeh on both sides.

I also followed some of the recommendations by the readers, who said to add some soy sauce to the marinade.
 
Hedy- your vindaloo looks delicious! I have never had Vindaloo but the ingredients are making me hungry so I'll try this next week.

Thanks-it was from vegetarian times. It was my first time using our crock pot, so I was happy with how it came out.
 
I am in deperate need of freezer space...:mad:

My lovely DH ripped out my beautiful Zebra Grass! :scared1: I had mentioned that I did not like the bushes on the side of the house, that they looked like weeds. I even showed him which ones...so he goes and rips out the grass too! :mad:

Then, to top it off, he starts sweeping and airating the lawn to seed several spots that need re-seeding. So he does this and puts on the sprinkler, then leaves it. Then asks me to go move it. Well, I went out and all the seed is basically washed away! :scared1: The sprinkler he used was too strong of a stream and there went the seed and mulch down the hill.

I guess he is not too concerned since now he is sleeping...:mad: :eek: :sad2:

I clean my floors with a cleaner tha smells like almonds. Buddy told me that every time he smells it he thinks of cyanide. I told him to be careful, if he annoys me (in your case, by zebra grass murder and drowning innocent grass seed) I may wash the floors and he should be careful what he eats. He did tell me to use enough because if got up I should start running, but I assured him that with the way I nanatize there would be plenty, he'd stay down. Now Lauren, you have wood floors. Tell your DH to walk softly whenever you clean those babies.......and he won't take up precious freezer space :thumbsup2
 
My Pooh Bear is off this week. No reason, just for the heck of it. Today we are eating at Jason's Deli, getting some Mother's Day shopping done, and just relaxing with each other :)

We are having a CORE lasagna and the salad that I made yesterday. I'll post the recipe if it is any good.

I missed a bunch....sorry! I have to run errands this am and then I have a dentist appt for a cleaning at 12:20, and will prob have to finish my errands afterwards. Funday Monday

Supper is going to be Ross' request....glazed meat loaf, fresh grean beans, brown rice for him and mashed taters for Kris and I. It is damp and gloomy here today so that will be yummy!

It was down at "Woods" (A local park) and the parking levels of the shopping centers, and office complex for us! Ah, those were the days.

I have to take Jack to the doctor today- he's been coughing since last week (asthma cough) and I upped his Pulmicort, but it doesn't seem to have helped. Megan is home because she is on an antibiotic for a skin infection and it has helped with that- but made her ill in other ways (kwim?) Hopefully they can get along well enough today for me to put in my 4 hours at work.

Hey Wendie- where is that 70* weather we had a couple of weeks ago?? I'd like some more of that please.

It is Spring, you can tell by the coughs, colds, and itchy eyes. The poor kids, and poor Mom. Hope that the Doc can help Jack, that Megan gets over the "issues" and that you survive.
 
Hi all! I've been so wrapped up in work and finishing up our rental prop. we are attempting to sell I haven't had much internet time. So I thought I'd post a quick recap of our dinners last week.

M- Honey Ginger shrimp

T- Balsamic Glazed Salmon

W- Turkey Burgers & Zesty Sweet Potato Fries

Th- Southwest Chicken

Fr- Sandwiches

Sat- Dinner out

Sun- Marinated Flank Steak, Brown Rice, and salad.

Tonight DS is being honored at an awards banquet so it will be dinner out at his restaurant of choice.
