Thanks to all for the thoughts and prayers for Greg. I heard from him this evening saying that he has made it safely to Kuwait. He still has a couple more stops before he rejoins his team in Iraq.

I am in deperate need of freezer space...:mad:

My lovely DH ripped out my beautiful Zebra Grass! :scared1: I had mentioned that I did not like the bushes on the side of the house, that they looked like weeds. I even showed him which ones...so he goes and rips out the grass too! :mad:

Then, to top it off, he starts sweeping and airating the lawn to seed several spots that need re-seeding. So he does this and puts on the sprinkler, then leaves it. Then asks me to go move it. Well, I went out and all the seed is basically washed away! :scared1: The sprinkler he used was too strong of a stream and there went the seed and mulch down the hill.

I guess he is not too concerned since now he is sleeping...:mad: :eek: :sad2:

OK, vent over.

My Pooh Bear is off this week. No reason, just for the heck of it. Today we are eating at Jason's Deli, getting some Mother's Day shopping done, and just relaxing with each other :)

Tacos- in honor of cinco de mayo!

I have to take Jack to the doctor today- he's been coughing since last week (asthma cough) and I upped his Pulmicort, but it doesn't seem to have helped. Megan is home because she is on an antibiotic for a skin infection and it has helped with that- but made her ill in other ways (kwim?) Hopefully they can get along well enough today for me to put in my 4 hours at work.

Hey Wendie- where is that 70* weather we had a couple of weeks ago?? I'd like some more of that please.

Poor guy. My asthma hasn't been in control in awhile, either.

Hi all. I'm just poppin' in to see what everyone's making for Cinco de Mayo.

I'm making homemade salsa with tortilla chips, tortilla soup, and tacos.

Tomorrow's DH's and my 13th anniversary, so I'm hoping I can talk him into getting Chinese take-out and I won't have to cook.

How do you make your salsa? Now that I have my food processor, I really want to try my hand on it.

I just got in - we had a staff retreat immediately after activities yesterday and I am so tired and not feeling well.

Tonight we (the staff) ate at Babe's Chicken. It was really good but my Crohn's did not appreciate it at all so now I'm regretting it.
 
Hey all, tonight's dinner was modge podge. DH was in class until 7 so I just made some quick pasta for the kids.

Tomorrow night is going to be chicken pot pie, from scratch.
 
Nancy- Thanks! How is your aunt btw?

She is doing well, thank you for asking. I visited her yesterday and she was perkier than she has been in a long time. I see her more alert and brighter every visit. She told me that she thinks that she won't be able to go home again and that the facility is not home but....

My sister works there and has been in and out of her room several times each shift and has gotten her to attend some of the activities. It is slow but she does not usually take "No" There is an assisted living area there and if she improves enough so that she has some independence she will move to that side.


No cooking for me tonight. Erica and I are using gift certificates to go to a spa. Marisa is going to take us so that we don't even have to drive home. We can just melt into the car :woohoo:when we head back home.

Morning all,
last nights dinner was nothing. DD had a softball game and when I got home we had company. I thinki tonight is going to be left over corned beef and cabbage (this will not be the last time you hear this, this week!) and tomorrow night is going to be marinated steak on the grill with broccoli. Nothing to fancy this week.

Cinco De Mayo was a big hit last night- I made a pitcher of Margaritas in our Tiffany pitcher we got as a wedding gift (1996) and have NEVER used. I figured, why have pretty things if you don't use them?? If it gets broken, it gets broken. Jack and I listened to Herb Alpert and the Tijuana Brass while I made dinner (tacos, right out of the box!) and my dh was running. It was fun!

Not sure about tonight- there's a little bit of taco stuff left...

Jack got a complete asthma/allergy over haul yesterday. BUT then last night he started running a fever. There must be something more going on.

But I may not be cooking dinner much this week.
We will have Lean Cuisines and such. DH and I have started our post vacation diet - to lose the # lbs we put on last week. But also - we are going on a beach trip in August and we both want to look and feel good for that trip too. So I'm going to start putting together my healthy recipes and menus and we are both going to get back serious into our activities and exercising and eating right. Its a challenge - with DH being so picky.

I am cooking this coming weekend though. I'm having my family and his family over for a Mothers Day dinner on Sunday. Probably 12 people total.
So far - this is what I'm making:

Spinach dip and chips (from the Knorr Veg Mix - but I mix in more stuff and make it my own)
Grilled shrimp (2 - 3 ways - haven't decided what ways though - any ideas?)
Salad and fixings
Roasted Chicken (a recipe I found in Food & Wine has one where bacon is put in the food processor with the other rub ingredients - sounds delish)
Grilled Tri Tip Roast (if i can find one around here - if not I'll use a sirloin roast or something similar)
Roasted Garlic and Olive Oil Cous Cous
Oven Roasted Vegetables
Potatoes Au Gratin
Yeast Rolls (I would love to home make - anyone with a great easy recipe?)
Ice Cream Cake (I'm buying this somewhere)

I hope everything turns out good. I may practice some recipes this week on a much smaller scale. I get nervous about cooking for everyone. But I really do enjoy it too!! Crazy huh! :rolleyes1

I don't use a recipe for dips either but generally mix yogurt with some lemon pudding a maybe a little cool whip.

For the salad, this is one I plan to make for Mother's Day. The copycat seasoning recipe is good and way cheaper than the ready made, but that can be found in the Herb and Spice area in the market. The reviews suggest that you refrigerate the mix overnight before using to enhance the flavor.

I added a basic recipe for the pasta salad, some recommend refrigerating overnight but I do not. Others recommend marinating the veggies overnight tint eh dressing. I also have not done that but if I used fresh squashes I might. Use as much of the seasoning as you like, and use whatever veggies that you have.

Marcy- I had some yummy fruit dip at a birthday party that was super simple. It was 8 ounces cream cheese, softened , 1 (7 ounce) jar marshmallow creme . Mix together and enjoy! The corn salad I posted in the old thread is great for picnics.

Marci--My fruit dip is super yummy and easy

1 block of cream cheese
1 small jar of marshmallow fluff
1tbs of either oj or lemon juice

blend and enjoy..I could just eat this without the fruit.....eeek!

My mom makes yeast rolls every Christmas. I think it is just the Betty Crocker recipe, but I will ask and post it later.

Sorry I didn't get on here yesterday. Caili had skating, so I just pulled some Indian food out of the freezer and had that. I'm not sure what I'm making tonight yet, but since it is one of my few real cooking nights, it is going to be something good!

Well for the 1st time ever in our house, we didn't have a special Cinco de Mayo/DD's birthday meal.:sad2: My SIL decided to make reservations at a nice restaurant for the 2 of them. I was really bummed out & depressed about it, but had to act like it was no biggie. This parenting of an adult sure is tough.

So with my depressing attitude, I decided to not have anything Mexican, although I might have felt better with a large pitcher of margaritas!

I fixed Paula Deen's Chicken Scallopini. It tasted okay to me, not great. Although Bob seemed to like it just fine. I haven't decided on WFDT yet.
