I know from all your posts how much Tom loves A, which is why I figured he would be the most excited. I think we have both been blessed to find loving husbands who are not only good to our children, but love them like they were their own.

I haven't tried the cajun roast and I'm thinking of it, but I'm trying to find something really, really low on sodium. I still have a headache after last night and I'm sure my BP is still high. I may have to do something different for me.

Anything I have made I have not loved. The only thing I like using it for is bring meatballs or keilbasa to buffets.

Ann, I don't really like my crock pot either. I make Glynis' pot roast in mine and like you, use mine to keep foods warm for family get togethers, etc. I have been really underwhelmed with everything I cook in it. It may be me, or it may be that my old crock pot just isn't up to the challenge.

Ann, I thought this recipe was posted here but I couldn't find it. I actually got the recipe from google and this is the first time I have made it. If its good, I will post tonight.

I find my pot cooks very fast so I cut down all cooking times. Perhaps this is the same for your pot.

Glynis pot roast does come awesome so try that if you haven't...;)

The awards ceremony was very nice last night, although the presenters took forever to get to their awards.:rolleyes1 I took some pics, not sure how they came out, if they're good I'll post the one I took of Kyle and his coach. Kyle was awarded the Best Pitcher trophy and his coach had me boo-hooing when he was praising Kyle's character and work ethic both on and off the field. The recipients were not allowed to speak (which was probably a good thing) as they were running short on time.

Good Morning! I was running errands yesterday and did not get much DIS'ing in. I read it all but that was it.

Wendie- I am so sorry about your dear friend. Cancer is such a debilitating illness, I am always so humbled by those people who live their lives and fight that disease. I cannot even imagine that courage. I added prayers for her and for all of her family and friends. :grouphug:

Gretchen- I love your Hailey stories :goodvibes. I have this little mischievous imp pictured in my mind, quietly outsmarting and outmaneuvering all of the adults around her, while she snacks on contraband princess:. I have to be honest and tell you that as a Nana I am in her cheering section although I imagine that as a parent your reaction would be the same as Marisa's :lmao::lmao:. I do hope that her ball comes in. After it does I hope that you insist a supervisor remove any delivery charge. The mistake is acceptable the customer no service is not.

Kat- Now all I can see is Kyle saying "again" for the rest of the year. The awards are well deserved and I can see that he is going to be receiving a few more before this year is over.

Sheryl- I'm glad you ate for me, I have been doing pretty well avoiding the foods that will toss me under the bus. I need to know that the good stuff is still out there somewhere ;)

I'll catch up some more later, Marisa is waiting for me to go shopping.

Dinner last night was okay. I made a tandoori style chicken, a baked and sweet potato, green beans, beets, and a green salad. Buddy covered his chicken in A-1 sauce, Jeff drowned his in Italian dressing, Kady ate her Mac and cheese. Marisa said it was okay yesterday, but it was really good today.

Dinner will be something easy tonight, depending on what time I get home. have a great day, everyone!

Quick pop in....thank you all so very much for the prayers for my brave friend Becky and her family.....She is still holding on....we are all at peace for her to pass as yesterday we finished what was her final wish.....to have her daughter Sammy's horse at home....we had a barn raising and got the horse delivered yesterday....we have all been afraid that Becky would pass before this was finished....we should know better after all these years how strongwilled she is, lol. When we left yesterday evening it was just family there (her husband, kids, brothers and sil's and her mom) and they were going to put becky on a gurney that they have, and take her down to the horse and put her hand on him, and let he listen to him. I find this very heartwarming and a wonderful way to let her know her wish has been granted, I am sure she will be aware of it all.

Lauren--glad A had such a great game yesterday!!

Kat--Kyle deserves every one of these award dinners, he is an amazing young man, once again please let him know just how proud of him we are!! Good job to you to Mama!!!

I thought about you yesterday but figured you were either cleaning or recuperating. ;) I completely understand the Nana point of view. The first thing my Mom asked when I told her the story was "Well, you let her have them didn't you?!? After all, she had to work so hard to get them, she deserved them." I did let her have her ill gotten gains, but I have moved the other Milk Duds. Somebody has to be the bad guy.

Lindsay, I didn't dislike the old index. I think we are all just happy to have someone do all that work. Please don't be offended. Who would have ever thought years ago when you started this thread with such a simple question you would have had this response and we would have shared so many great recipes and made such good friends. I am indebted to you for that forever.
 
Our date night was a lot of fun yesterday. We ran to the wholesale club and bought the mini cinnamon rolls Hailey (and Kenny) loves and ran to the movie. We saw Forgetting Sarah Marshall which was really funny, if a little raunchy. Then we shopped for a while before time for dinner and I found something I have been looking for forever - denim shorts that pull on (no buttons or zipper) for Hailey. They had 2 pair in Justice that were just precious and Hailey really liked them when I brought them home last night.

Dinner was at PF Chang's and was wonderful. We had the lettuce wraps and shrimp dumplings for appetizers and both thought the wraps were the best thing we had all night. For dinner we ordered the Kung Pao scallops and honey shrimp. The Kung Pao was good, but boy, was it loaded with sodium. Like burn your tongue it was so salty. I thought this dish was supposed to be more hot than salty. So I didn't eat too much since my blood pressure couldn't handle it.

Anyway, we had a great time and swore we were going to try and do it more often.

Tonight I haven't decided on dinner. Some kind of pork since I have a pork tenderloin in the fridge.

I want to see that movie - glad you liked it! PF Changs has the best lamb dish EVER if you go again, I'll have to dig up the name and recommend it. If you like lamb, that is.

At PF Changs, if you're there with a larger party you can tell your server how much you'd each like to spend and if there are any allergies or foods you want to rant/rave about and let your server figure out what to bring you. We do that when we go as an office and it allows us to taste a million different things - that's how I tried the lamb dish for the first time!


Yesterday was hot but today it's only 55 outside :confused3 So, I'm making chili! It's a Rachael Ray recipe so I'll post it if it's good.

I love potato salad but can't make it if my life depended on it. Would you share your recipe and technique when you have time?

I don't really have a recipe or measurements but this is what goes in it: Boiled potatoes, hard boiled eggs, chopped celery and onions, dill pickle relish (sometimes I use sweet pickles to change it up a bit), mayo, yellow mustard, Tony's seasoning and just a little EVOO to make it rich & creamy. My guys like a smooth (not chunky) potato salad so I smash the potatoes and eggs, add everything else and stir it up.

Unfortunately we won't be eating this or the gumbo I had planned. A tummy bug hit me real hard this morning so the guys are on their own, hopefully I'll be able to keep a piece of toast down.:sad2:

Sorry I was out of town for a few days so I am just now getting around to answering the request for the recipe. I stumbled across this online recently:

Greek Stewed Chicken (Koto Kapama)
Serves 4
Ingredients
• 1 whole chicken (2 1/2 to 3 pounds), cut into 8 pieces
• 2 teaspoons kosher salt, plus additional for seasoning
• 1 teaspoon freshly ground black pepper, plus additional for seasoning
• 1 teaspoon ground cinnamon
• 2 tablespoons extra-virgin olive oil
• 2 yellow onions, coarsely chopped
• 3 garlic cloves, minced
• 1/2 cup dry white wine, such as SAUVIGNON BLANC
• 1 cup water
• 1 cup chicken broth
• 1 (6-ounce) can tomato paste
• 1 tablespoon chopped fresh oregano
• 1/4 cup grated KASSERI cheese
• 1/4 cup grated Parmesan cheese
• Cooked orzo, for serving
• Fresh parsley leaves, for garnish
Directions
1. Pat the chicken dry with paper towels. A wet chicken will cause the oil to splatter while the chicken is sautéing. Mix the salt, pepper and cinnamon in a small bowl. Rub the chicken pieces on all sides with the seasoning.
2. Heat the olive oil in a large deep skillet over high heat. A 12-inch skillet with sides about 2 1/2 to 3 inches high will allow you to brown all the chicken at once. If you don’t have a skillet large enough, brown the chicken in two batches. What’s important is that the chicken isn’t overcrowded, which would cause the pieces to steam rather than brown,
3. Put the chicken in the pan, skin side down. Brown for about 4 to 5 minutes on each side. Turn the pieces using tongs, as they have a tendency to stick to the pan. Remove the chicken to a platter.
4. Lower the heat to medium high and add the onions and minced garlic to the drippings in the pan. Cook for about 3 minutes, stirring constantly, until the onions have softened and are a light golden brown. Add the wine, and scrape the bottom of the pan with a wooden spoon to deglaze the pan, loosening any particles stuck on the bottom.
5. When the wine has evaporated, add the water, chicken broth and tomato paste. Stir to dissolve the tomato paste. Return the chicken to the pan and add the oregano. The liquid should cover about halfway up the chicken pieces. Cover the pan and simmer over low heat for about 1 hour or until the chicken is tender and completely cooked. If the sauce becomes too thick, it can be thinned with a little more water. Season with salt and pepper to taste.
6. Serve the chicken over cooked orzo. Top with the red sauce and sprinkle with the cheese. Garnish with fresh parsley leaves.
 
Lindsay--Not disliked one bit....in fact I never even gave it a thought of doing it different until Kathy did it this way.....then I realized that it was easier to hunt around in, :) I owe you so much for starting this thread.....the friendships that came from it, are what has gotten me through some of the roughest times in my life, and I will forever be grateful to you!!! I do not use mine much either. I even use a dutch oven to cook Glynis pot roast. I will make a recipe and let the crock pot finish it or keep it hot, that's about all.

Kat- you have got to be so proud hearing the coach praise Kyle's character and work ethic. I attended a sports award for one of Dan's friends, also in baseball. His Mom did not go. He was awarded the Sportsmanship award and we told him that that made us more proud than MVP. While ability is important having your son's behavior praised along with his ability is such a tribute to the three of you.

Dinner was so good tonight. Marisa cooked burgers on the grill tonight. Turns out it only needed anew burner. We had French Fries along with a plate of lettuce, tomato and onion on the side. Marisa and I had polenta fries instead of the others. They were surprisingly good!
