The All-New What's For Dinner Thread!!(recipe index in OP)

I'm currently munching on a quarter pounder with cheese... I took a bunch of kids to see Wall-E today after church and have just been running 90 to nothing so on my way from dropping off the last kid (I'm a full service minister!) I drove through McDonalds in the big ol' 15 passanger van I just picked up for camp. I didn't have time to eat the pizza I ordered for them so I was starving...

Course McDonalds doesn't last long so I may eat dinner #2 later tonight ;)

Kids are supposed to be there at 8am tomorrow morning so we can hit the road in a hurry - I plan to be there by 7am (with a drive through Starbucks on the way...) so I can get my act together (or least attempt to!).

I should take pictures of my camp food - we all love food porn, right? ;)
 
Hi guys, we're home early....Today was Kyle's game to pitch at USM's beautiful facility, scouts on hand and the heavens opened, game cancelled. He was so disappointed.:sad1: Looks like we won't be seeing him pitch anytime soon, the next two tournaments are out of town and Johnny & I can't go.:sad1:

Have to share my morning food blunder.

I poured oil into my coffee. I have been doctoring my coffee with some milk/cream and vanilla flavoring that comes in the big clear bottle (like they have at coffee shops). I grabbed the bottle out of the cabinet and milk out of the fridge and never even looked at it.

Poured the vanilla flavoring into the coffee and noticed it settled at the top. Added some milk, thinking it would help mix it, and it still stayed at the top and looked greasy. I turned the bottle around and sure enough - sesame oil. The bottles are almost identical!!

Poured it out and started over again =)

But, now I am also craving Salmon...which I always hated...SO...

Can someone tell me how to make this? I am thinking a maple glaze...like Le Cellier...

Sheryl, my favorite is to use the ingredients Laura told you about, but I boil them until they reduce and get all sticky. Then I sear the salmon on vegetable oil over REALLY high heat--flesh side first. Two minutes, then flip to skin side, two minutes, baste with the glaze. If you want to cook it through, at this point, put it into your preheated 400 oven for another five minutes or so. You can save the extra glaze for the table. Season the salmon with salt and pepper before searing it.

PS: your house will smell like fish. ;)

So, on the 4th, as expected, there was nothing for me to eat at John's aunt's house. There was even red meat in the DIPS. Ridiculous. So, I just drank wine and smiled, whatever. When I got home, I made this:

ANYWAY, here is some real food from the weekend. Yesterday we had fried chicken, potato salad, cole slaw, and cornbread with honey butter. I was so hungry from the food-stiffing on the fourth that I think I fried about 72 pieces of chicken. Photos:

Tonight is something that I sort of made up one evening.

4 Boneless skinless chicken breasts cubed
10 small red potatoes chopped into chunks
1 med onion diced
garlic diced
1 can chicken broth
1 can corn
1 cup white wine
1 cup heavy cream
1 tbs flour

Brown chicken in heavy fry pan ( I use cast Iron) Remove
In same pan put in onions potatoes and garlic, cook for 5 minutes till onions translucent Add back chicken.

pour in chicken broth and deglaze pan, add corn, wine and cream. Cook till potatoes are done and broth reduces. mix a little water in flour and pour in to thicken.

this is probably more of a winter type thing, but it is really good.

I seasoned with salt, pepper, basil, taragon and a touch of cayane, but you could change it up to make it have different flavors as desired.

WFD -We just had Chinese sausage sandwichs, and chips.

This is the first time I have bought these. They were surprisingly delicious. They taste similar to Chinese boneless spareribs. DH had them last week for the first time at my DB's BBQ. I parboiled inside, then grilled them.

I've never even heard of them, but it sounds good. But that isn't a surprise. The grocery stores where I live have a VERY limited selection. I have to go out of town for the good stuff.

I'm really not worried about P. I know he'll be sorry this week and he deserves to be. I'm of the "you made your bed" school of thought, especially when it comes to him. I just hate the stress he causes Kenny and I. You know what I mean.

Becky, that just stinks. How she can continue to do that to you year after year is astonishing. As a hostess, I can honestly say it is a mistake I would make only once. I would be horrified if I didn't have something for a guest to eat. :mad: But you certainly were a good sport about it. I hope your darling hubby appreciates it.


The steaks tonight were fabulous. Kenny has really gotten the grilling technique down. I prefer my steak very rare, and it is difficult to sear the outside and leave the insides red. But he has now mastered that it seems. And the really funny thing is that when we started dating, Kenny only ate his steak well done and covered with Heinz 57. On our third date, when we were ordering dinner, I told him to please order something else because I couldn't stand to watch him eat a piece of burnt steak. He ordered it medium that night and now eats his rare too (and without Heinz). :laughing:

I have no idea what we're having tomorrow night. It's going to be kind of hard to top tonight.

...new poster to THIS thread, but I am probably just gonna order a pizza for the 4th of July - my DH went to upstate NY, my one DS is working down the shore, and my eldest DS is MIA (somewhere with his GF), so my youngest DS and I have the house to ourselves....I wonder if I can find a 'red, white, and blue' pizza?? :scratchin

Well I made some excellant cupcakes. :thumbsup2 I took the regular sized Reese's peanut butter cup and put it in the cupcake paper, then put the batter over it and baked it. I made the Betty Crocker recipe for the frosting but used chocolate frosting instead, so good!

Had our cookout in the living room Friday, it started to pour rain as soon as we started cooking. After it got dark we went out to the dead end of the road and did some fireworks, they allow ground based sparkler ones here. I spent the rest of the weekend reading and watching movies.

Going to be a busy week ahead, my aunt and cousin come in on Wednesday, then Friday I have to go to my sisters. My oldest niece has a big swim meet at 5:00am Saturday and I am going to take care of my youngest niece. Then we will all come back to my house and Sunday we are having a big family cookout at my cousins house. My sister is staying until Tuesday and I am sure we will see my aunt and cousin each day.
 
Tonight it's stuffed pepper stoup and bread.

Bigmerle, I made the Reese cup cupcakes last night myself! I used the mini's though. They are really good except they didn't really melt or anything in the cupcake. It's really funny, when you peel the paper off the cup comes out of the cupcake with it, lol!!! I made peanut butter icing for the tops :)
 
Hi everyone! I should be getting Patrick ready for camp right now, but he developed an attitude and wanted to go off with one of his friends instead. They leave for camp tomorrow morning at 7:00 a.m. and I have no desire to pack him at 10:00 tonight. When I told him I would not pack for him, he said he wasn't going to camp. Sold. I called the church and told them not to expect him tomorrow. So instead, I'm drinking a glass of wine and relaxing. Well, in between laundry loads.

Teen boys :headache::headache: My youngest went through a "phase" when we thought that we had dodged that bullet. We had to take the truck away from him and his answer was that was fine, after all he had to start work at 4 AM. Basically that he would get that truck if we wanted him to work. Well I am an early riser and more stubborn that any 17 YO pill so my embarrassed son got to have Mom bring him to work in all my early morning glory and pick him up in my best cleaning clothes :rotfl:

The kids and I spent the weekend with Beck and my parents. We had fried chicken, cole slaw, potato salad and cornbread on Saturday with strawberry shortcake for dessert. Today we had four types of pizza, salad and antipasto. My mom said it was a cheat weekend for dad, so no trilogy diet. Woo-hoo!

Ann, I worked in a Chinese restaurant for a few years and every morning the cooks made these yummy sausages for breakfast along with eggs, rice and some kid of bean curd. They are so good! I worked with a squeamish woman who would not touch any of the ethnic foods and she missed out on this treat along with some other goodies that the guys would bring back from Boston every week.

I can't get past this either. Friday, my sister had a guest who was on a very restricted diet. She did not know until after her arrival so we went through the fridge in order to make a decent meal for her. Had we know ahead of time there would have been plenty on the table for her to choose from and it would not have been apparent that any extra effort was made. I am so offended for Becky, through the past year we have all seen the effort that she puts into good healthy food for her family and friends, that consideration should be extended to her.

I think that we are going to have a sloppy joe or chili tonight. We have WW and Buddy has a Dr appointment so dinner has to be ready when I leave this afternoon. I also want to make a tabouleh salad but with quinoa either today or tomorrow.
