The All-New What's For Dinner Thread!!(recipe index in OP)

This is a really good (and popular) recipe! There are so many flavors of ice cream bars that you can go to town with it. I like to make it with mint chocolate chip ice cream bars and top it with chopped peppermint patties. I've also used peanut butter flavored ice cream bars and reese's peanut butter cups. I've used Neopolitan bars, and butter pecan. The possibilities are endless! My kids request it all summer long, and I'm happy to oblige since the ingredients are so cheap!


This was a new recipe to us...but boy it is going to be a regular.
Now I am going got be on a mission looking for flavored ice cream bars. I don't think I have ever seen them at my store. Thanks for all the ideas.

...soooo, how does that dessert pizza sound? I figured, I could use either whipped cream OR vanilla pudding as the 'glue' to keep all the berries from falling off.....

I'm making chipotle salmon burgers from the June CL magazine. Thought it'd be a nice twist on the typical hamburger for July 4th. I'll post the recipe if it's tasty. I think I'll do some roasted asparagus with it, don't know what else.
 
Hey guys - I have a question. I've been doing the treadmill for about 1 1/2 weeks now and I just weighed myself for the first time since I was at the gym last Friday and I've lost 5 lbs. Is that normal, is it water...????????:confused3

Congratulations! Like others have said, do not get discouraged if you gain some weight later while working out. Muscle weighs more than fat.

Nancy -- Your question about how someone forgets that a family member doesn't eat red meat reminded me of Sheryl's lamb stew recipe..."If you don't like lamb, use lamb!" Also, of the Simpsons episode (not a big fan, but DH does killer Simpson voices) where Lisa becomes a vegetarian. Homer asks, "So you don't eat pork chops? Ham? Bacon?"
Lisa, "Dad! That's all from the same animal!!"
Homer, "Oh right, Lisa...some mystical animal!"

Despite the less the glorious weather -- at least it isn't raining, but it is the first time I have worn a sweater to the 4th of July parade -- we had a nice day. We watched the parade, visited with some friends, then went to another barbecue where the kids swam (:eek: Not me! The pool was heated, but Caili was so cold when she got out that her lips were still blue when we got home!) and we had the typical barbecue food...hotdogs, hamburgers, salads, watermelon, etc. Here are some pictures of what I made today:

Brownies to bring to the 1st party (I learned the hard way that Liam's egg replacer can not be used to make brownies. I should have taken a picture...every ingredient separated, leaving a greasy, lumpy, chocolaty mess. Yuck. I made a new batch using eggs. I had to cut these while they were still hot, so they were a bit messy):

No problem! I found the recipe last August in a Kraft magazine, and just started playing around with it! I've also layered in ice cream toppings, too. Just another added layer of sugar and yumminess!
 
This was very good - though a bit spicy. I think I might just do half of a pepper if I made it again.

Chipotle Salmon Burger

Ingredients
Mayonnaise:
1 tablespoon chopped fresh cilantro
3 tablespoons light mayonnaise
2 tablespoons finely chopped fresh mango
1 tablespoon finely chopped fresh pineapple
1/8 teaspoon finely grated lime rind

Burgers:
1/3 cup chopped green onions
1/4 cup chopped fresh cilantro
1 tablespoon finely chopped chipotle chile, canned in adobo sauce
2 teaspoons fresh lime juice
1/4 teaspoon salt
1 (1 1/4-pound) salmon fillet, skinned and cut into 1-inch pieces
Cooking spray
4 English muffins
4 butter lettuce leaves


Preparation
1. To prepare mayonnaise, combine first 5 ingredients in a food processor or blender; process until smooth. Transfer to a bowl; cover and chill. (I used my mini chopper for it, and subed canned pineapple instead of fresh)

2. To prepare burgers, place onions, 1/4 cup cilantro, chile, and juice in a food processor; process until finely chopped. Add salt and salmon; pulse 4 times or until salmon is coarsely ground and mixture is well blended.

3. Divide salmon mixture into 4 equal portions; shape each portion into a (1-inch-thick) patty. Cover and chill 30 minutes.

4. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add patties to pan; cook 6 minutes on each side or until desired degree of doneness.

5. Wipe skillet with paper towels; recoat with cooking spray. Place 2 muffins, cut sides down, in pan; cook 2 minutes or until lightly toasted. Repeat procedure with cooking spray and remaining muffins.

6. Place 1 muffin bottom on each of 4 plates; top each serving with 1 lettuce leaf and 1 patty. Spread about 1 tablespoon mayonnaise mixture over each patty; place 1 muffin top on each serving.

Yield
4 servings (serving size: 1 burger)

This may be too late but I use softened cream cheese and a little confectioners sugar. It works really well. If you like a softer "sauce" try some cream cheese, sour cream and a little granulated sugar.

My family loved this cake. I made it a few times last summer and it always was devoured

Well, the deviled eggs are done, the potato salad is working, and I'll do the fruit salad later this afternoon so it won't turn brown on me. I'm in the middle of making the ice cream, and I'm optimistic. I'll let it harden in the freezer for a few hours before we head over to the block party.

I've spent some time this morning helping set up in my neighbors backyard and it looks so good! I've got to get the simple syrup for DH's homemade root beer made, so I guess I'll go do that! I'll try to remember to take some pictures (and have someone take some pictures of me).

I wish that I could take a nap right now, but all 4 kids are piled on my bed watching tv since the ice cream freezer is so noisy! Oh well, maybe I'll nap on the couch. I'm in good shape! The ice cream looks good, the potatoes for the salad are boiling away, the strawberries for the jello are sliced, the brownies are frosted, the deviled eggs are done. I think I've earned a break! Katie still has to frost her "firecracker" cupcakes. She colored some coconut red, and some blue, and we're keeping some white. She'll frost the cupcakes with vanilla frosting, top them with one of the colors of coconut, and then add a licorice "fuse". They looked cute in the magazine. Let's just keep our fingers crossed.

I'm not planning on doing the fruit salad until about 6:00, and just before that I'll help Leslie make watermelon pops. We're just cutting out star shapes from seedless watermelon, adding a popsicle stick and then sticking them in the freezer for an hour or so. Quick and easy!

So, a nap is definitely in my future!

Quick check-in from Hattiesburg. We're in a beautiful brand spankin new hotel in a really nice part of town. Everything in the area looks new!!! We have 3 restaurants within stumbling, um I mean walking distance.;) And there is a mini-gym in the hotel:thumbsup2

Girls, I have to tell you about my Debbie. She is my Godchild, the only one I have and most precious to me. She is a catcher and even though she is out of college she is on a league (I think that is what it is) and competes all over the East Coast. She is in Wisconsin for a game and there is a chance that she will be selected to play for Team America. She is scarey good! so I hope that she plays well. Kat, I told her about Kyle's "junk" and told her all I could think of was junk in the trunk. She was hysterical and said that since she is a catcher she has no junk but that Kyle must have a mean curve in his ball. Anyway ladies, will you think of her this weekend? She says she probably would need to decline if she was asked becasue of her new position at work but I know that we will be able to find a way to help her if this opportunity is there.

Now I have to also tell you that my sister told me she was competing for the Olympic team and was going to Japan :confused3. I asked Debbie what that meant because the Olympics will be in China, not Japan and she laughed....no Olympics, Mom was confused once again. The women compete in a World Cup Tournament, not the Olympics. I should have known, she told me that Chris guards the President :lmao::rotfl2:and as far as she is concerned he does and Debbie will be in the Olympics in Japan:rotfl:
 
I have a question for you cooks out there....

I made ravioli w/ spinnach inside and it cooked unevenly. Towards the center of the ravioli, it was hard, uncooked taste. How do I cook it so all parts cook evenly?

Hi everyone! I hope everyone had a nice Holiday. Today we are going to my sisters for a BBQ and fireworks. I think her fireworks will be a washout but she really has no raindate, tomorrow will be worse.

Marisa is making WW fudge cupcakes with patriotic sprinkles things and I made a huge fruit salad and a spaghetti salad. I also have the blueberry dessert if she only made plain jello salad.

The cupcakes are:

1 pkg chocolate cake mix
1 can pumpkin puree
3/4 cp water

350 for 19 to 23 minutes this makes 18 cupcakes 3 points each

WW cherry angel food cake
1 Angel cake mix
1 can lite cherry pie filling

mix and bake in a 13 x9 in pan for about 30 minutes at 350 degrees.

I forgot to try to cool it off upside down, it is awkward in this pan, but it is wicked good!


The jello stripes were really good too
8x8 inch pan

5 pkgs SF jello
FF sour cream

For each layer: dissolve 1 Pkg jello in 1 cup boiling water
set aside 1/3 cup jello and pour the rest into the pan
Allow to set, about 30 to 45 minutes
mis 2 TB sour cream into the reserved jello I added the
jello slowly to the sour cream, pour over 1st layer

Repeat with each flavor chilling time is less then 15 minutes for each additional layer.

8 squares is 1 point, these were pretty and tasted good. I think using regular jello would be incredible
Chill completely and then cut into 1 inch squares.
 
I'm making Chicken and Rice with Cilantro-Poblano Sauce - new from CL as well.

We have NO plans today, other then laundry for camp, so I plan to sit around as much as possible in anticipation of the no sleep and long days next week.
