Hi everyone!!! Sorry I have been missing in action.......the weight loss program opened for the Doctor's office staff - the metabolic testing portion - yesterday and today.

Went very smoothly. Found out today that I will be able to hold weekly meetings at the same office. I will start out with one meeting a week and go from there based on demand.


I want to meet everyone here --- and over a kitchen sink ---- at Disney!

Hey Ann! Congrats on how well everything is moving--so proud of you for going after something you believe in! You're amazing!
The "tooth" Cat-o-tar was a special edition limited time one...I still have it!!!
 
I'll need a full report after you eat to see if you think it's as yummy as we do!

Ok, WOW! It was fantastic! I think I made a few oopsies when I made it, but it was still awesome! :thumbsup2 :thumbsup2 :thumbsup2

First I put it on before we left for soccer, and I used fresh chicken not frozen like you mentioned. Then after we came home I didn't really read the directions and I shredded the chicken in the crock pot (was I supposed to remove it and keep it aside?) Anyway, I kept the chicken and the other ingredients in the crock pot.......plus the cream cheese (don't tell Eric it was in there because he supposedly doesn't like cream cheese ;) ) I also added some shredded cheddar? Figured it wouldn't hurt, right?

So I just kept it on warm until Eric came home and by then it was very, um, dip like consistency. So we used Tostitos scoops and scooped away! Man oh man was it AWESOME! Needless to say it is going into my recipe book for sure... Thanks again SuzD for sharing!

HAPPY MOTHER'S DAY!!!

I'm taking a mental health day from work tomorrow, so *hopefully* I can get my leg of the VRT done. Have a great evening!

PS...Suz - I'm going to have to give your recipe a try!! Aside from the cream cheese part (I can only think of cream cheese in cheescake and DH can't stand it), I think it sounds delish!!

Amy, you made it exactly right. I use frozen chicken because I'm never organized enough to thaw it or pick some up at the store to make with fresh. It is kind of a dip like consistency and is great rolled up in tortillas as well as used as a dip. You are like me, just add a few things here and there. That's how I ended up adding the bit of velveeta. I just had a small chunk left and thought, couldn't hurt. I can't remember if I said to add shredded cheese or not, but I usually do. I'm so glad you loved it.

Speaking of recieving things.... I got my postcard from Marshay today.... she is so thoughtful! It was such a nice surprise.

Just a quick note to say we are home ... now I'll just go back in the corner for a while and cry a bit...:sad2: 10 days is certainly not enough...

OK, now that I'm ready to face reality --

We had a fabulous time. Weather was perfect. No rain at all. Crowds were very manageable but each day was getting busier...you could tell it's getting closer to summer.

I feel extremely blessed to have spent a wonderful vacation in a magical place with my daughter who was just super-cool and fell in love with Disney, my DH who said he had a really great time & thanked me for planning a fabulous trip; and my parents who were able to share most of the trip with us and spend time with their grand-daughter.

I swear, each trip is better than the last!
