I've been trying to put together some new recipes to make for Thanksgiving, and I thought I would see what others are making, and if you'd be willing to share any Thanksgiving recipes.

Anyone have some they would be willing to share? :) I will post a couple of my own when I get home from work.

Actually, I just got a big bag of Splenda & am now thinking I wish I'd saved the recipe for Cranberry-Orange Relish. I could never eat it because I'm diabetic. I want to try it with Splenda. Does anyone have the "regular" recipe? TIA

Here are three I'll be making...
Broccoli Cranberry Salad
from Cape May Buffet at the Beach Club

4 cups broccoli flowerettes (chopped fine)
1/4 cup diced celery
1 8 oz. pkg. dried cranberries
1/4 cup shelled sunflower seeds

Dressing:
1 cup mayonnaise
1/4 cup sugar
1/4 cup vinegar

In a large bowl, combine broccoli, cranberries, sunflower seeds and celery. Pour dressing over and toss. Keep refrigerated.


I always make this one in addition to green bean casserole.

Corn Pudding

2 c grated corn
2 eggs
1 tsp salt
1/8 tsp pepper
1 Tbl sugar
2 Tbl butter
1 Tbl flour
1 c milk

The original says "fresh corn preferred" but I always use frozen & use the blender to "grate". I only grate until it is sort of like creamed corn - not totally mush. It screws up the baking time if you don't defrost the corn first though. (I know, I've tried it!) Doubling the recipe also extends the baking time - if you use one dish.

Grate corn & add salt, sugar, pepper, flour & melted butter. Add beaten eggs & milk. Pour into a greased baking dish & bake at 350 for 35 minutes. Serves 6.

It is done when the center is "set" - like any custard - & a knife comes out clean.


Oyster Filling

1/3 c butter
4 c crushed OTC crackers
1 pt oysters (or just broth)
½ tsp salt
¼ tsp pepper
2 c oyster juice & milk

Combine butter with crackers. Layer crackers & oysters, topping with liquid. Bake at 350 for 30 – 35 minutes.

[NOTE: This wasn’t enough liquid. I used 3 cups & that still wasn’t enough! Another recipe said to cover the crackers with milk. That might be a better guess on amounts.]

Here are a couple of mine:

Orange-Glazed Sweet Potatoes
6 med. sweet potatoes
3/4 C boiling water
1 tps. salt
3 T butter or margarine
1/2 T grated orange peel
1 T orange juice
3/4 C light or dark corn syrup
1/4 C brown sugar
3 or 4 orange slices, cut in half

Pare and halve sweet potatoes. Add boiling water and salt. Simmer in covered skillet until tender, about 15 min. Drain off liquid, leaving 1/4 C in skillet. Dot the potatoes w/ butter. Combine remaining ingredients; add to potatoes. Cook uncovered over low heat until glazed, about 15 min. Base frequently, turning potatoes over once. Serves 6.

Autumn Pumpkin Cake
1 pkg. yellow cake mix
4 eggs
3/4 C sugar
1/2 C salad oil
1 C pumpkin
1/4 C water
1 tps. cinnamon
Dash of nutmeg

Combine all ingredients in a large mixing bowl. Beat 5 minutes with electric mixer. Bake in a greased and floured tube pan at 350F about 35 minutes. Frost with Cream Cheese Icing.

Cream Cheese Icing
1 3oz pkg. cream cheese
1 stick margarine, melted
1lb confectioners' sugar
1 tsp. vanilla

Cream margarine and cheese. Add sugar and vanilla. Beat until smooth.

I have plenty of tried and true recipes that have been taught and handed down throughout the years, I have to tell you though, the way I was taught to cook, by mom and grandma and my own little ways of figuring things out, we don't always follow a recipe. What kinds of things are you looking for a recipe for?? I could tell you how to make lots of our thanksgiving favorites, and if you check out the other thanksgiving thread I started earlier, several people have given recipes out. I tried the recipe someone gave for cranberry-apple cobbler last week and it was great, everyone liked it and the cranberries added just a little extra tartness, It was super easy too. So I will be glad to share some recipes just tell me what you're lookin for.

Here is a deliciously sinful desert that I make every year, hope you like it.

Pumpkin gooey cake
Cake: 1 yellow cake mix
1 egg
8 tbs butter melted
Filling:
1 8oz. cream cheese
3 eggs
1 15 oz. can pumpkin
1 tsp vanilla
8 tbs butter melted
1 tsp cinnamon
1 tsp nutmeg
1 16 oz. box powdered sugar
Preheat oven to 350
Combine cake mix, 1 egg, and the 8tbs. butter mix well with electric mixer, pat mixture into the bottom of a greased 9x13 pan.
Prepare filling in a large bowl, beat cream cheese and pumpkin until smooth, add eggs, vanilla, butter, add powdered sugar, cinnamon and nutmeg Spread on top of layer and bake 40 to 50 minutes do not overbake, the center of the cake will be gooey.
Serve it with vanilla ice cream or whipped cream

Im looking for a tried and true recipe for pecan pie to make for Thanksgiving. Ive made pecan pie in the past but theres always a problem with it setting properly. Any recipes out there???????

Yum. I'll have to look at my recipes tomorrow to see if there's anything I think you guys would like.
 
JKJK - This always sets for me, but it will cook over if you fill it too high. Also don't leave the oven at 450 for a second longer than the 10 minutes (I usually turn it down at 7 or 8 & then leave it in longer if I think it isn't done) or it will end up burning (or get very, very dark) on top.

Pecan Pie

3 eggs, slightly beaten
1 c sugar
1 c light corn syrup
1 tsp vanilla
¼ tsp salt
1 c pecans
Combine eggs, corn syrup, vanilla, sugar & salt. Put nuts in unbaked crust & fill. Bake at 450 for 10 min, then 325 for 40 min.
 
Green Beans with Mushrooms and Bacon

Yield: about 6 servings

6 slices bacon
1 pound green beans, stems removed
1 pound medium-sized mushrooms, each cut into quarters
1 large red onion, sliced
1/2 cup water
2 tablespoons cider vinegar
1/2 teaspoon salt
1/8 teaspoon crushed red pepper

In a 12-inch skillet over medium-low heat, cook bacon until crisp; remove to paper towels to drain

To bacon drippings remaining in skillet over medium heat, add whole green beans, mushrooms, onion, water, vinegar, salt, and crushed red pepper; cover skillet and cook, stirring occasionally, until vegetables are tender, about 20 minutes.

To serve, spoon bean mixture into bowl. Crumble bacon and sprinkle over beans.

185 calories per serving.
