Thanksgiving Park Plans -Feedback?

We are going for the long Thanksgiving weekend. We are keeping our expectations fairly low thanks to the holiday, but do want to maximize our time. This is definitely not my normal touring plan or usage of FP. 3/4 days with late FP is killing me! We were just there in August, but it is my FIL's first trip! We just booked last week so still working on ADRs. My FIL also will not ride roller coasters, so I tried to balance that out for the rest of us. So, traveling with my 75 yo FIL, DH & me, two kids (7,3). Any suggestions to help maximize our time but not wear everyone completely out?

arrive, DS, Dinner @ CM or Storybook

Thurs (Thanksgiving!) - MK/Epcot or HS
rope drop - POC, Magic Carpets, HM
FP JC 10:10
FP Splash 11:20
FP BTMR 1:25 (earliest available)
FoF parade @ 2
CP lunch 2:10 (unless I can get LTT or GG)
rest break
Evening at Epcot or HS - thinking we'll play it by ear, see if we can score a good FP at either. Either park going to be a better bet??

Friday
Epcot - rope drop (no FP) - FEA, Elsa/Anna, Soarin' & whatever else is available - do we go to FEA and then Soarin'?
Lunch - Akershus or Teppan Edo
Hop to MK
FP Tales with Belle 3:00 (thinking of switching this but not sure to what. Only 2/5 will ride Space)
FP PP 4:25
FP 7DMT 7:20 (kids must-do, only time available)
HEA 10:00

Saturday
AK
EMH 8-9 (Everest, Triceratop Spin, Tough to be a Bug)
FP Safari 9:45
FP M&M 10:50
break
Pizzafari 5:20
FOP/NRJ 6:40 (my must-do & only time for FOP)
Need to fit in FOLK, Nemo, Up Bird show, Rafiki)

Sunday
HS EMH 8-9 (kids & I might go for ToT, TSM)
MK - party day (not going) closes early - be there at or close to rope drop, no FP
try to ride w/o FP SM, Buzz, Speedway, Barnstormer, Ariel ride
Hop to HS
FP DisJr 3:00 (any suggestion for a better FP?)
SDD 3:45 (this is my kids only request)

SDD is the only "must" but we'd like to see GE and ride MF if possible (do have Oga's ADR at 4:05), ToT, and then a few of the shows. We missed Mike & Sulley last time and the Incredibles. I feel like we won't have enough time, though!)
 
I would spend more time at Epcot for the storytellers in WS and maybe the Candlelight Processional.
Will they have the Storytellers on Thanksgiving Day or does that start the next day? I’d love to do the processional but with kids 3 and 7, I think I need to wait a few years!
