Thanksgiving Menus

Fried Turkey
Green bean casarole
Sweet Taters
Stuffin (or fillin if your from above the line)
A fine jug o wine
Pecan and pumpkin pie

Served about 3 O'clock
 
RESERVATIONS!!!! I have the holiday off from work so I consider it my holiday too and I do NOT cook on my holidays! We go out to eat for Thanksgiving and Easter and on Christmas we go to a relatives house or out for Christmas dinner too! I cook almost every other day of the year, not cooking on a holiday too LOL!! I really got soured on big holiday meals at home when I was a kid...after dinner every guy got up and went and sat in the living room and watched football and all the women got up like good little women and cleaned up everything and did the dishes by hand no less! Not happening here LOL...no way no how!
 
Thanksgiving Menu:
Turkey
Mac and Cheese
Collard greens with peppers
Sweet potato pies
Rolls
 
Fresh Turkey (stuffed with lemons and onions - it perfumes the meat) and rubbed with a paste made of olive oil, lemon juice, salt, pepper, sage, thyme, basil and parsley. I find that fresh tastes totally different than frozen.

Mashed potatoes
Chestnut and sausage stuffing
Yams
Brussels sprouts
Carrots
Corn
possibly French cut green beans
Giblet Gravy
Whole berry cranberry sauce (from the can - everything else is from scratch, dang it, this can be from the stinkin' can)
Pillsbury biscuits (oh, wait, this is from the can, too :rotfl: )

Pumpkin Pie and whipped cream (oh alright, you nailed me - the whipped cream is from the can, too; and so is the pumpkin before it gets spiced and liquidated, etc.)
Cheesecake if I'm feeling ambitious

It's from Rachel Ray..It's wonderful

8 slices center cut bacon, chopped
8 ounces softened cream cheese
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
1 1/2 cups shredded Swiss cheese, available on dairy aisle
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped
Baby carrots and a selection of spiced flat breads, cocktail sized pumpernickel or rye breads, or sliced whole grain baguettes, for dipping


Preheat oven to 400 degrees F.
Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.

In a mixing bowl, combine cream cheese, mayonnaise, Dijon, Swiss and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping.

Yield: 6 servings

Variation: Swiss and Bacon Dip with Horseradish - Stir in 2 rounded teaspoons prepared horseradish when combining cheese and bacon.
 
Our Thanksgiving dinner at Mom's always includes:
turkey
ham
mashed Potatos and homemade gravy
cornbread dressing
broccoli salad (the cold one with the raisins)
green bean casserole
LeSeur Peas (petit pois)
homemade rolls
cranberry sauce
pecan pie
lemon pie (the kind with sweetened condensed milk and Nilla wafers)
 
I am still waiting for dh to decide if we are venturing to our cabin for the holiday or staying home. So we have 2 menus:

Home will include about 15-20 people. Home Menu:

shrimp cocktail (ok, so it's a shrimp platter from Costco ;) )
cheese ball and crackers
summer sausage and crackers
relish tray

turkey ( 2 of them, may be 3 if it's warm enough to deep fry one)
stuffing in the turkey
stuffing patties (my grandma's recipe)
gravy (of course)
mashed potatoes
sweet potato casserole
corn casserole
green beans
whole kernel sweet corn
broccoli rice casserole
rolls

pumpkin pie
chocolate pecan pie
pecan pie
peanut butter pie
chocolate chip cheeseball


Cabin menu would include maybe 8 people:

turkey
dressing patties
mashed potatoes
corn casserole
broccoli casserole
green beans
rolls

pumpkin pie

We're going to be in the process of moving on Thanksgiving, and I don't even know where we'll be. I'm guessing we may be in Florida with my parents. However, they just moved there this past weekend, and they haven't bought a house yet (they're living in their motorhome), so I'm guessing we'll eat our meal at a restaurant. We've done that other years when we were on the road. Hotels have really nice Thanksgiving buffets.
 
I noticed that some people put mac and cheese as part of their menu. I have never had that on Thanksgiving. Have I been missing an important part of the menu all these years? :confused3
 
My mom usually did all the cooking and since she passed away we have no clue what to do. My dad wants to cook and so does my brother so who knows what we will have or where.

Could you please share your recipe for dressing patties? My grandma used to make them and that is about all I would eat on Thanksgiving growing up. She always gave me the very first one fresh out of the oven. She was in a nursing home for the last 6 years and then died a month ago while I was at Disney. I would love to see if I could make them, but don't know how as she never really used a recipe. Thank you so much.

I've also noticed Lasagna. That just seems so out of place to me, but I know families that have it with just about everything. By the way, they serve mac and cheese with turkey, beef and ham at LTT. We never eat it. It just doesn't seem to go with the other stuff. Different traditions, I guess.

Lasagna is our traditional Christmas Eve meal!

Not sure what we'll do this year for T-giving. This year is new and different because our wedding is coming up...so we haven't really established out own traditions yet. Plus, my brother is living in Spain, so his absence will be different.

Here's what we usually have:

turkey
ham
mashed potatoes/gravy
pea salad
green beans slow cooked w/ bacon and onions
mandarin orange salad (I'm usually the only one who eats this....)
shoepeg corn
stuffing
yeast rolls
pumpkin pie

We always buy a ton of rye bread and different kinds of cheeses for the sandwiches the next few days!
 
Lasagne and an atipasto plate are traditional additions to the Italian families menu. Just ask Tony Danza!!!

As for Mac n Cheese...its a tradition in my families menu but then we have turkey and ham or roast beef on our menu too! My mom makes her mac n cheese from a buttr/cream and cheese sauce with elbow mac and bakes it in the oven then tops it with more cheese and bakes additional 10 minutes or until cheese on top browns. We all fight over who gets the "burned" cheese!
 
We have to have the usual dinner. I don't think we've ever wavered from it either! It would be:
turkey
stuffing
mashed potatoes
gravy
saurkraut and polish sausage
corn
lima beans
dinner rolls
cranberry sauce-jellied variety

pumpkin pie
cake for the kids
ice cream
