To everyone that recommended the pineapple casserole for a side dish. It was so easy to make. It was a huge hit with my family. My dish was the talk of the table at my MIL's house as well as my own. It was so good I made it 2 days in a row..
I love that recipe and it's so easy to make. My SIL always made it when she served ham. Everyone in my family raved about it the first time I served it to them and it's become a holiday tradition. Glad you liked it!
Pineapple Casserole
1 cup granulated sugar
½ cup butter or margarine (softened)
4 eggs
5 slices white bread (cubed)
1 1-pound can of pineapple (chunks, tidbits or crushed - drained)
Cream butter and sugar together. Add eggs one at a time. Fold in bread and pineapple. Turn into a greased casserole dish. Bake at 350º for 1 hour. Serve warm.
We make our pineapple casserole totally different. Here is our receipe.
2 Large cans of Pineapple tidbits
1 1/2 cup sugar
3/4 cup plain flour
2 Cup Sharp shredded chesse
Drain all pineapple juice into a container. Put pineapple in a 8 X 10 casserole dish. Take drained juice and pour enough to make one of the empty cans half full. Pour over pineapple. Mix remaining ingredients together. Spoon over top of pineapple.
Take 1 1/2 sleeves of ritz and crump. One stick of margarine and mix with cracker crumps. Place over top of pineapple mixture. Cook on 350 for 45 minutes.
It is just awesome. My family loves it. My DH's family loves for me to make this. Great with Ham.
