The boys once again loved their yoga class, and then we raced to the parent teacher conferences. Glowing reports on both, wahoo! Once again, I'm not sure how Woody can be such an angel at school and such a terror for me, but oh well. He's not embarassing me in public, so I guess that's good.

I ran home and made my quick no-bake tuna noodles, and now D is reading. He will be picked up by the taxi at 4:30, I think. But we did find him a really good flight out of Boston (normally not worth it, but even with paying the cab fare down there, we saved $400!) He'll get Thursday afternoon, all day Friday & Saturday before having to leave CA at o'dark thirty Sunday morning, so hopefully he can have some quality family time.

I probably won't be on much tonight - at least unless D goes to bed at 10:00 or something and I stay up for a bit.

Tomorrow, though...

My aunt is visiting me from this Saturday until next Thursday. I keep forgetting that - I'd better do something about the house before then. I cleaned pretty well last weekend, but we know how quickly things turn.

So, even though D has to leave early Monday morning (after getting back Sunday) for a 6 day trip, I won't be alone and free until Thursday of next week, after this next two days or so.

Gah.

CE - $68 is just for the day time visit. There is a special Candlelight viewing of the mansion in the evenings during Cristmas week. They have a choir and light all the fireplaces. I'm sure it's stunning. That costs $78.

Mel - I got it! Disney just needs to build a casino in Vegas. Daisy and Minnie can serve drinks. Goofy and Pluto can do the Black Jack tables and Donald can be head of security. I'd go! But I'm warped.
I think SD's head is on straight. If he is helping someone and not having to listen to or observe any abuses, I don't think I'd worry. He seems to have his mind made up. I wonder where he gets his deciseve manner from?????
I like the original Real Housewives too.

Jo - I hate shopping. Doug is a much better shopper than me. I can never find anything. Then when I do, always, always the wrong size or color. It is just so frustrating.

Z - Enjoy those lazy days. We don't get enough!

V- I am going to make Doug sit down and take a look at the website and tell me what he thinks. If he's game, we'll go. My co-worker says, "So where else can you spend just a little over $100 for a day's worth of entertainment." He's got a point.

Doug found some sugar-free hershey chocolate chips the other day. I try to stay away from sugar as much as possible.(Ignore the Blizzard comment above). So I'm making some cookies Thurs. night. YUM!
Fri. I have a lunch date with a friend at Olive Garden. Other than working on my TR, that's it. Exciting stuff, huh?? Maybe I can jump on here and chat a little more often?? You guys probably couldn't handle seeing me more than once a day!

And Katt, please send me yours, too. I'd rather use molasses than oodles of brown sugar.

Mix together thoroughly:
1 cup Soft Shortening
1 Cup Brown Sugar
1/2 Cup Molasses
2 eggs

Stir In:
1/2 Cup Strong Cold Coffee


Sift Together then stir in:
3 1/2 Cups Flour
1 tsp Baking Soda
1 tsp Salt
1 tsp Nutmeg
1 tsp cinnamon

After all ingredients are well mixed...
Chill for at least 1 hour
Add in 2 1/2 Cups Halved Raisins
1 1/4 cups Broken Nuts.. that ever types you want
(Mom has written in her notes Walnuts, Pecans, Hazelnuts.)
So I guess what ever nuts you like

Drop rounded Teaspoonfuls onto a greased cookie sheet.

And if you want your raisins Plumped.. wash them and spread out on a flat pan. Cover the pan ( with foil or a lid) a heat slowly in a Moderate temp oven( 300-350) You will need to watch them and not let them burn.

To get the full flavor... cut them in Two with scissors after they plump.


Bake at 400 degrees 8 to 10 minutes( I question this... that seems hot but that is what she did)
Bake till set.
Which is when touched lightly with finger ...almost no imprint remains on the cookie.




Here is One that that she had in her old cook book that was one of My Aunts Versions.. Mom Did not use it... so I do not know how it is.. But I do remember Mom making these for Christmas and Thanksgiving.

Here is Aunt Hazels Version:

• 2 1/2 cups unbleached flour
• 2 teaspoons baking powder (no alum)
• 1 cup sugar
• 1/2 cup unsalted butter, room temperature
• 1/4 teaspoon salt
• 2 large eggs, room temperature You KNOW THAT'S DATED
• 1/2 cup good quality molasses
• 2 tablespoons whole milk
• 1 cup raisins, chopped
• 1/8-1/4 teaspoon Cloves
• 3/4 teaspoon cinnamon
• 1/2 teaspoon Nutmeg
• 1 teaspoon Vanilla Powder Ya got me

Mix Dry Ingredients ( sift)
Blend Wet Ingredients
Add Dry Ingredients
Mix Well
Stir in Raisins and Vanilla
Refrigerate at least 2 hours

Bake at 350 for 10 minutes

This is the sofa and love seat. It is grey, but looks darker in this pic than it actually is

Well, D got off the phone with his mom, and aside from sending him to the wrong area airport (I should have known better than to not check that - she is SO flaky about details...) she is coming in at roughly the same time as he is tomorrow, so I think they'll be OK.

It looks like the funeral will indeed be Saturday, so the coroner's office will be done by Friday. I don't know if that's good or bad.

But it IS good that he can be there for it.

No other news at this point.

Kat's Pumpkin Bread

This recipe makes 2 large or 3 medium loafs so adjust accordingly.

• 3 cups sugar
• 3 1/3 cups flour
• 1 1/2 teaspoon salt
• 2/3 cup water
• 1 cup oil
• 4 eggs
• 2 teaspoons baking soda
• 1 teaspoon cinnamon
• 1 teaspoon nutmeg
• a pinch of cloves
• 1 can of pumpkin

Grease bottom of pans (up to 3) plus half of the sides.

Beat sugar and oil together. Add eggs.

in seperate bowl mis flour, baking soda, salt & spices together. (I sift them just to make the bread a bit lighter).

Add flour mix and water alternately to sugar mixture. Beat together well.

Beat in pumpkin.

Preheat oven to 350 degrees. Bake approx one hour. If pans are darker will take a bit longer, if light colored pans will take about 50-55 minutes. Doen when toothpick slides out clean.
