taking my 2 small kids by myself

I want to take my two kids to disneyland while my husband goes hunting in october. I need some advice though. They are 5 and 3. Each is just over 40 inches, so able to go on most rides, including most roller coasters. Can we all ride the two per row rides? Like space mountain. Is it safe to have my older one in the row in front of me while I sit with my younger one? Or have them both in front of me on splash mountain.
 
Sounds more like what they would want to do. I forget off hand if a certain height of a child requires an adult next to them, but in any case, its just if one prefers to sit with you or not.
They'll be fine in any case.
 
Mine were a year apart, and I used to take them by myself at that age. Once they were big enough to ride, I would put them in front of me together, and I would ride behind them if all three of us didn't fit in one seat. It worked for us.
