Surprise 1 day trip to MK

I am taking my wife for a trip to Florida to celebrate her 50th Birthday, spending 4 nights in Cocoa Beach relaxing on the beach, then on her birthday using the excuse that I don't want to drive back to Orlando for our flight out the morning of Jan 10, we are going to stay in Orlando for the night and go out for a nice dinner, but my plans are 1 night at a Disney resort, spending her birthday Jan 9 at MK and watch the fireworks then dinner at Ohana, will Ohana do anything special for her Birthday? What is the weather like in January? (my wife wants to spend a lot of time at the beach).
