Sugar-coated nuts recipe wanted!

OK -- all you chefs out there . . .

I love those nuts that come with the hard sugary (oftentimes spiced with cinnamon) coating.

I know there is a recipe out there -- anyone got one that I can use?

I have one but I need to find it. If no one else posts one I'll go look.
 

Here is the one that I use:

1/4 C evaporated milk 1 C sugar 3 C pecans 2T water

1/4 tsp vanilla 1/4 tsp cinnamon

Combine all ingredients, except pecans, in saucepan. Cook over medium heat, stirring constantly, until all the sugar has dissolved. Add pecans and continue to cook until all pecans are completely sugared with no syrup left. Spread on wax paper and let cool.

Maple-Glazed Walnuts

1/2 cup maple syrup
1 teaspoon cinnamon
1 tablespoon butter
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
2 cups walnuts

In an iron skillet or saucepan, stir together syrup, cinnamon, butter, and salt. Cook and stir over medium heat until mixture becomes brown and starts to thicken. Add vanilla extract, then nuts and toss until the nuts are covered evenly with glaze. Quickly spread and cool on wax paper.
 
This is one I used at Christmas. They were yummy.


Spiced Nuts

Ingredients:
1/2 c. sugar
1 T. cinnamon
1/2 t. salt

Mix these 3 ingredients in a small bowl. In a large bowl beat 1 egg white gently with a fork. Add 1 pound of nuts (I use almonds or pecans). Stir until coated. Add the cinnamon/sugar/salt mixture and stir to completely coat. Pour onto a baking sheet in a single layer and bake at 300 for 20 mins. Put on waxed paper in a single layer to cool

This is the same recipe I have. I usually double the coating :) Make sure you don't bake them too long!
 
Here's one I use

1 cup firmly packed brown sugar
1/2 cup water
2 cups pecans,walnuts or almonds

butter cookie sheet. In medium saucepan combine sugar and water.
Cook to firm ball stage (244 degree) remove from heat, add nuts. Stir until nuts are coated. Spread nuts on buttered cookie sheet, cool.

for spiced nuts add 1/2 tsp cinnamon makes 3/4 pound

that's the one i use! yummmmmmy! but i try to filp mine about halfway through baking.
