I bought a few low carb cookbooks. One is a crockpot cookbook so I can even still do stuff that cooks all day while I'm gone!
Usually for lunch I have a salad, or a chicken sanwich with no bun and cole slaw, or an atkins bar. I just try to have as many different salads as I can think of so it doesn't get old. There's a place here that does a greek salad with actual gyro meat on it. it feels like a gyro with no pita.
I made pizza the other night with soy flour, I have made brownies and cheesecake...I use the grill a lot more now grilling meats and veggies. I think we eat more veggies now than we ever did. I really don't know how I would do it without the internet and my cookbooks though. I'd run out of ideas on my own but with those tools its really quite easy and there are lots of good recipes out there.
OH also for lunch sometimes I have hot dogs with no buns! But I buy the ones with the cheese in the middle cause they are only 1 carb each whereas most of the other hot dogs are 3 grams or more each.
We also have a lot of sugar free popscicles and sugar free Jello! You just have to be careful with some sugar free items escpecially candy because yeah, they take the sugar out, but they just replace it with sugar alcohols which aren't good either.
for those of you who love chips...we now make jicama chips. You just buy jicama in the produce section at the market. I slice it on a madolin so its really nice and thin, then fry them. They come out nice and crispy just like potatoe chips and totally fill that need for something crunchy and salty. They are DEELISH!
We also bought a food dehydrator so we make dehydrated zuchinni chips and our own beef jerky too!
