Staying offsite in a condo? ***Share your easy dinner recipes!***

When we're in the condo - I don't do much real cooking....

We get Chinese takeout and then have leftover for another night.
We get takeout pizza one night.
We get subs one night.
Maybe grill hots and hams another night.


Just wanted to mention - don't forget to share all these ideas with DH - it's YOUR vacation too so that means he should share the cooking responsibilities!!!!
 
Our fast meal at DVC:

-- grilled steak, grilled veggies, Caesar salad (kit), garlic bread, nice bottle of wine


Also, throwdown meals in my Owner's Locker:

-- can of tuna and box of Tuna Helper
-- box of Jamalaya mix, can of shrimp and can of chicken
-- spaghettie and spaghetti sauce, can of green beans (with oil and vinegar for green bean vinaigrette)

I am planning on ordering in Pizza one night. There are a few places that deliver right to the resort, some even all the way to your room. :thumbsup2

Oh my DH will be helping. He is a great help, I HATE cooking, so he does a lot to make it better. It's more fun to have a glass of wine and cook together.

Lots of good ideas! I know we will probably grill a lot. Lunch and dinners. Steak, chicken, burgers. My DH isn't going to be happy eating all convenience foods because he loves to eat out, so this is a big stretch for him. lol

I love the chicken breasts in the crock pot with BBQ sauce for sandwiches. That would make a good lunch too for a at the condo day.
 
I also think I will make up some cheesy spaghetti ahead of time at home and freeze. Then all I have to do is open a bag of salad and cook it

The other thing I do is buy a big veggie tray with the dip. I use it for snacks, add the veggies to salads to make them more interesting, and use them for sautes or stir fries or to grill with our main meal. .
 
We did casseroles in the throw away pans and froze them. The day we were eating them we took them out of the freezer in the morning and they were mostly thawed by the time we came back.

We also used a crock pot and did spaghetti with meat balls, pulled pork, and mexican chicken.

We made a big tossed salad the first night there, along with a pasta salad, potatoe salad and fruit salad and used those for sides.

Mexican Chicken

1.5- 2lbs of boneless, skinless chicken'
1 can of black beans, undrained
1 can of diced tomatoes with mild green chilis
1 jar salsa con queso

Put chicken, beans and tomatoes in the crock pot and cook on high for fours hours or low for eight. Remove chicken and shred, drain off excess liquid, return chicken to crock pot and add salsa con queso. Mix well. I serve it with soft tacos and sour cream. DD likes to eat hers with taco chips, like a dip.

We typically have things like:

Salad every night with dressing

Main dishes:

Spaghetti
Pizza
Tacos/burritos
Baked potatoes
Grilled cheese
Any pasta dish

And we make large portions so we often eat the same meal twice. We also eat out once or twice and often have leftovers and will heat those up too.

Do you take your crockpot with you? I am not sure I want to start lugging kitchen appliances with me on vacation.

We flew so I didn't. We were there for 16 days with 9 people. I went to Walmart and bought one for $20. It more than paid for itself in (1) not eating out and (2) coming home from the parks and having a meal either completely ready, or almost ready. We found by keeping meals simple and using the crock pot and grill we could have dinner on the table faster than it took to seat 9 of us at a restaurant. The kids were happier too as they got to swim in the pool while the adults were getting dinner together.
 
Some quick condo meals we have done...

Buy frozen stuffed shells at Sam's, put in baking pan, cover with spaghetti sauce and bake for an hour.

Put chicken parts in a baking pan, cover with spaghetti sauce, and bake until chicken is done. Cook pasta or spaghetti as a side.

Stouffer's makes pretty good lasagne, white lasagne, and mac and cheese. They come in BIG pans for about $10 at Walmart and will easily feed 6 adults.

Round out any of these with salad and bread to make a full meal.
We often get the big veggie trays at Sam's ($10 for a ton of cut veggies with dip) for the kids to munch on while waiting for dinner to be ready. We have also found that ordering take out from Olive Garden is a pretty good deal. We aren't small eaters, but have found that many of their entrees (chicken con broccoli with oriochetti, chicken marsala, lasagne) will feed one adult AND one child. They give you a ton of salad and breadsticks... we always have enough salad left for the next night. We call in our order as soon as we get to our car in the Disney parking lot and it's usually ready by the time we can get to the restaurant.

Geez... we have stayed onsite for the past few trips; for just me and DD, it's cheaper to get the free dining plan and stay onsite than rent a car, pay for parking, pay for "must-do" Disney meals, etc., but this thread is making me miss staying in the condos, having our own pool and plenty of space, being able to relax once we are out of the madness of the parks!
 
Easiest crockpot meal ever...

Pork tenderloin (or I think I used a pork sirloin roast once)
Can of rootbeer
Your favorite BBQ sauce
Hamburger buns

Cook tenderloin and root beer in crock pot on low for 7-9 hrs. Drain. Shred meat. Add BBQ sauce and heat until warm. Serve on buns.

Especially easy because you don't have to bring along any spices or condiments or anything. Serve with potato salad or chips and fruit and it's a meal!
 
These are all really great ideas for condo dining. I think I'll try the pulled pork recipe next week here at homel Sounds yummy. :thumbsup2

Another suggestion is the Bertolli bagged dinners. We bought the Chicken Florentine last year while at SSR. Add the very handy bagged salad and garlic bread and you've got a full meal. All of our other favorites are already on here: rotisserie chicken, hamburgers, grilled chicken, tacos, frozen lasagna, "fancy" sandwiches and pizza.

Utilize your freezer and treat the kiddos. Ever bought sundaes at Ghirardelli's? They sure are yummy, but expensive. Buy all the fixin's for sundaes: ice cream, waffle bowls, your favorite toppings, whipped cream and cherries. Yum!
