Going to take a 2 night trip to Springfield, MO in June and are in need of advice.

1. Where to stay? What the best Disney like resort there? Want a great pool or a water park?

2. Dining? Coupons?

3. Other must does?
 
I don't know of any water parks in Springfield. Branson has one, but that's about an hour drive.

In Springfield, we like the zoo & Bass Pro World Headquarters. There's also a wild animal drive through park about 15 miles East in Strafford, and Fantastic Caverns a similar distance North of SPFLD.
 
I went to college there...it's not really a touristy type place, you won't find anything Disney-like. Just standard hotel options. There's a cool boutique hotel downtown. The zoo is cute but small, Fantastic Caverns is great, and I haven't been to the drive thru safari in close to 30 years. Bass Pro is a family favorite, even if you're not an outdoorsy person - there's so much to look at inside, aquarium displays, waterfall installation, alligators, ducks, and more. There's also a children's museum downtown that's ok, a small art museum, and you can check out the college and the performing arts center for shows and concerts. We're driving up in June after we get home from California for a James Taylor concert, and they have Broadway series shows in town on a pretty regular basis, too. (We live about 2 hours away from Springfield.)
If you go to Branson instead, there are some resort type hotels, and a couple of hotels with indoor water parks, plus an actual water park (White Water) and my favorite non-Disney theme park (Silver Dollar City). Those are sister properties, so you can get tickets that include both attractions. Lots of fun activities there, too - mini golf, wax museum, Titanic museum, go-carts, music shows, lakes, ziplines, etc...
 
If by "Disney Like" you mean something that isn't a Holiday Inn Express, there are some real nice Bed and Breakfast type places in the Ozarks. You might try VRBO or Google around for an interesting place. I've been wanting to go back to Mansfield (about an hour away) for the Laura Ingalls Wilder home and gravesite but I don't know when I'll get back that way. That's not the kind of thing that interests everybody though - such as it is something my husband barely tolerates. The area does have some really interesting Civil War history given the Northern/Southern mixture of it's population and geography. I went to the Bass Pro shop there about 25 years ago when they weren't all over the place.
 

May stay in Branson then. The main reason my husband wants to go is to go to his "Disney World", that Bass Pro store.::yes::
 
I agree with @xlsm, Silver Dollar City (Branson) is my favorite non-Disney theme park. Very beautiful, and family friendly. Your admission there includes a tour of Marvel Cave.
The resorts there can be basic or very nice, but if you really want an experience, stay at Big Cedar Lodge. You can drive to Branson for Silver Dollar City one day and then a half day in Springfield for Bass Pro Shops.
 
Big Cedar Lodge would be a good choice in Branson & is owned by Johnny Morris (owner of Bass Pro). Maybe stop at a Brown Derby Liquor Store - that's where Johhny Morris displayed/sold his fishing lures before starting the catalog.
