Spring Pantry Challenge

I can happily say that I am making a dent in my freezer. Tonight will be "mystery meat". I pulled out a foil wrapped package of meet that wasn't labeled and that I had no idea what was inside. It is thawing and we will be surprised when we open the foil. I am pretty certain it is ribs or pork chops.

With that we will have brocoli and pasta.

I haven't gotten any futher than today, though.

The average weekly shopping is $100.00. My grand total this week was $89.00.

Yesterday I went to my old store only because it was BOGO and double coupon day. :banana: I saved $51.50 in coupons! I got all my coupons together but didn't know they only double up to $1.00. I had a few $3.00 coupons and some $1.50 ones. This is a sample of what I bought:

Got a meal deal when I bought a pot roast I got buns, carrots, and potatoes for free. I halved the pot roast and am making two meals.

My pantry and freezer are stuffed and I hope to only buy some chicken and beef next week and get through the month without buying staples.

This is what the menu looks like for the week:

chunky beef soft shell tacos with Spanish rice
kielbasa with butter noodles (had that tonight)
a pasta dish with aspargus, chcken, a cream sauce, bacon, and peas (last night)
pot roast (Tuesday night)
Tilapia (we eat fish at least once a week)
chicken breast stuffed with feta

Lunches are either lunch meat which I got BOGO or the WW meals. Also we got this awesome Groupon deal at this new Philly Cheese Steak place and only had to pay sales tax. We were so stuffed! I love Groupon lol!

went to aldis today. i spent $20. i bought produce, cold cuts,1 bag of chips, bread, and stuff to make a birthday cake. we will be eating lots of chicken this coming week. a relative of mine gave us half of a rotisserie chicken plus i have a whole chicken that i will roast. this will then be made into a casserole and a pot of soup. i also have some cooked chicken in the freezer from last week.

here's the plan for next week.

meatloaf, mashed potatoes, vegi from freezer
spaghetti, Italian sausage, salad
roasted chicken, rice, veg from freezer
breakfast for dinner
chicken and rice casserole, veg from freezer
chicken pot pie, salad
stir fry with pork tenderloin from the freezer (leftover), vegis, rice

everything is from the pantry or freezer. lunches will be sandwiches (cold cuts, tuna, egg salad), chicken and rice soup, or leftovers. we have cereal and oatmeal for breakfasts, along with the usual eggs and toast, fruit etc....
 
Pasta this week! i just won in a raffle a big pasta basket in it were a nice strainer 5 bags of pasta 2 red clam 2 white clam sauces four bag mixes of pesto, Alfredo and cheese sauces grated cheese and garlic. Also dish towels and wooden spoons. It was a real nicer win!

Sunday is leftovers chicken noodle soup and Pizza Bowties with Italian Sausage( from eat at home blog. Its a great blog! http://eatathomecooks.com/page/2 I recommend it. )

Monday will be beef bake

Tuesday? hamburgers

Wednesday-sat? We will see what is on sale tomorrow at the grocery store!

Last week did not go as planned. Our menu was thrown out the window as I had so much homework, plus the gas company had to come and install a new meter (thankfully at their cost), our bathtub fawcet broke so our plumber (AKA my uncle) had to fix it and my mom was sick with a sinus infection. So needless to say we ate out a lot.

But this week is going to be back on track. Our menu is:
Tonight: Dinner at Grandma's
Tomorrow:Chicken encilladas with spanish rice
Tuesday: London broil on the grill with parmesean garlic oven fries and grilled zuchinni
Wednesday: Grilled Pork Chops with rice pilaf and sauteed corn
Thursday: Buttermilk waffles with canadian bacon and fruit salad
Friday: leftovers
Saturday: Baked macaroni and cheese with salad
 
Ok. . I'm in. I'm throwing a roast in the crockpot for tonight. I'll check my pantry and make a menu for this week. :thumbsup2
 
I'm so glad you changed the title of this thread. I wasn't even looking anymore. Sorry, thought it was old.....
I have been way off track lately and we have been eating out more than usual. And way more than I would like. Even though my freezer and cupboards are full. The Disboard always keeps me accountable. I'll be back :cool1::cool1:
 
I *really need to get back on track! My freezer/pantry/fridge are again completely full and I am spending a fortune each week! Why?? We have a rough week coming up, but I am vowing to restart this challenge beginning next week!

We did all have a fend for yourself/clean out the fridge night tonight!
 
I'm back... :rolleyes1 both from not posting and from Disney. We got back late Saturday night and I did shopping today. It was a bit expensive because I needed to stock up on fruits/veggies and boneless skinless chicken breasts. I have approximately 3-4 weeks of pantry stocking before I need to do that shopping trip.

The one bad thing about vacations are looking back at the pictures and seeing your weight. We had a great time, ate tons of food, but now it is time to get off the weight for our Sept/October trip. I am stripping the house of the bad snacks and will slowly replace with good stuff

Sunday: grilled chicken breasts, baked pierogi, green beans, and pears
Monday: pepper steak with extra veggies over brown rice, peaches
Tuesday: baked potato bar with turkey bacon, green onions, sour cream and low fat cheese, fruit salad
Wednesday: cheeseburger pie and salad
Thursday: DD's prom, not planning anything
Friday: Pasta, fresh sauce, garlic crisps, and salad...

I said last week I wasn't going shopping this week but my old grocery store had some really good deals. I saved $25.50 in manufactures coupons and spent $60.00. I got a 3lb bag of boneless chicken breast for $5.88.
My freezer is stuffed to the brim and my pantry is full too. I look forward to emptying it in the next few weeks!

this is what the menu is for this week:
breakfast for dinner (hashbrown, sausage, and egg caserole)
mac and cheese (dd's request)
cheesy fries (from left over cheese sauce)
tilapia fish tacos with cole slaw
turkey burgers with some side
tuna caserole (had Sunday) the old standby
homemade chicken nuggets with fries and honey mustard sauce
we also have Itallian sausages and hotdogs for our 75 degree day
 
I am also cooking up some crockpot vegetable beef soup to have for lunches this coming week.

Next week's menu is:
Sunday: Grilled country style pork ribs with homemade mashed potatoes and brown sugar carrots
Monday: Crockpot potato and double corn chowder

What is your recipe for the chowder? I am looking for some new crock pot recipes and that sounds tasty!

Yesterday was ground beef pastys (made with ready made pie crust, ground beef, carrots, onions, potatoes, a bit of beef broth)
baked tilapia with a potato
chicken and brocolli crockpot style
lasagna with garlic bread
onion soup with cheese on top (requested from my daughter?)
some kind of breakfast for dinner
loaded potato soup

I made it Chinese style in the crockpot. Serves 4.
2 whole frozen boneless chicken breasts (these were bigger breasts)
3 heads of brocolli cut into bitesized pieces and stems removed
2TBSPS soy sauce or to taste
1TBSP oyster sauce (found in Chinese section of grocery)
1 can of water chestnuts chopped
1 cup chicken stock or beef flavored if using beef
corn starch for thickening
1 onion chopped and diced

Set crockpot to high (4 hours)
Add broth, onions, soy sauce, oyster sauce, chicken breasts(frozen) and water chestnuts to crock pot. Let cook for 3 hours in crock pot. Add brocolli and cook for an additional hour or until brocolli is tender to your liking. Remove some of the broth and make a gravy with the cornstarch. Remove chicken and chop into chunks. Add back to the broth. Serve over jasmine rice. I like to add veggies that I have on hand like carrots too.

Here is the recipe for the chowder.

Crockpot Potato and Double Corn Chowder

1 can whole kernnel corn
1 can cream style corn
2 cans evaporated milk
1 can chicken broth
1 2lb bag of frozen square hashbrowns
2 tablespoons worchestershire sauce
8 strip of bacon, crisped and crumbled
Salt and pepper to taste

Mix all ingredients into crockpot and cook either on low for 8 hours or high for 4.

We usually put a little sour cream on top when we serve or some shredded cheddar cheese both are good.
 
I did my weekly grocery shopping yesterday because I had some coupons I didin't want to loose out on. My old grocery store has been having some really good bargins and with my manufactures coupons I have been getting a lot of free items.

This week I bought a 6 lb bone in pork butt. I divided that into 3 bags and huge portion with the bone in I am saving for pulled pork sandwiches. Today I am making crockpot pork chop suey with a portion of that. I spent $60.00 and had $25.00 in coupons.

My oldest is off at camp this week with her school and girl scouts. She has been eating us out of house and home lol!
I won't have to buy canned goods all this month which helps out a lot too.

Here's what the menu looks like for this week
last night salad with avocado, corn, and grilled chicken breast
crockpot pork chop suey with rice
hot dogs for a day that is hot
pulled pork sandwiches and slaw
chicken dish of some sort
steak and taters
cornbread breaded tilapia po boy sandwiches (from my WW cookbook)
 
We are doing okay here I think! Friday I *really wanted to grab a pizza or take out, but I fought the urge and came home and threw together something from the freezer! Tonight we wanted a steak dinner, and instead of spending $100 to go out we went to the store and spent $20 and will make one here and that included getting a Carvel ice cream cake for dessert!

Friday- Barbecued rib sandwiches, fries, carrot and cucumber sticks
Saturday- Chicken Viola, leftover baked beans, parmesan toast
Sunday- Steak on grill, mashed potatoes, corn
 
I really need to get on board with this again. My freezer is bursting. My pantry is not quite as bad, but there's room for improvement.

Tonight we'll do leftovers. We have several things to use up.

Tomorrow night I'm going to make the Zuppa Toscana from Olive Garden. I have a ton of potatoes to use. Maybe that'll make a dent. Any other potato ideas? Also, any pasta ideas besides with marinara or meat sauce? I can only eat so much of that. I have a ton of pasta I got for free, but now that I look at it, I'm not sure what to do with it.
