Spring Pantry Challenge

Tonight is hot dog and bean casserole.
Tomorrow for diner will be Mexican stuffed shells
Tuesday will be frozen spaghetti sauce
Wednesday is some kind of chicken
Thursday pork chops
Friday using leftover chicken in my chicken casserole.
Saturday leftovers!

How do you make the Mexican stuffed shells? I have some of those large shells, and DS does not like when I make them. He may like them Mexican style.

To start you need 24 Jumbo pasta shells, 1lb lean beef ( I use turkey), 2c. salsa, 1 8oz can tomato sauce, 1c. frozen corn (I sometimes leave this out depends on your taste) 1c. Mexican cheese Toppings Salsa, sour cream Green onions.

Cook shells. In skillet cook beef, stir in salsa sauce and corn. Spoon into shells. Spray baking dish and place shells. Sprinkle with cheese cover and bake 25-30 mins at 350.

That sounds good! Maybe this is why my pantry hardly diminishes: I think, what a great way to use up my ground beef, salsa, Mexican cheese, and sour cream. So I rush out to buy pasta shells, tomato sauce, and corn! :lmao:
 
The weekend was spent eating left overs from New years eve. I am a youth minister so Sunday nights are usually pizza with the youth from church. That is what we did tonight.
Monday night is sub sandwiches and homemade fries.
Tuesday is stuffed peppers( made and put in the freezer from this fall),
with mashed potatoes, and corn.
Wednesday is spaghetti with sausage,salad and garlic bread.
Thursday is breakfast for dinner.
Friday is tacos, rice and fruit.
Saturday is brats with hotdogs and beans.

My girls all pack lunch everyday. So it will be without ever we have on hand.
Breakfast is breakfast burritos or just cereal.

I really need to keep this up for the whole month. Sometimes I get tired and then I order out. I dont want to do that.

I put together our weekly dinners and I will shop most likely tomorrow...

Monday: Chicken Alfredo with steamed brocolli and fruit.
Tuesday: BBQ pork sandwiched, tator tots and corn.
Wednesday: Goulash with french bread/butter (I am going to attempt to make the french bread from scratch)
Thursday: Italian Sausage Casserole (peppers, onions and potatoes) and homemade applesauce
Friday: Spaghetti w/jar sauce, garlic bread, green beans
Saturday/Sunday: Open based on what the kids schedules will be like with school starting this week.

I also made banana bread from scratch tonight to use up the bananas and a little bit of sour cream I had in the fridge. This will be breakfast tomorrow.

I really liked the recipe for the mexican shells. I don't have the shells in the pantry right now, but if I have extra one of the weeks or a good coupon, I will add it. Just sounds really good.

Lastly, I need to start utilizing the crock pot, soup and stew recipes. I have a large box of bisquick so I can make biscuits. Any recipes would be greatly appreciated. I have extra fresh onions, potatoes, and garlic right now. The only meat I have in the freezer is hamburger 95%fat-free, boneless skinless chicken breasts, chicken sausage, and turkey ham. But I do have quite a bit of each. Thanks in advance for any suggestions.

last night was Cuban Sandwiches made with my leftover pork loin form New Years.........

I'm going to sit down and make up some meal ideas tomorrow........but I see a lot of pasta dishes and rice dishes in my families future:rotfl:
 
I worked on the menus for the week but didn't get very far. I wasn't inspred. It isn't for a lack of ingredients!

Tonight- Sauerkraut (leftover from making Reuben Dip), hot dogs dug from the freezer and potatoe salad.

Tomorrow - Rice, fish and veggie in rice cooker. Easy!

I have a ton of shredded cheddar cheese I need to plan to do something with. I have some in the fridge and some in the freezer. I got caught up in good sales, I guess.

I also found some fresh cranberries that need to be use. Looks like Cranberry Bread will be baking this week.

Does anyone have any ideas for spaghetti sauce? I have eleven jars, and they are taking up the better part of a shelf, and I'd love to clear some of them out. But the only things I can think of doing are pizza; (which would require me buying everything else, and that defeats the purpose,) meatballs or sausage in sauce, and plain old spaghetti, (which I'm really not hungry for, and even if I were, it's eleven jars of sauce.)

Quick Ratatouille
Sauté chopped bell peppers, zucchini, onion, eggplant and garlic in olive oil. Add 2 parts pasta sauce to 1 part water and some fresh basil; simmer until vegetables are tender

Minestrone Soup
Boil 1 jar pasta sauce and 5 cups water. Stir in cooked small pasta, chopped mixed vegetables, canned beans and grated parmesan cheese; cook until vegetables are tender.

Italian Meatloaf
Add 1 cup pasta sauce, 1/2 cup grated parmesan cheese and some chopped rosemary to a basic meatloaf recipe (using 2 pounds ground beef). Bake; top with more sauce and cheese 15 minutes before it's done

Tomato Mac and Cheese
Mix some pasta sauce with prepared macaroni and cheese in a baking dish; drizzle with more sauce and bake at 350 degrees until hot and bubbly.

Country Captain
Brown chicken parts in olive oil with curry powder and chopped onions and bell peppers; add pasta sauce and simmer until the chicken is cooked through

Sloppy Joes
Brown bulk Italian sausage, chopped onions and bell peppers; stir in pasta sauce and heat; spoon onto rolls.

Saucy Marinade
Combine 1 cup pasta sauce with 1/4 cup balsamic vinegar and 1/4 cup olive oil; add smashed garlic cloves, salt and pepper. Use as marinade for 1 pound chicken or pork.
 
I would like to join this challenge. Our freezer's are full as well as cabinets. DH has really gotten into fishing and hunting this year and so we now have a freezer full of Venison. The best part is DH thinks this is a great idea. So yesterday as a family we sat down and made our menu for the week. I hope to only buy fresh fruit, veggies, milk, eggs, bread, and just a few other items to make complete meals. Not only will I use up what we have I hope to save money for our June trip to WDW.

Tonight we are having chicken, corn, fruit, and homemade bread.

I did a little grocery shopping at Save-a-lot today. I restocked up on things like tomato sauce, tomato paste, pasta sauce, canned corn, evaporated milk, chicken broth, and some different pastas since I had used up what we have and we use theese all the time. I also got some fresh bread, frozen hashbrowns, potatoes. sweet potatoes, grapefruit, bananas, lemons, cheese, and tater tots. I only spent around $43, not to shabby.

Lunch I had at McDonald's after shopping. Dinner tonight is going to be the leftover pork from New year's day with roasted root vegetables, salad, and rolls.
 
this week we are doing:

baked chicken breasts w/ garlic herb seasoning plus a veggie

pork loin in the slow cooker w/ rolls and veggies

noodles w/ sauce and garlic bread plus a salad (need to buy salad fixings)

tacos w/ ground beef (will use leftover tomato from salad)

breakfast for dinner ~ pancakes, eggs, sausage (need to buy eggs)

I'll make a triple batch of pancakes and freeze some for the kids for breakfasts.

That will leave us with a ton of leftovers so hopefully DH won't bring home anymore lasagna this week.

I have a HUGE ham from Christmas, that I cut into 4 meals ( not includeing tonights.)
I aslo have 4 turkeys that I would like to cook between now and Summer:)
 
Tonight we're having breakfast for dinner. Tomorrow I'm planning to make some banana bread and pumpkin muffins to have for breakfasts for a week or so.

Anyone have any good freezer recipes? Our 2nd child is due February 17th and while I think some friends and family will help us with some meals, I'd like to have some ready to go in the freezer.

I love cheese - I must have at least 7 kinds in the fridge right now! Grilled cheese, quesadillas, pannini, macaroni and cheese, breakfast casseroles, toppings for soup/stew/chili, etc.

I think the biggest problem is I'm not sure if I actually used arborio rice. I live in a very ethnic neighborhood, but one which seems to have every ethnic food but arborio rice! So I ended up with something from Bosnia and Herzegovina which I hoped was the right ingredient...

Also, I think I should have used more broth/liquid, so maybe I can revive it with another few cups of chicken broth.

It looked so easy when Rachael Ray made it! :lmao:
