Split stay/offsite Ticket QuesIon

We will be going next year and we will be staying offsite for the first time in years. I am considering booking a 2 day onsite stay for us in order to get the "Disney experience" for our 2 DGDs.
I know you can only book advance reservations for dining 180+length of stay. What about fps? Only 60 days out for the 2 onsite days? (Yes I know there is a huge thread about throwaway rooms but I plan to stay in mine and to be honest trading that thread is often confusing as I am not trying to beat the system)
2. Is there any benefit to buying park tickets through Disney as opposed to 2nd party? As for 2nd party, who is the most reputable? If I buy a 4 day is it easy to add a day? In the past we could just make it non expiring but you can't any more so I don't want to over buy.

I've bought tickets from Undercover Tourist in the past because they seem to have pretty good prices and are a reputable re-seller of tickets. Mousesavers is another good source of information about where to get discounted tickets. In terms of adding days, I don't think it would be problematic. I upgraded my MYW tickets from Undercover Tourist to an AP without difficulty (a little time consuming, but not hard). Just make sure you use the ticket at least once before upgrading it that they can "bridge" the price (mean give you the gate price value towards your upgrade).

If you have more ticket days after your check-out day, you can book at 60-days from each additional day, one day at a time.

3. undercovertourist.com (which includes mousesavers.com) is highly-used and touted on these boards.

5. Just remember that if you only have 4 days of tickets, you can only book 4 days of advance FP+.

Also if I check in Saturday stay Sunday too and check out Monday can I book the 60 for Monday as well?

1. "Undercover Tourist" (undercovertourist.com,) the ticket reseller we've been discussing.
2. You can book FP+ for check-out day, as part of your "60-days, plus length of stay"
on-site perks.
 
I really only need reservations for 1 day but I want to be sure I get a specific MK day

Last question, I promise: if I buy a multi day ticket from a 2nd party I still have the same number of days to use them I.e. I don't have to use them in a row?

The thing to know about "second party" (AKA Disney authorized ticket resellers) tickets is that they are regular WDW tickets.
WDW prints them and sends them to the resellers to sell to guests.
Those tickets have the same properties and privileges as the ones you buy directly from Disney.
