I am totally bored with chicken and normally I would throw these on the grill but it is too windy. Any ideas? I am thinking of chicken cacciatore but am open to any suggestion. I have to go to the store so feel free to suggest away! ;)
 
Put in the baking dish. Pat of butter on the bottom, pat of butter on top -- sprinkle generously with oregano. Bake until done. More or less better to taste.
 
1. Take the chicken breasts, put them in a sealed bag.
2. Place bag in garbage.
3. Go out for dinner ;)
 
Oven Fried Chicken

1-1/2 cups flour
1 tbls paprika
2-1/2 teas salt
3/4 teas pepper
1/2 cup margarine or butter
1/2 cup shortening

Mix dry ingredients together and coat chicken in mixture. Heat the margine and shortening in a pan in a 425 degree oven until melted (may need to use two pans). Place chicken, skin side down in pan. Cook uncovered 30 mintues. Turn chicken and rotate pan. Cook uncovered about 30 minutes longer.

I did something similar to that last night; except on step 2, I put them back in the fridge. ;)
 
place chicken and an onion in crockpot, cover with a can of cream of mushroom soup. Add pepper. Cook for 3-5 hours on low.


If you're up for a little bit more effort, make chicken tortilla soup!

In a large pot (I use a stock pot - I don't know how to make a small pot of soup!), place chicken and onions, add water --I usually fill the pot about 1/3 full with water). Boil. Add a bag of baby carrots, a bag of frozen corn, 2-3 sliced zucchini, a big can of crushed or diced tomatoes, a can of Rotel tomatoes, and one packet of taco seasoning (you might need another 1/2 packet, depending on how much soup you've made). Simmer for at least two hours. Remove chicken from pot, remove bone, cut or shred the chicken, return to pot.
to serve: place tortilla chips in a bowl, pour soup over them, stir in cheese, sour cream, fresh chopped cilantro, and picante sauce. YUM!
 
Chicken & dumplings, chicken & rice ( cream of ckicken soup), stir fry?
 
about a cup of lemon juice- dip chicken in the lemon juice then roll in seasoned bread crumbs(mixed with parm. cheese and garlic powder) So you are breading them using lemon juice- slice an onion thinly- place the chicken pieces in a oven proof dish- surround with the onion slices- Top with some olive oil bake in a 350 oven for about an hour. mmmmmm.

Marinate them in an oil based Ceasar salad dressing for the day. Bake. I usually have this with asparagus (toss in olive oil on cookie sheet, season, bake 15 minutes), and sweet potatoes (slice long ways, toss in olive oil, season on another cookie sheet, bake 40 minutes).

Last week would have been a good day to grill but it is windy and cold here. I am making linguini and white clam sauce for tonight.

Make pretzel chicken.

Pull the skin off and coat chicken in a mixture of mustard with a little bit of milk. Dip the chicken in crushed pretzels and bake.

Good and uses up those pretzels at the bottom of the bag!

I am probably too late, but here's a recipe. :)


Green Chile Chicken Enchiladas

4 split breasts (boiled, skinned, shredded)
1 pkg. taco seasoning
water (according to seasoning mix)
8 flour tortillas
1 can of cream of chicken soup
1 cup sour cream
1 can diced green chiles drained
2 cups shredded cheese (mexican blend or monterey)

Mix chicken, seasoning and water. Heat throughly until mixture thickens. Divide the shredded seasoned chicken and 1 cup of cheese between 8 tortillas. Fold burrito style closing both ends. Place in 9x13 sprayed pan.

Mix soup, sour cream and chiles. Pour over enchiladas and spread evenly. Top with remaining cup of cheese. Bake at 350 degrees until cheese is bubbly and starts to brown.

Serve with shredded lettuce, tomatoes, salsa, guacamole, etc. :)

****This works GREAT with the Chi-Chi's shredded chicken that is sold in the meat section at grocery stores. I often use that if I don't have time to boil the chicken..****
 
I'm waaay too late too, but here's an EASY way to do Cacciatore.


Brown chicken pieces in olive oil (salt, pepper, all purpose green herb seasoning)

Place in a large covered casserole

Add;
1 14.5oz can diced tomatoes
1 14.5oz can Italian Style diced tomatoes
1 can mushrooms
1 sm. can tomato paste
1 cup frozen chopped onions
1 cup frozen chopped green peppers
Sprinkle with Parmesan Cheese
salt, pepper, basil, oregano to taste

Put in 350 degree oven for 2 hours (yes, it's a long time but the chicken will fall off the bones) Stir once after 1 hour. That's it. Great over pasta with a green salad.

Does this really work? I always dip in egg, but I have a huge bottle of lemon juice to use up, and I do like a lemony flavor. The coating sticks? I'm so trying this!
