Special Activities for a 7 year old boy?

Looking for some extra special add-ons for my little guy, besides the rides/attractions included in theme park tickets. I know about the Pirate Makeover and the Pirate Cruises that leave from the resorts...anything else that would be cool and fun and make the trip extra special? We will be doing a character dining as well (I think Donald's Safari).

Jedi Training ... Sign him up first thing. So much fun!
 
Agree - pirates and Jedi are the most obvious choices. Also look at the Phineas and Ferb quest at Epcot and sorcerers of magic kingdom at MK. Downtown Disney has some fun stores with stuff buys that's more buying than experiences.
 
At that age, my now 10 year old son really enjoyed it (and still does!) when we rented the litte speed boats - Sea Racyers - at the Magic Kingdom resort area. You will have to drive the boat, but they are pretty zippy and fun to race around Seven Seas Lagoo and Bay Lake in!

Another big hit was the campfire and sing-a-long with Chip and Dale at Fort Wilderness. Chip and Dale, marshmellows and smores, campfires, and lots of kids. They show a movie on a big projection screen after the sing-along. It's one of our favorite Disney memories. Plus...it's free! :)

As far as dining goes, my son did enjoy the character meals, but his two all time favorite places to eat were the Sci Fi at Hollywood Studios (coolest theme and atmosphere ever for a little boy!) and Whispering Canyon at the Wilderness Lodge (he loved the antics and silliness).

Btw, he LOVED (and still loves) the pirate cruise from the Grand Floridian as well as the one from the Beach Club. He's going to be so sad when he's too old for those! lol.
 

Sorcerers of the Magic Kingdom would be lots of fun, even if he just likes to collect the cards. Wilderness Explorers at Animal Kingdom. T-Rex or Rainforest Cafe for a fun meal. Can even do the stuff a dinosaur thing at T-Res. Mini golf---Winter/Summerland is really cute! Pin trading. Looking for hidden Mickeys. Pressed penny machines throughout the park.
 
Our DS who is also 7 enjoys a variety of other activities at Disney. Here are some:

2hr Fishing excursion (one of our favorites!) We do the one that leaves from YC but they also have others around Bay Lake

Mini Golf - we go to Fantasia, but there is also Winter/Summerland by Blizzard Beach

Video Arcades - he likes the ones in Contemporary, Beach Club and POP

In Adventureland in MK there is a Pirate Treasure hunt...you get a map hand have to find the clues and such all around Adventureland...he enjoyed it last summer.

Wilderness Scout badges you can collect in AK.

He enjoys pin trading...in addition to the pins CMs wear on lanyards, many shops especially those in resorts have big pin boards or books you can trade from.

He also likes the penny presses...we bring a bunch of quarters and shiny pennies with us. The M&M candy tubes are good for holding the coins.

His all-time favorite restaurant is Chef Mickeys - Whispering Canyon in WL is also fun. We did the Kitchen Sink (giant sundae) at Beaches & Cream (Beach Club) last year it was fun. (The arcade is right next door)

With everything so Princess oriented it sometimes seems hard to find "special" treats for boys...but there's enough to keep you busy.
